- Make the candied bacon: Cook the bacon in a large nonstick skillet over medium heat, stirring occasionally, until crisp, about 10 minutes; remove with a slotted spoon and drain on paper towels. Pour the drippings into a small bowl and set aside; wipe out the skillet.
- Cook the sugar with 1 teaspoon water in a small saucepan over medium heat, swirling the pan occasionally, until dark amber, about 5 minutes. Stir in the vinegar and star anise; simmer 1 more minute. Stir in the bacon until coated, then spread out in a single layer on a baking sheet to cool; discard the star anise.
- Make the stir-fry: Whisk the eggs with the wine and a pinch each of salt and pepper in a large bowl until frothy. Heat 2 tablespoons of the reserved bacon drippings in the skillet over medium-high heat, swirling to coat. Add the scallions and cook, stirring, until just tender, about 15 seconds.
- Pour the egg mixture into the skillet and tilt to spread evenly. Cook until the edges just start setting, then stir rapidly with a rubber spatula until the eggs are almost set, about 1 more minute. Transfer to a plate and wipe out the skillet.
- Add 1 more tablespoon of the reserved bacon drippings to the skillet, swirling to coat. Add the tomatoes, sprinkle with the sugar and season with salt and pepper. Cook, stirring occasionally, until the tomatoes start breaking down, about 2 minutes. Add the cornstarch and cook, stirring, until the liquid thickens, 1 minute.
- Fold the scrambled eggs into the tomato mixture. Sprinkle with the candied bacon and more scallions; serve over rice.
EGG CUPS AND BACON SOLDIERS RECIPE BY TASTY

- Preheat the oven to 190°C (375°F).
- Cut the crusts off the bread.
- Slice the bacon in half lengthways, and wrap a piece around each crust. Place them on a baking tray.
- Brush cupcake tin with melted butter. Press the bread into the muffin tin, then brush more butter onto the bread.
- Bake the bacon soldiers for 10 minutes til they are about halfway cooked and starting to render their fat.
- At the same time, bake bread cups for 10 minutes or until the bread is turning golden brown.
- Flip the bacon. Crack an egg into each bread cup. Season with salt and pepper.
- Bake the bacon soldiers for another 10-12 minutes until the bacon is crispy. At the same time, bake the eggs for another 10-12 minutes until they are just cooked.
- Dip and Enjoy!

- In a large skillet, cook bacon over medium heat until crisp. Remove with a slotted spoon; drain on paper towels. Discard drippings, reserving 2 tablespoons. In the same skillet, saute onion and green pepper in drippings until tender; remove with a slotted spoon. , In a large bowl, whisk eggs, milk and seasonings. Stir in the hash browns, cheese, onion mixture and bacon., Transfer to a greased 13x9-in. baking dish. Bake, uncovered, at 350° for 35-45 minutes or until a knife inserted in the center comes out clean.

- Have your bacon cooked and crumbled and set aside.
- Place vegetable oil (or you can use bacon drippings) in a non-stick 12" skillet and heat over medium heat.
- Pour potatoes into pan and press down evenly.
- Fry about 10 minutes until underside is brown and crispy.
- As carefully as you can flip potatoes over.
- If you can't do this in one piece, try to do it in thirds or fourths, but try to keep them from falling apart.
- Press potatoes down in pan evenly.
- Make 5 to 6 two inch holes, or openings into the potatoes, evenly spaced.
- Drop an egg into each hole.
- You can add a little butter to each hole before dropping the eggs in, if you like.
- Sprinkle salt and pepper over all.
- Sprinkle bacon and then cheese evenly over top.
- Cover until eggs are set.
- Serve in pan with toast or bagels on the side and enjoy!

- Preheat the oven to 350 degrees F (175 degrees C).
- Place bacon in a 10-inch skillet and cook over medium heat, turning occasionally, until crisp, about 10 minutes. Use a slotted spoon to remove bacon to a paper towel-lined small bowl. Discard half the bacon fat using a spoon.
- Cook sausage in the hot skillet until browned on both sides, about 5 minutes. Remove to the bowl with the bacon.
- Heat canola oil and butter in the same skillet over medium heat. Add hash browns and onion. Sprinkle 1/2 teaspoon garlic powder, onion powder, 1/4 teaspoon salt, and 1/4 teaspoon black pepper on top and stir together. - In a 12 inch skillet, cook bacon until crisp. Cover and refrigerate.
- Drain drippings, reserving a tablespoon in pan. Add onion, bell pepper, and mushrooms and cook 4 minutes over medium heat, stirring occasionally.
- Stir in mustard, salt, and pepper. In large bowl, beat milk and eggs with wire whisk.
- Spray 13x9 inch baking dish with cooking spray. Spread half the hash browns in baking dish.
- Spread onion mixture evenly over the top.
- Sprinkle with 1 cup of the cheese. Spread remaining hash browns over top.
- Pour egg mixture on top. Cover and refrigerate 8 hours or overnight.

- Beat three eggs in an empty bowl and add a bit of salt until well-combined.
- Cut bacon into 1-inch (2 ½ cm) pieces and finely dice the onion.
- Heat oil in either a wok or nonstick frying pan over medium heat and add beaten eggs. Gently scramble the eggs; when they are almost done, remove from wok and set aside.
- Add bacon to the wok and allow it to render down and become crisp. Once the bacon is done, take it out of the wok and set aside, along with the scrambled eggs.
- Add the diced onion to the wok and stir-fry until translucent. Then add the cooked rice, make sure the rice is fluffed and cooled, and stir-fry for 2 to 5 minutes. Use spatula to break up any clumps.
- Add the salt, pepper, sugar, and soy sauce. Stir for another minute or so.
- Once there is steam coming off the rice and it is completely heated through, add scrambled eggs and cooked bacon.
- Sprinkle with green onion, as desired.

- Take the eggs out of the refrigerator. Place a rack in the center of the oven, and heat the oven to 450 degrees.
- Arrange the bacon on a rimmed baking sheet in a single layer, spacing evenly. Roast in the center of the oven until the fat renders and the bacon curls, about 8 minutes. Very thin slices will cook more quickly; thick-cut ones will take longer.
- Take the pan out of the oven and quickly flip the bacon and move to one side of the pan. Crack the eggs onto the other side, then immediately return the pan to the oven and roast until the whites are just set, the yolks are still runny and the bacon is brown and crisp, 2 to 5 minutes longer.
