- Thirty minutes before you plan to make the pizza, position a rack at the lowest level in the oven and put a pizza stone on it. Preheat the oven to 500°F.
- Cook the bacon in a large skillet over medium heat, turning as needed, until almost crisp, about 10 minutes. Transfer the bacon to a paper towel-lined plate. Let cool, then crumble and set aside. Reserving the bacon drippings in the skillet.
- Meanwhile, place the broccoli in a mesh strainer or fine colander and run cold water on it to thaw. Set it over a bowl to strain out excess water. Put it in a medium bowl, pour 2 tablespoons of bacon drippings over it, sprinkle with some salt and pepper and toss to coat; set aside.
- Dust the work surface with a little flour. Put the parchment paper on a pizza peel or the back of a baking sheet. Halve the pizza dough and cover one half with a towel. Drape the other half over your fist and gently tug and turn it, letting the weight of the edges help stretch it thinner, until you have a round about ¼-inch thick and 12 inches across. Place the dough on the parchment and scatter with 1 cup of the Cheddar, then half the broccoli, leaving a 1-inch border. Slide the parchment onto the hot pizza stone and bake for 5 minutes.
- Crack 1 egg into each of three small bowls. After the pizza has baked for 5 minutes, rotate it and slide the eggs onto it, spacing evenly. Scatter ½ cup of the remaining cheese and half the bacon on top. Bake until the pizza is browned and crisp on the bottom, the egg whites are set and the yolks are still runny, about 5 minutes. Transfer the pizza to a cutting board and let sit for 2 minutes to allow the eggs to set. Repeat with the other half of the dough and the remaining ingredients. Slice and serve with crushed red pepper flakes or hot sauce.
SPINACH-STUFFED PIZZA

- Place thawed dough in a greased bowl, turning once to grease the top. Cover with plastic and let rise in a warm place until doubled, about 1 hour., Preheat oven to 400°. In a large bowl, mix spinach, mushrooms, onion, salt and pepper. Punch down dough; divide into thirds. On a lightly floured surface, roll 1 portion of dough to a 10-in. circle. Transfer to a 9-in. springform pan coated with cooking spray; press dough onto bottom and partway up sides of pan., Sprinkle 1 cup mozzarella cheese onto crust. Top with spinach mixture; sprinkle with remaining mozzarella cheese., On a lightly floured surface, roll out a second portion of dough to a 10-in. circle; place over cheese layer. Pinch together top and bottom crusts to seal. (Save remaining dough for another use.) , Bake until crust is lightly browned, 25-30 minutes. Spread pizza sauce over top; sprinkle with Parmesan cheese. Bake 5-6 minutes longer or until cheese is melted. Let stand 5 minutes before cutting.

CHICAGO STYLE STUFFED PIZZA
For this tasty Chicago-style stuffed pizza, a deep-dish pizza is stuffed with cheese, sausage, pepperoni, onions and green pepper. It's excellent!

- To Make Dough: In a small bowl, dissolve sugar in 1 cup warm water; in a separate small bowl combine the yeast, 1/2 cup flour, and 1/2 cup warm water. Mix together and let rest in bowl for about 20 minutes, until foamy.
- Meanwhile, in a medium bowl mix together remaining 2 1/2 cups flour with cornmeal and salt; remove half of this mixture from bowl and stir 1 cup sugar water into bowl. When well mixed, return second half of flour/cornmeal mixture to bowl and mix all together; then stir in yeast mixture. Knead dough on a lightly floured surface until smooth and elastic, about 8 to 12 minutes. Place dough in a lightly oiled bowl and cover with plastic wrap. Let rise until doubled in volume.
- Preheat oven to 450 degrees F (230 degrees C). To Make Stuffing: In a large bowl combine the sausage, mozzarella cheese, Parmesan cheese, pepperoni, onion, bell pepper, oregano and garlic. Mix well.
- Press half of the dough in the bottom and up the sides of a lightly greased deep dish pan. Bake crust in preheated oven for 4 minutes, then add the stuffing mixture to the bottom crust and cover with top crust; seal edges together with fingers, and trim excess. Slit top crust to allow steam to vent during baking; top with tomato sauce.
- Bake on lower rack at 450 degrees F (230 degrees C) for 45 minutes, or until crust is golden brown. Remove from oven and allow to cool for 5 minutes, then cut and serve.

FOUR CHEESE WHITE BROCCOLI PIZZA (EASY)
A fabulous white pizza... again, four cheeses are used (grated parmesan, provolone, ricotta, & mozzarella) as well as fresh broccoli florets. You could substitute with spinach if you like, but we LOVE this recipe as is... I buy the pre-made pizza dough from my grocery store to save time, but you could always make your own of course. Also, I use MILD provolone - it's pre-packaged & pre-sliced think it is Belgioioso brand. Note: I use the 12 oz. bag of "Broccoli Wokly" which is already cut into florets - I steam it according to the package directions first in the bag & use the full bag on the pizza.

