10 cups broccoli florets (about 3-1/2 pounds)
6 cups seedless red grapes (about 3 pounds)
1 cup sliced celery
6 green onions, sliced
2 cups mayonnaise
2/3 cup sugar
2 tablespoons cider vinegar
1 pound sliced bacon, cooked and crumbled
1-1/3 cups slivered almonds, toasted

Steps:

  • In a large salad bowl, combine the broccoli, grapes, celery and onions. In a small bowl, combine the mayonnaise, sugar and vinegar. Pour over broccoli mixture and toss to coat. , Cover and refrigerate for at least 4 hours or overnight. Just before serving, gently stir in bacon and almonds.

1 pound fresh broccoli spears
1/2 tablespoon butter
1/4 cup seasoned bread crumbs
1 hard-boiled large egg, chopped
Salt and pepper to taste

Steps:

  • Place broccoli and a small amount of water in a saucepan; cover and cook until crisp-tender, about 8-10 minutes. , In a small skillet, melt butter. Add bread crumbs and toss to coat. Cook and stir over medium heat until warmed, about 1 minute. Remove from the heat and stir in egg. , Drain broccoli; season with salt and pepper. Sprinkle with crumb topping.

4 medium onions, quartered
1 lb fresh broccoli, broken into big pieces (florets and stems)
4 tablespoons butter
1 tablespoon flour
1 teaspoon salt
1 teaspoon pepper
3 ounces cream cheese
1 cup grated cheese (cheddar or colby or mozza-I like to mix cheddar and colby)
1 cup milk
1 cup breadcrumbs

Steps:

  • Cook onion and broccoli in boiling water for 8 minutes. Drain and put in a large casserole dish.
  • Melt 2 tbsp butter over low heat. Add flour, salt & pepper. Add milk, stirring until thick and bubbly. Add the cream cheese, stirring until melted. Pour sauce over veggies. Sprinkle grated cheese over top.
  • Cover and bake at 350 degrees for 30 minutes. While cooking, melt 2 tbsp butter and mix with the breadcrumbs.
  • After 30 minutes, add the breadcrumbs to the casserole and bake uncovered for another 30 minutes.

Got this recipe from my cousin (CrystalB -- chef #139350), who got it from a Company's Coming cookbook. A perfect side-dish for an Oriental meal -- mildly flavoured, slightly sweet.... just a great way to serve broccoli!!

6 tablespoons water
1 teaspoon cornstarch
1 teaspoon chicken bouillon powder
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon cooking oil
7 cups broccoli, chopped (or florets)
1 garlic clove, minced (or 1/4 t. garlic powder)

Steps:

  • Stir together first 6 ingredients and set aside.
  • Heat cooking oil in wok or frying pan on medium-high. Add broccoli and garlic and stir-fry 3-4 minutes or until broccoli is tender-crisp.
  • Stir cornstarch mixture and add to broccoli mixture until boiling and thickened.

1 large egg, slightly beaten
1 pkg 10 oz. frozen broccoli chopped, partly thawed
1 can(s) 8 1/2 oz. cream style corn
1 Tbsp grated onion
1/4 tsp salt
1 dash(es) pepper
3 Tbsp butter or margarine
1 c herb seasoned stuffing mix

Steps:

  • 1. In mixing bowl, combine egg, broccoli, cream style corn, onion, salt & pepper.
  • 2. In small sauce pan, melt butter then add herb seasoned stuffing mix. Add 3/4 cup of it to broccoli mixture. Put into ungreased 1 qt. casserole dish.
  • 3. Sprinkle with remaining 1/4 cup stuffing mix. Bake uncovered at 350 for 35 to 40 mins.

3 Carrots (sliced)
1 - 14 oz can Artichoke Hearts (drained and quartered)
¾ Can Cream of Mushroom Soup
½ Cup Mayonnaise
2 Eggs (slightly beaten)
1 Tsp. Lemon Juice
1 Tsp. Worcestershire Sauce
1 Cup Shredded Sharp Cheese
¼ Cup Breadcrumbs
¼ Cup Melted Butter
Minced Garlic/Salt/Black Pepper to taste

Steps:

  • Place artichokes in a buttered 9" shallow casserole dish. Cook broccoli until tender; drain and set aside. Cook carrots until tender; drain and set aside. Combine soup, mayonnaise, eggs, lemon juice and Worcestershire Sauce, garlic salt and pepper; mix well. Combine the soup mixture with the broccoli and carrots - pour over the artichokes. Sprinkle with cheese and breadcrumbs - drizzle melted butter over top. Bake 350° for 25 minutes (until set). Yield 4-6 servings.

  • 1. Cook broccoli. 2. Put all of the cooked, frozen broccoli in the bowl of a food processor. 3. Add the mayonnaise, lemon juice, mushroom soup and cheddar cheese in the bowl of the food processor and process till well mixed. 4. Stir in (by hand) the cooked, chopped fresh broccoli. 5. Mix well and put in buttered casserole dish. 6. Top with buttered Ritz cracker crumbs. 7. Bake at 350 degrees for 35-45 minutes, until bubbly.
