Delight your taste buds with this easy ham and broccoli casserole made with a cheddar cheese sauce and a crunchy panko top.

12 to 16 ounces broccoli florets (frozen or fresh)
3 tablespoons butter
3 tablespoons flour
1 teaspoon dry mustard
1/2 teaspoon salt
Dash of pepper
1 1/2 cups milk
3/4 cup cheddar cheese (shredded)
4 slices ham (cooked)
2 tablespoons butter (melted)
1/2 cup panko breadcrumbs
Optional: 1 tablespoon onion (finely minced)

Steps:

  • Preheat the oven to 375 F.
  • Butter a 1 1/2-quart casserole dish.
  • Place the broccoli in a saucepan. Add about 1 inch of water and bring to a boil over medium-high heat. Cover the pan and reduce the heat to low. Cook until just barely tender, or about 3 to 4 minutes.
  • Meanwhile, in a saucepan over medium heat, melt the 3 tablespoons of butter. Add the flour and cook, stirring, for 1 to 2 minutes. Add the dry mustard, salt, and pepper. Gradually add the milk and minced onion, if using. Continue to cook until thickened, stirring constantly.
  • Add the cheese to the sauce mixture and stir until it has melted. Remove the sauce from the heat.
  • Drain the broccoli and put it in the prepared casserole dish.
  • Add the ham to the casserole dish and then pour the sauce over the ham and broccoli mix.
  • Combine the 2 tablespoons of melted butter and panko breadcrumbs. Stir to coat the crumbs and then sprinkle over the casserole.
  • Bake the casserole in the preheated oven for 20 to 25 minutes.

14 ounces whole wheat rotini pasta
1 (10 ounce) package frozen broccoli
1 tablespoon olive oil
2 cups diced fully cooked ham
1 (15 ounce) jar Alfredo sauce
½ cup 2% milk
ground black pepper to taste
1 cup shredded Colby-Monterey Jack cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Bring a large pot of lightly salted water to a boil; cook the pasta in the boiling water, stirring occasionally, until tender but not mushy, about 10 minutes. Drain.
  • Thaw the broccoli in a microwave oven until you can break it apart into small pieces.
  • Heat the olive oil in a large skillet over medium heat; cook and stir the diced ham in the hot oil until the edges start to brown, about 10 minutes. Stir in the broccoli and cook and stir until any excess water has cooked away and the ham and broccoli are hot. Pour in the jar of Alfredo sauce and the milk; stir to blend, sprinkle with pepper, and add the cooked pasta. Stir everything together to coat the pasta with sauce and bring to a simmer.
  • Spread the bubbling pasta mixture into the prepared baking dish, top with shredded Colby-Monterey jack cheese, and bake in the preheated oven until the casserole is hot and the cheese is melted and starting to brown, about 30 minutes.

I had the broccoli, ham and cheese, but no cream soup, so I took a couple existing recipes and improvised. Also, I used Jarlsberg cheese, but Swiss or any favorite cheese could be used.

Number Of Ingredients 13

1 medium onion, chopped
1 garlic clove, minced
3 tablespoons butter or 3 tablespoons olive oil
3 tablespoons flour
1 cup milk
salt
pepper
1 cup brown rice, cooked
1 cup ham, diced (can use more)
3 cups broccoli florets, steamed
1 cup broth, chicken (or vegetarian)
1 cup cheese (shredded or cubed, I use Jarlsberg, your choice)
1 cup onion rings, french fried

Steps:

  • Preheat oven to 350 degrees F.
  • Cook onions in butter until almost soft, add garlic and cook all until soft.
  • Sprinkle flour over butter/onion mixture, stir to form a roux.
  • Slowly pour in milk and broth. Stir until somewhat thickened. Add cheese, salt and pepper. Continue to stir until thickened.
  • Spread ham, broccoli and rice in 9x9 glass casserole pan (or similar).
  • Pour cheese mixture over top.
  • Bake for 15 minutes.
  • Sprinkle fried onions on top. Bake for another 15 min until cheese is bubbling but not burnt!
  • Note: I was out of milk and didn't want to cook rice or broccoli ahead of time. I did the onion - flour steps the same, then upped the liquid (3 Cups broth) and just added the raw rice and broccoli to the pan, let the mixture of stuff come to a boil, then simmered for a few minutes; stirred in the cheese; sprinkled the onions on top; baked for 20min. Yum!

2 tablespoons olive oil
21 ounces condensed cream of chicken soup ((2 cans, undiluted))
1 cup sour cream
1/2 cup milk
4 ounces diced jarred pimientos
2 tablespoons dried chives
1 teaspoon salt
1 teaspoon black pepper
12 ounces egg noodles ((cooked and drained))
12 ounces diced ham
10.8 ounces frozen chopped broccoli ((cooked crisp-tender))
6 ounces shredded Swiss cheese
1-1/2 cups canned crispy fried onions

Steps:

  • Preheat oven to 375F.
  • Cook the onions and garlic in the oil until the onion is softened.
  • Stir in the remaining ingredients except the fried onions and place in an oblong casserole dish sprayed with nonstick spray.
  • Bake uncovered for 20 minutes, then top with canned fried onions.
  • Bake an additional ten minutes to brown and crisp the topping.

2 cups fat-free evaporated milk
3 -4 tablespoons flour
5 sprigs fresh thyme leaves
2 teaspoons marjoram
3 tablespoons olive oil
1 small onion, finely chopped
2 cups small broccoli florets
2 cups sliced mushrooms
1 small red bell pepper, chopped
3 garlic cloves, crushed
3/4 teaspoon salt
1/2 teaspoon pepper
2 cups cubed ham
3/4 cup shredded cheddar cheese or 3/4 cup monterey jack cheese

Steps:

  • Prepare pasta according to package directions; drain well. Spray a 2-qrt casserole with cooking spray. Place drained pasta in casserole and set aside.
  • Preheat oven to 350°F
  • Combine milk, flour, thyme and marjoram in a small bowl and set aside.
  • Heat a large, nonstick skillet over medium-high heat. Add oil and sauté onion, broccoli, mushroom, bell pepper, garlic, salt and pepper for 4 minutes, stirring frequently. Add ham and heat thoroughly, about 2 more minutes.
  • Add reserved milk mixture and stir until thickened, about 4 minutes; do not boil.
  • Sprinkle ham mixture over the pasta in the prepared casserole.
  • Sprinkle with cheese and bake uncovered for 15 minutes, or until cheese is melted.

1 lb broccoli, chopped (if using frozen rinse under hot water and drain VERY well)
1/2 cup onion, peeled and chopped
1/4 cup red bell pepper, seeded and chopped (can use jarred pimientos instead)
1 cup sharp cheddar cheese, shredded
1 cup swiss cheese, shredded
1/2 teaspoon mustard powder
3 cups low-fat milk
4 eggs, lightly beaten
1 cup Bisquick baking mix

Steps:

  • Preheat oven to 350°F
  • Lightly grease/spray a 13 x 9 baking dish.
