BROCCOLI PASTA IN A FRESH TOMATO SAUCE
Determined to create my very own, 100% original pasta recipe, which I could call "mine" in all honestly, I made this for lunch today and was so thrilled with its fresh, light taste that I just HAD to post it and let everyone know that I'm not as unimaginative as I though! :) Reserving the pasta water saves some of the nutrients of broccoli from getting wasted.

Steps:
- Bring a medium pot of lightly salted water to a boil.
- Add pasta and cook for about 5-8 minutes.
- Stir in broccoli and cook 5-8 minutes more, or until pasta is al dente.
- Drain, reserving 1/2 cup of the water.
- Heat oil in a medium saucepan and saute the chopped onion until translucent.
- Add the chopped tomatoes, salt, pepper, and 1/2 cup of the pasta-broccoli water.
- Cover the saucepan and simmer for 5 minutes.
- Uncover, increase the flame to high, and cook for another 5 minutes, or until the most of the water has evaporated.
- Remove from heat and season with basil, parsley and oregano.
- Stir in the cooked pasta-broccoli mixture and mix well to coat.
- Sprinkle with parmesan cheese and serve hot!
SAUTéED BROCCOLI RECIPE WITH TOMATO AND GARLIC
Steps:
- Gather the ingredients.
- Warm the olive oil in a skillet over medium heat. Add the garlic and sauté for 1 minute.
- Add the broccoli florets. Cook for 2 minutes, stirring frequently.
- Add 2 tablespoons water, then cover the pan and steam the broccoli for about 2 minutes until it becomes bright green and the water has evaporated.
- Add the tomatoes and cook for 1 additional minute.
- Add the herbs and salt to taste.
- Stir gently and serve.

- To make the sauce, put the tomatoes into a large heatproof bowl, cover with boiling water and leave to stand for 1-2 minutes or until the skins start to split. Using a slotted spoon, remove the tomatoes from the water and leave to cool.
- Remove the skin from the tomatoes, and then cut them in half and, using the handle of a small teaspoon, remove the seeds. Roughly chop the tomato flesh.
- Heat the olive oil in a large saucepan, add the onion and cook gently until softened but not browned, then stir in the flour, crumble in the stock cube (if using) and add the chopped tomatoes.
- Bring the sauce to the boil, then reduce the heat, partially cover the pan and cook for 30-40 minutes, or until it is reduced and thickened to a coating consistency. Add seasoning to taste.
- Meanwhile, heat the oven to 220°C/425°F/Gas Mark 7. Steam the broccoli over a saucepan of boiling water for 10 minutes, until just cooked - taking care not to overcook. Arrange in a large, shallow, ovenproof dish.
- Pour the tomato sauce over the broccoli. Mix together the cheese and breadcrumbs, sprinkle over the broccoli, and then bake for 25-30 minutes, until piping hot and the cheese mixture is lightly browned. Serve accompanied with granary or wholemeal bread - and a crisp green salad, if wished.

AWESOME BROCCOLI MARINARA
This is a great quick version of an Italian traditional side dish in our family all the way from Italy. You can use fresh tomatoes and basil. However, as a mother of four, I opt for the quick method as I'm sure other parents of small ones can appreciate. The kids really love this dish too. Buon Appetito!

- Heat olive oil in a large skillet over medium heat. Add garlic, and cook for a few minutes, stirring constantly. Pour in the tomatoes with their juices, and simmer until the liquid has reduced by about 1/2. Place the broccoli on top of the tomatoes, and season with a little salt and pepper. Cover, and simmer over low heat for 10 minutes, or until the broccoli is tender. Do not over cook the broccoli, it should be a vibrant green. Pour into a serving dish, and toss to blend with the sauce before serving.

This dish helps me warm up on a cold winter's day without being too heavy. It was inspired by a dish from my favorite vegetarian cookbook. I eat it with rice and chicken for dinner or a piece of brown bread for lunch.

- Heat olive oil in a skillet over medium heat. Add the onion and garlic; cook and stir until aromatic, about 3 minutes. Stir in the carrots and celery, season with salt and pepper, and continue cooking until the vegetables begin to soften, about 5 minutes.
- Meanwhile, place a steamer insert into a saucepan, and fill with water to just below the bottom of the steamer. Cover, and bring the water to a boil over high heat. Add the broccoli, recover, and steam until bright green, 4 minutes. Remove the broccoli from the steamer and place in a 8x8 inch baking dish; set aside.
- Preheat an oven to 375 degrees F (190 degrees C).
- Pour the can of diced tomatoes and green olives into the skillet with the onion and carrot mixture. Stir and cook over medium-high heat until most of the sauce thickens, about 5 minutes. Mix in the maple syrup, season with salt and pepper to taste, and cook and stir for 3 minutes.
- Pour the sauce over the broccoli in the 8x8 inch baking dish. Evenly distribute the goat cheese and Parmesan cheese over the broccoli and sauce.
- Bake in preheated oven until the cheese begins to brown, about 20 minutes.

- Cook macaroni according to package directions; drain and set aside. In a saucepan, saute onion and garlic in butter until tender. BROCCOLI WITH TOMATOES
Steps:
- Cut the tops of the broccoli into bite-size florets. Cut the broccoli stems into 1 1/2-inch lengths, trimming and discarding the outer coating. There should be about 6 cups of broccoli pieces.
- Meanwhile, bring to a boil enough water to cover the broccoli when added. Add the broccoli, and after the water returns to a boil, cook another 2 minutes. Drain thoroughly.
- Peel the tomatoes, and cut them lengthwise into eighths. Scrape away and discard the seeds and the pulpy portions around them. Set the tomato strips aside.
- Heat the oil in a large skillet, and add the broccoli and pepper flakes.
- Add the tomato strips, garlic, salt and pepper. Cook, shaking the skillet and stirring so that the ingredients blend and cook evenly, about 2 minutes.

PASTA WITH BROCCOLI IN SWEET TOMATO SAUCE
I like this recipe because it is fresh, light, low calorie, low sodium, it is eazy to make, is a meatless dish and it has lots of flavor (sweet, garlic, tomato, with a little spice). It is a good alternative to traditional spaghetti with tomato sauce, and makes for a good summer dish. I got this recipe from a "Seniors/ Cooking for Two" category cookbook I checked out from the library. You can make a lot of substitutions in this recipe too. You can substitute frozen broccoli(instead of fresh), fresh tomatoes (instead of canned), pine nuts (instead of almonds), and spaghetti noodles (instead of linguine). I switch on using fresh vs canned/frozen ingredients depending on what is more economical (sometimes I will buy fresh broccoli when it is on sale and blanch what I don't use and save it in the freezer).

- In medium saucepan, cook the broccoli in enough boiling water to cover until just tender-- 2 to 3 minutes Rinse under cold running water, drain and set aside (blanch broccoli).
