This is Day 18: Lunch, on the 21 Day Wonder Diet. This is to be followed by an afternoon snack of 1 small pear.

1/4 cup couscous
1/4 cup boiling water
185 g tuna in water, drained and flaked
1/2 cup flat leaf parsley, finely chopped
3 small tomatoes, seeded and finely chopped
3 green onions, sliced thinly
1/4 cup lemon juice
1 garlic clove, crushed

Steps:

  • Combine couscous with water in a medium heatproof bowl, cover; stand 5 minutes or until water is absorbed. Mix in remaining ingredients.

This is Day 18: Breakfast, on the 21 Day Wonder Diet. These beans are so rich and filled with flavour that it is hard to believe they are such a low-kilojoulle, healthy meal! This is one of my favourite breakfasts! You can use any canned white bean you like (my favourites to use are butter beans or cannelini beans). This breakfast is to be followed by a mid-morning snack of 2 kiwifruit.

1 small brown onion, finely chopped
1 garlic clove, crushed
2 shortcut bacon, rashers chopped finely
400 g diced tomatoes
1 tablespoon tomato paste
1 tablespoon coarse grain mustard
400 g white beans, rinsed and drained
2 tablespoons flat leaf parsley, coarsely chopped
2 slices rye bread, toasted

Steps:

  • Cook onion, garlic, and bacon in heated medium saucepan until onion softens. Add undrained tomatoes, paste, and mustard;cook, stirring, until hot. Add beans. Cook, stirring, until hot. Stir in parsley.
  • Serve bean mixture with toast.
