- Cover dough and let rise in a warm place until doubled. Preheat oven to 350°. In a large skillet, cook sausage, mushrooms and onion over medium-high heat until sausage is no longer pink, breaking up sausage into crumbles, 6-8 minutes. Drain. Transfer to a bowl; cool., Stir in two eggs, cheese and seasonings. Roll each loaf of dough into a 16x12-in. rectangle. Spread half of the sausage mixture over each rectangle to within 1 in. of edges. Roll up jelly-roll style, starting with a short side; pinch seams to seal. Place on a greased baking sheet., In a small bowl, whisk remaining egg. Brush over tops. Bake until golden brown, 25-30 minutes. Serve warm. Freeze option: Securely wrap and freeze cooled loaves in foil and place in resealable plastic freezer bags. To use, place foil-wrapped loaf on a baking sheet and reheat in a 450° oven until heated through, 10-15 minutes. Carefully remove foil; return to oven a few minutes longer until crust is crisp.

SUPER EASY BREAKFAST SAUSAGE LOAF
I was searching for a quick and easy breakfast for a group of picky youngsters and came up with my own super easy breakfast sausage loaf from ingredients normally found in any fridge. This can be as basic as dinner rolls/sausage/eggs/cheese...or jazz it up a bit with onions and green peppers. This can be put together the night before, frozen or made on the fly.

- Preheat oven to 375 degrees F (190 degrees C). Spray a 9x5-inch loaf pan with cooking spray.
- Heat a large skillet over medium-high heat and stir in the sausage and brown sugar. Cook and stir until the meat is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Transfer sausage to a bowl; wipe the skillet clean.
- Melt the butter in the clean skillet over low heat. In a bowl, whisk together the eggs, milk, salt, and black pepper. Pour the eggs into the skillet. Allow the eggs to cook undisturbed until they begin to set, then gently stir the eggs until the curds are separate and set but not dry, 5 to 7 minutes.
- Roll out the crescent roll dough, and line the bottom and sides of the prepared pan with 3/4 of the dough. Layer the sausage, scrambled eggs, and Colby-Monterey Jack cheese into the pan, then top with the remaining 1/4 of dough. Pinch the corners and sides of the dough together.
- Bake in the preheated oven until golden brown, 25 to 30 minutes.

- Cut the bread into 1-inch cubes and spread in the bottom of a greased 9- by 13- by 2- inch casserole dish.
- In a medium skillet, brown the sausage over medium heat until fully cooked and no longer pink. Remove the sausage with a slotted spoon to drain the fat. Spread the cooked sausage over the bread and top with the cheese. Then stir together the, half-and-half, dry mustard, salt and eggs. Pour this mixture over the cheese. Cover the casserole with aluminum foil and refrigerate for 8 hours or overnight.
- The next day, preheat the oven to 350 degrees F.
- Bake the covered casserole until set and slightly golden, about 50 minutes. Remove from the oven and allow the casserole to set for 15 minutes before serving.

5-Ingredient Fix Contest Entry. This recipe kind of just popped into my head, when I thought about one of my family's favorites, sausage balls. Seems like I make these especially around the hoildays, but sausage balls are good anytime. At our house we have tapas night usually once a week and sliders often find their way into my home on this night. So hence we have Sausage Hash Sliders. This is a great dish to bring the kids into the kitchen and let them help, it's so easy and just their size. I love this so much with the potatoes, I think it will become my new go-to recipe for sausage patties.

- Crack eggs into a large bowl and whisk briskly until incorporated.
- Open Hatch Green Chili sauce and heat on low in a small sauce pan.
- In a large non stick skillet begin to brown sausage, chopping with spatula into crumbles as you would for chili.
- When about half cooked, add 2 heaping cups Simply Potatoes Diced Potatoes with Onions, seasoning potatoes to taste. Continue cooking until sausage is browned through and potatoes are soft and picking up some color.
- Remove from skillet with slotted spoon into a large bowl and cover; pour off any drippings from skillet.
- Give eggs a final whisk in bowl and pour into the skillet, season as normal, and scramble eggs.
- When eggs are scrambled soft, return sausage and potatoes to the skillet and finish cooking, incorporating eggs, sausage and potatoes together.

- Meanwhile, in a skillet over medium heat, cook and crumble sausage.
- Add mushrooms and onion. Cook and stir until the sausage is browned and vegetables are tender; drain. Cool.
- Beat 1 egg; set aside.
- To sausage mixture, add 2 eggs, cheese and seasonings; mix well.

