BROCCOLI PASTA IN A FRESH TOMATO SAUCE

Broccoli Pasta in a Fresh Tomato Sauce image

Determined to create my very own, 100% original pasta recipe, which I could call "mine" in all honestly, I made this for lunch today and was so thrilled with its fresh, light taste that I just HAD to post it and let everyone know that I'm not as unimaginative as I though! :) Reserving the pasta water saves some of the nutrients of broccoli from getting wasted.

Number Of Ingredients 12

4 ounces pasta (Fusili works best!)

1/2 teaspoon dried basil
1/2 teaspoon oregano
1/2 teaspoon dried parsley

BROCCOLI WITH FRESH TOMATO SAUCE RECIPE

Broccoli with fresh tomato sauce recipe image

www.goodto.com has lots of quick and easy food recipes like this Broccoli with fresh tomato sauce. Find out more recipes at www.goodto.com

Provided by Jennifer Shepherd

Yield Serves: 4

Number Of Ingredients 8

900g (2lb) tomatoes
1 tbsp olive oil
1 large onion, peeled and chopped
1 tbsp plain flour
1 vegetable stock cube, optional
1kg (2lb 3oz) broccoli, cut into large florets
25-50g (1-2oz) Cheddar cheese, grated
25g (1oz) fresh granary breadcrumbs

Steps:

  • To make the sauce, put the tomatoes into a large heatproof bowl, cover with boiling water and leave to stand for 1-2 minutes or until the skins start to split. Using a slotted spoon, remove the tomatoes from the water and leave to cool.
  • Remove the skin from the tomatoes, and then cut them in half and, using the handle of a small teaspoon, remove the seeds. Roughly chop the tomato flesh.
  • Heat the olive oil in a large saucepan, add the onion and cook gently until softened but not browned, then stir in the flour, crumble in the stock cube (if using) and add the chopped tomatoes.
  • Bring the sauce to the boil, then reduce the heat, partially cover the pan and cook for 30-40 minutes, or until it is reduced and thickened to a coating consistency. Add seasoning to taste.
  • Meanwhile, heat the oven to 220°C/425°F/Gas Mark 7. Steam the broccoli over a saucepan of boiling water for 10 minutes, until just cooked - taking care not to overcook. Arrange in a large, shallow, ovenproof dish.
  • Pour the tomato sauce over the broccoli. Mix together the cheese and breadcrumbs, sprinkle over the broccoli, and then bake for 25-30 minutes, until piping hot and the cheese mixture is lightly browned. Serve accompanied with granary or wholemeal bread - and a crisp green salad, if wished.

AWESOME BROCCOLI MARINARA

Awesome Broccoli Marinara image

This is a great quick version of an Italian traditional side dish in our family all the way from Italy. You can use fresh tomatoes and basil. However, as a mother of four, I opt for the quick method as I'm sure other parents of small ones can appreciate. The kids really love this dish too. Buon Appetito!

Provided by Debra

Categories     Side Dish     Vegetables     Tomatoes

Time 25m

Yield 4

Number Of Ingredients 5

2 tablespoons olive oil
1 (14.5 ounce) can diced tomatoes with balsamic vinegar, basil and olive oil
1 pound broccoli florets
2 cloves garlic, chopped
salt and pepper to taste

Steps:

  • Heat olive oil in a large skillet over medium heat. Add garlic, and cook for a few minutes, stirring constantly. Pour in the tomatoes with their juices, and simmer until the liquid has reduced by about 1/2. Place the broccoli on top of the tomatoes, and season with a little salt and pepper. Cover, and simmer over low heat for 10 minutes, or until the broccoli is tender. Do not over cook the broccoli, it should be a vibrant green. Pour into a serving dish, and toss to blend with the sauce before serving.

BROCCOLI AND TOMATO BAKE

Broccoli and Tomato Bake image

This dish helps me warm up on a cold winter's day without being too heavy. It was inspired by a dish from my favorite vegetarian cookbook. I eat it with rice and chicken for dinner or a piece of brown bread for lunch.

Provided by Eliot

Categories     Side Dish     Vegetables     Tomatoes

Time 1h15m

Yield 4

Number Of Ingredients 12

1 tablespoon olive oil
1 small onion, thinly sliced
1 clove garlic, minced
1 small carrot, diced
1 stalk celery, diced
salt and ground black pepper
¾ pound broccoli - cut into florets, stems peeled and sliced 1/4 inch thick
1 (15 ounce) can diced tomatoes
1 tablespoon chopped green olives
2 teaspoons maple syrup
¼ cup crumbled goat cheese
¼ cup Parmesan cheese

Steps:

  • Heat olive oil in a skillet over medium heat. Add the onion and garlic; cook and stir until aromatic, about 3 minutes. Stir in the carrots and celery, season with salt and pepper, and continue cooking until the vegetables begin to soften, about 5 minutes.
  • Meanwhile, place a steamer insert into a saucepan, and fill with water to just below the bottom of the steamer. Cover, and bring the water to a boil over high heat. Add the broccoli, recover, and steam until bright green, 4 minutes. Remove the broccoli from the steamer and place in a 8x8 inch baking dish; set aside.
  • Preheat an oven to 375 degrees F (190 degrees C).
  • Pour the can of diced tomatoes and green olives into the skillet with the onion and carrot mixture. Stir and cook over medium-high heat until most of the sauce thickens, about 5 minutes. Mix in the maple syrup, season with salt and pepper to taste, and cook and stir for 3 minutes.
  • Pour the sauce over the broccoli in the 8x8 inch baking dish. Evenly distribute the goat cheese and Parmesan cheese over the broccoli and sauce.
  • Bake in preheated oven until the cheese begins to brown, about 20 minutes.

PASTA WITH BROCCOLI IN SWEET TOMATO SAUCE

Pasta With Broccoli in Sweet Tomato Sauce image

I like this recipe because it is fresh, light, low calorie, low sodium, it is eazy to make, is a meatless dish and it has lots of flavor (sweet, garlic, tomato, with a little spice). It is a good alternative to traditional spaghetti with tomato sauce, and makes for a good summer dish. I got this recipe from a "Seniors/ Cooking for Two" category cookbook I checked out from the library. You can make a lot of substitutions in this recipe too. You can substitute frozen broccoli(instead of fresh), fresh tomatoes (instead of canned), pine nuts (instead of almonds), and spaghetti noodles (instead of linguine). I switch on using fresh vs canned/frozen ingredients depending on what is more economical (sometimes I will buy fresh broccoli when it is on sale and blanch what I don't use and save it in the freezer).