- Preheat oven to 425 degrees.
- Roll out dough. Coat pizza pan with the olive oil and spread out rolled dough evenly to all edges of pan. Sprinkle with grated parmesan cheese. Top with sliced provolone then place broccoli florets (already steamed per broccoli wokly package directions) on top of provolone. Using two teaspoons, spoon about 3/4 teaspoonful size spoonfuls of ricotta sporadically around the broccoli areas in empty spots. - Bake for 12-18 minutes or until crust just golden brown. Slice & serve.

- Heat oven to 450 degrees.
- Transfer stretched dough to parchment.

BROCCOLI CRUST PEPPERONI PIZZA

- Preheat the oven to 400 degrees F. Line a rimmed baking sheet with parchment.
- Cook the frozen broccoli according to the package directions. Put in a colander and let drain and cool for 10 minutes. Measure out 1 cup of the florets for the topping, breaking them into small pieces if needed; set aside.
- Pulse the remaining broccoli in a food processor, scraping down the sides as necessary, until finely chopped. Put the broccoli, Parmesan, oregano, red pepper flakes, eggs, 3/4 cup of the mozzarella and 3/4 teaspoon salt in a large bowl and toss well to combine. Transfer to the prepared baking sheet and spread in an even layer. Bake until the crust is golden, about 20 minutes.
- Spread the pizza sauce on the crust, leaving a 1/3-inch border around the edges. Top with the remaining mozzarella followed by the pepperoni and reserved broccoli florets. Bake until the mozzarella is bubbling and golden and the pepperoni is browned, about 15 minutes. Sprinkle with more Parmesan and serve.
BROCCOLI CHICKEN PIZZA
This was inspired by a broccoli cheese stuffed potato recipe I found, but it seemed to be a little labor intensive, so I decided it would work better as pizza. This is an original "sbera007" creation! We were serving 6 so we let our dough rise so it would spread into a jelly roll pan. If using a store bought dough, I would double the dough. Feel free to half the topping for 4 people and use a single store bought dough. Halving the recipe will alter the cooking time a little bit. (NOTE: I included the time for the dough to rise in the recipe time. This will be different if you use a different pizza crust).

- Preheat oven to 425 degrees Fahrenheit.
- Prepare dough.
- While dough is rising or sitting, steam broccoli and cook chicken with olive oil, oregano and basil to taste, until no longer pink.
- Spread the dough into a prepared jelly roll pan.
- Bake for about ten minutes.
- Meanwhile, chop cooled chicken into small chunks and chop steamed broccoli.

BROCCOLI CHEESE STUFFED CHICKEN
This cheesy broccoli chicken is the perfect comfort food on a cold day. By buying thin-sliced chicken cutlets, you save yourself the work of slicing them yourself, however feel free to cut regular-sized chicken breasts if you prefer. Slice in half horizontally, then pound thin to about a 1/4-inch thickness. Feel free to change up the flavor of The Laughing Cow® cheese for variety.

- Preheat the oven to 375 degrees F (190 degrees C).
- Pound chicken cutlets to 1/4-inch thickness between two pieces of plastic wrap. Sprinkle both sides of cutlets with salt and pepper. Set aside.
- Mash cheese wedges with a fork in a small bowl and stir to a creamy consistency. Add broccoli and shredded Cheddar cheese and stir to combine.
- Spread broccoli filling evenly over the middle of each cutlet. Start from one end, roll cutlets up and secure edges with toothpicks.
- Combine flour and paprika in a shallow bowl. Dredge chicken rolls in the mixture.
- Heat olive oil in a oven-safe skillet over medium-high heat. Place chicken rolls into skillet and cook until browned, 2 to 3 minutes. Turn over and brown the other side for an additional 2 to 3 minutes.
- Place skillet into the preheated oven and bake until chicken is no longer pink in the center and juices run clear, 14 to 16 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove toothpicks and serve.

- Place a sheet of parchment paper on a bake sheet. Puff pastry comes in two pieces, each folded in thirds. Lay out one piece of puff pastry. Lay two-thirds of the remaining pastry next to the first, forming the pizza. Discard the last third pastry or use for another purpose.
- Using a sharp knife, cut a line down each edge of pastry, ~1/2-inch in from the edge, creating a frame. Use a fork and prick holes gently all over the pasty inside the cut "frame" (the point of the cuts and fork pricks is to keep the pastry from rising).
- In a medium nonstick saucepan, heat the cream over medium-high heat until reduced by half. Whisk in the Dijon mustard. Remove from the heat.
- In a bowl combine the broccoli, sun-dried tomatoes, capers, salt, pepper, cheese, and Dijon-cream. Spread the broccoli mixture over the prepared puff pastry within the "frame" that was cut earlier (this leaves a margin of pastry as a crust around the edge).