- Preheat the oven to 450*.
- Line a large baking sheet with parchment paper and set aside.
- In a 12" non-stick skillet over medium high heat, brown the sausage adding a small amount of water to help the meat release the juice and render the fat. Breaking the sausage up with the back of a spatula, brown the meat until just cooked through. About 15 minutes. Using a slotted spoon, remove the sausage from the skillet reserving the fat that remains in the pan.
- Sauté the package of potatoes, stirring occasionally until they turn brown and tender and if necessary, add 2 Tablespoons of water to allow potatoes to steam a bit. You can also keep slightly covered. When potatoes are still slightly firm (about 17 minutes) and golden brown add the sausage back to the skillet and mix thoroughly. Transfer entire mixture back to the bowl and set aside.
- Again, do not rinse skillet. Add 1 tortilla to the skillet and toast on each side about 1-2 minutes per side until golden and slightly crisp. Remove from pan, put on a plate and toast remaining tortillas. Stack tortillas and cover with a tin foil or kitchen towel to keep warm and allow any steam to heat through.
- Put 4 tortillas on the parchment lined baking sheet and using the back of a large Tablespoon, spread enough pepper jelly on each tortilla, stopping about ¼" from the outside edge. Once 4 tortillas are coated with jelly, spoon the sausage/potato mixture on top. Add 5 small scoops of ricotta cheese to each pizza and place in 450* oven for 12 - 14 minutes until crisp and jelly begins to bubble.
- Once cooked through, remove, and add another small amount of ricotta cheese to each pizza. At this time you may serve 1 pizza per person while cooking the next set of 4 pizzas. To serve them all together, if you have a second baking sheet, these can be cooked together in the oven, rotating the sheets from the top to the bottom about ½ way through the cooking time, just like when baking cookies.
- Place pizzas on plate, using a pizza cutter, cut into triangles and serve.
- Tip: This is a great make-ahead snack for the kids. Sauté the meat and potato mixture and put into an air tight container in the refrigerator. Toast the tortillas as well and set aside lining each tortilla between a small sheet of wax paper.
- To assemble, add the jelly to the previously toasted tortilla, put the potato/sausage mixture on top and once again add the ricotta cheese. For children that are comfortable with the toaster oven, place on a small sheet pan and toast until warmed through being careful not to burn the edges. Allow to cool slightly before cutting and serving.
- Enjoy!

5-Ingredient Fix Contest Entry. This is one of the best and easiest recipes. When I first made up this recipe, I had to make 2 runs of these crunchy little mouthful of pleasure!! The great thing about this recipe is that you can add anything you like to the potato mixture. Hot pepper, onions, and cheese is great mixed with the potatoes, then deep fried. I live in the south and everything is better deep fried!

- Fill a large pot with 3 inches of oil. Heat oil to 325 degrees.
- In a large bowl, combine potatoes, eggs and flour. Stir to combine well. Put a golf ball amount of potato mixture in the palm of your hand. Take one sausage and carefully form the potato mixture around the sausage.
- Carefully drop the potato ball in the hot grease. Don't cook no more than 4-5 at a time. Cook for 2-3 minutes or until golden brown.

MINI BREAKFAST BREAD BOWLS #5FIX
5-Ingredient Fix Contest Entry. This recipe is an original for my family. My 6 year old daughter is on spring break and I thought of a delicious dish that is easy to make and fun so that my kids can participate. I included all of the ingredients that we like and combined them into a bread bowl that we created. I precooked the bacon, Simply Potatoes diced potatoes with onions, and hollowed out the knot rolls. I supervised my daughter as she added the cheese, potatoes and bacon portions into the the knot rolls and painted the rolls with the bacon grease before I placed them into the oven. The look on her face preping the bowls is priceless. My two year old son even got involved by placing the bread stuffing, that was extracted from the rolls, into a bag so we can save it for bread crumbs in the future. They came out so crispy, and cheesy with the delicious potatoes an bacon flavor. Mom loved them, the kids loved them and I loved them as well.. These breakfast bowls are a keeper.

- Preheat the oven at 375 degrees.
- Heat a large frying pan on medium high heat until hot then add bacon.
- Cook bacon until crispy then remove and break into halves.
- Remove 2 tablespoons of the bacon grease into a small bowl.
- Add one pack of Simply Potatoes diced with Onions to the pan and cook with the remaining bacon grease. Cook until light brown then remove and divide into 12 even piles.
- Then take a knife and cut a circle from the top center of the knot roll. Remove the bread from within the roll; hollowing the roll.
- Add cubes of cheese, one pile of the Simply Potatoes, bacon half, and topped with a few more cubes of cheese filling the bread bowl.
- Place the knot roll top back on the center of the bread bowl; covering the top. Repeat the steps until all of the bread bowls are filled. Then add the knots onto a cookie sheet.
- Take the small bowl with bacon grease and paint each roll.
- Cook in the oven for 10 minutes or until golden brown and crispy.
- Remove from the oven; Allow the bread bowls to rest for 5 minutes then and serve.
