BROCCOLI AND STUFFING CASSEROLE
This recipe is great for vegetarians or for anyone who loves rich meat-free stuffing.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
- Cook broccoli in a large pot of salted boiling water until just slightly tender. Drain.
- In a large bowl, combine eggs, onion, mushroom soup and mayonnaise.
- Place a layer of broccoli in the prepared baking dish. Pour mayonnaise sauce over broccoli. Spread stuffing mix over the sauce. Drizzle butter or margarine over all and top with shredded cheese.
- Bake at 350 degrees F (175 degrees C) for 30 minutes.

BROCCOLI CASSEROLE WITH STUFFING CRUMB TOPPING
Steps:
- Gather the ingredients. Preheat the oven to 350 F / 180 C / Gas 4.
- Butter a 2-quart casserole and set aside.
- In a large bowl, combine the mayonnaise, condensed soup, and eggs; whisk until well blended. Add the cooked broccoli and then add the onion, Cheddar cheese, Worcestershire sauce, salt, and pepper. Blend well.
- Spoon the mixture into the prepared casserole dish and top with the stuffing mix. Dot with butter.
- Bake for 45 minutes. Serve and enjoy!

- 1. In a medium saucepan, melt the butter. Add the crumbled bouillon cubes and flour. Gradually add milk, stirring over medium-high heat, until thickened.
- 2. For the stuffing: Place crumbs into a medium bowl. Melt the 2 Tbsp. butter in boiling water and pour over crumbs. Add a few of the nuts and toss with a fork.
- 3. Place the cooked broccoli in the bottom of a buttered 2-qt. baking dish. Pour the cream sauce over the broccoli and spoon on the stuffing. Sprinkle with more nuts, if desired.
- 4. Bake, uncovered, in a preheated 350-degree oven for 30 minutes.

- In a large saucepan, saute onion in butter until tender. Stir in flour until blended. Gradually stir in milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; stir in cheese sauce until smooth. Remove from heat. , Cook broccoli according to package directions; drain and place in a bowl. - Preheat the oven to 400 degrees F (200 degrees C).
- Mix flour, bread crumbs, Parmigiano-Reggiano cheese, and five-spice powder together in a bowl. Cut in 1 1/2 tablespoons butter using your fingers until mixture resembles pebbles. Cover and refrigerate until needed.
- Cut the stem off the broccoli and use a spiralizer to cut into ribbons. Cut the head into florets.
- Melt 3 tablespoons butter in a large saucepan over medium heat. Add onion and garlic; saute until translucent, about 4 minutes. Add cornstarch, pepper, and nutmeg; mix well until roux begins to brown, 3 to 4 minutes. Add milk, stirring continuously, and continue to cook until sauce begins to thicken, 3 to 4 minutes more. Mix in 1/4 cup Cheddar cheese. Stir in broccoli until thickened, 2 to 3 minutes. Pour mixture into a baking dish.
- Top mixture with remaining Cheddar cheese. Sprinkle crumble mixture evenly over the top. Reduce the oven temperature to 350 degrees F (175 degrees C).
- Bake in the preheated oven until the crumble has browned and sauce is bubbling, about 20 minutes.

- In small bowl, combine bread crumbs, cheese, parsley, 1 tbsp oil and garlic; set aside.
- In 12 in skillet, heat remaining 1 tablespoon oil over med heat and cook broccoli, stirring frequently, 2 minutes.
- Stir in onion soup mix blended with water.
- Bring to a boil over high heat, reduce heat to low& simmer uncovered, stirring occasionally, 8 minutes or until broccoli is almost tender.
- Add tomato, simmer an additional 2 minutes.
- Spoon vegetable mixture into 2 qt broilerproof baking dish, top with bread crumb mixture and broil 1 1/2 minutes or until crumbs are golden and cheese is melted.
