CHOCOLATE SANDWICH DELIGHT

Whew! Talk about decadent! This is one of the most popular recipes I shared on my social media and after one taste you'll see why. You know I love anything cheesecake, so of course I knew that a brownie-cheesecake combo, with those famous chocolate sandwich cookies, would be a hit.

Nonstick cooking spray or shortening, for the pan
1/2 cup unsweetened cocoa powder, plus more for dusting the pan
1 cup all-purpose flour
1/4 teaspoon kosher salt
1 1/2 cups sugar
3/4 cup (1 1/2 sticks) unsalted butter, melted
1 tablespoon canola oil
1 teaspoon vanilla extract
2 large eggs
3/4 cup mini chocolate chips
15 chocolate sandwich cookies (I like Oreo)
Three 8-ounce blocks cream cheese, at room temperature
3/4 cup sugar
2 large eggs
1 teaspoon vanilla extract
12 chocolate sandwich cookies, coarsely chopped
Chocolate sauce, optional, for garnish

Steps:

  • Preheat the oven to 325 degrees F. Coat a 9-by-13-inch baking pan with nonstick cooking spray or shortening and dust with cocoa powder. Set aside.
  • Combine the flour, salt and cocoa powder in a medium bowl. Combine the sugar, melted butter, oil, vanilla and eggs in a large bowl. Add the flour mixture to the butter mixture and stir until combined. Stir in the chocolate chips. Pour the batter into the bottom of the prepared baking pan. Arrange the chocolate sandwich cookies on top of brownie batter, spacing them out evenly.
  • Make the cheesecake layer. Beat the cream cheese and sugar in a large bowl until the mixture becomes fluffy. Slowly beat in the eggs, one at a time, until the batter is smooth. Add the vanilla, stirring until combined. Pour the cheesecake batter over the top of the chocolate sandwich cookies and brownie batter, spreading out evenly. Sprinkle the top with the chopped cookies. Bake until the edges are slightly golden brown and the center is a little jiggly, about 45 minutes. Remove to a wire rack to cool completely. Refrigerate for at least 2 hours or up to overnight. Cut into squares and serve with a drizzle of chocolate sauce, if desired.

2 cups heavy cream
¼ cup butter
3 egg whites
⅛ cup white sugar
1 (9 inch) pie shell, baked

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a saucepan, combine egg yolks, brown sugar and flour. Mix in the cream. Cook, stirring constantly, until thickened. Remove from heat and stir in butter. Pour into pre-baked pie shell.
  • In a large glass or metal mixing bowl, beat egg whites until foamy. Gradually add white sugar, continuing to beat until stiff peaks form. Spread meringue over pie, covering completely.
  • Bake in preheated oven for 5 to 10 minutes, or until meringue starts to brown.

1 cup frozen peas
2 cups long grain brown rice
2 garlic cloves
2 tablespoons simulated chicken base
1 tablespoon low sodium soy sauce
1/2 teaspoon cumin
1/2 teaspoon basil
2 celery ribs
1 pinch pepper

Steps:

  • Rinse rice well.
  • Dice garlic, onion and celery into fine pieces.
  • Add all ingredients to pot, cover, and simmer until water has been absorbed into rice.
  • Average cooking time is 60 minutes.
  • Let stand for 10 minutes and fluff with fork.
  • Cooking time can be reduced in half by soaking rice overnight.

This is a recipe of my mother's that I didn't find until after she died. One dough makes 6 different types of icebox cookie. Prep time does not include chilling time.

6 cups sifted all-purpose flour
4 teaspoons baking powder
1/2 teaspoon salt
1 1/2 cups shortening
3 cups brown sugar
2 eggs, beaten
2 teaspoons vanilla
2 ounces unsweetened chocolate, melted
1/3 cup shredded coconut
1/3 cup dates, raisins, currants, prunes, figs or 1/3 cup dried apricot, chopped
1/3 cup almonds, pecans, peanuts, brazil nuts or 1/3 cup walnuts, finely chopped
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg

Steps:

  • Sift flour, baking powder and salt together.
  • Beat shortening and sugar together until fluffy.
  • Add eggs and vanilla, and beat well.
  • Combine mixtures and mix well.
  • Divide dough into six portions.
  • Leave one portion plain.
  • Mix ingredients for one of the variations into each of the other portions.
  • Shape each portion into a roll.
  • Wrap in plastic and refrigerate until firm, at least 1 hour.
  • Preheat oven to 375°F.
  • Slice dough very thin.
  • Place on ungreased baking sheet and bake for 10-12 minutes.
