Crispy broccoli tots turn the simple vegetable into a tasty snack.

Olive oil spray
16 oz frozen chopped broccoli
3 large eggs
1 teaspoon Diamond Crystal kosher salt
1/4 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
1/8 teaspoon cayenne pepper
1 cup grated sharp cheddar cheese ((4 oz))
1 cup blanched finely ground almond flour ((4 oz))

Steps:

  • Preheat your oven to 400 degrees F. Line a rimmed baking sheet with high-heat-resistant parchment paper or nonstick foil and lightly spray it with olive oil cooking spray.
  • Place the broccoli in a microwave-safe bowl. Cover with a microwave-safe plate and microwave for 5 minutes, stirring halfway through cooking, to thaw. Drain REALLY well.
  • Meanwhile, in another large bowl, whisk together the eggs, salt, pepper, garlic powder, oregano, and cayenne.
  • Add the cheddar and the almond flour, then add the thawed and drained broccoli. Use a large spoon to mix everything together. Mix thoroughly, making sure all broccoli pieces are coated.
  • Use a heaping 1.5-tablespoon scoop to transfer mounds of the mixture into the baking sheet. You should get about 24 tots. Make sure they don't touch each other. Lightly spray the tots with olive oil.
  • Bake the tots for 15 minutes on the first side and for 10 more minutes on the second side, until browned. Allow them to cool for a couple of minutes, then serve.

12 oz broccoli, cut into small florets
¼ cup scallions, thinly sliced
2 cloves large garlic, finely diced
⅔ cup shredded cheddar cheese
1 egg, beaten
⅔ cup bread crumbs
salt, to taste
pepper, to taste
2 teaspoons Sriracha, optional but recommended

Steps:

  • Fill a medium saucepan with water and bring to a boil. Aggressively season with salt. Blanch the broccoli in boiling water for about two minutes.
  • Drain and finely chop the cooked broccoli.
  • In a mixing bowl, add broccoli, scallions, garlic, cheddar, egg, and bread crumbs. Optional: Add hot sauce of choice. Mix well and chill in the refrigerator for 15-20 minutes.
  • Preheat oven to 400°F (204°C).
  • Spray a nonstick baking sheet with nonstick spray. Shape the mixture into tot shapes and spread them evenly on the sheet.
  • Bake for 8-9 minutes. Flip and then bake for an additional 8-9 minutes on the other side until golden brown.

⅓ cup panko breadcrumbs
⅓ cup fresh chives, chopped
⅔ cup shredded sharp cheddar cheese
1 clove garlic, minced
½ teaspoon salt, divided
¼ teaspoon black pepper
1 egg

Steps:

  • Grate the broccoli with a coarse cheese grater.
  • Transfer the grated bits to a medium bowl and season with a ¼ teaspoon of the salt. Mix the broccoli until well incorporated.
  • Let the broccoli sit for 20 minutes until the salt has drawn out some of the moisture.
  • Preheat oven to 400°F (200°C).
  • Pour the broccoli into a clean kitchen towel and twist to strain as much liquid as you can.
  • Place the grated broccoli back into a bowl and mix with the breadcrumbs, chives, cheddar, garlic, remaining ¼ teaspoon of salt, pepper, and egg, and mix until well combined.
  • Form the mixture into 15 even sized tots and transfer to a parchment lined baking sheet.

1 (12 ounce) bag broccoli florets
2 teaspoons sea salt, divided
¾ cup finely shredded Cheddar cheese
½ cup panko bread crumbs
⅓ cup minced onion
1 large egg
2 tablespoons chopped fresh parsley
2 cloves garlic, grated
1 teaspoon ground cumin
½ teaspoon ground black pepper
2 tablespoons olive oil, or to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Place 1/2 of the broccoli florets in a food processor; pulse about 20 times until it looks like grains of rice. Repeat with remaining broccoli florets.
  • Fill a large, shallow saucepan with 1/2 inch water; add 1 teaspoon salt. Bring to a boil. Reduce heat to low and add broccoli rice. Cover and simmer until tender, about 5 minutes. Drain and let cool, about 10 minutes.
  • Transfer broccoli rice to the center of a clean absorbent dish towel. Squeeze and twist the towel to remove as much of the moisture as possible.
  • Mix Cheddar cheese, bread crumbs, onion, egg, parsley, garlic, cumin, and black pepper together in a large bowl. Mix in broccoli rice until mixture sticks together when pressed into a ball.

  • Preheat the oven to 200 degrees F (95 degrees C).
  • Heat a 6- to 7-inch waffle iron to medium-high heat. Spray liberally with cooking spray. When ready, open and arrange the Veggie Tots, touching each other, to fill the iron. Close and press firmly. Cook 5 minutes.
  • Remove and place on a wire rack over a sheet tray. Hold warm in the oven. Repeat to make a second waffle.
