I always serve this as a starter at dinner parties. Everyone loves it because it is so light and tasty.

1 French baguette, cut into 1/2 inch thick circles
8 plum tomatoes, diced
1 cup chopped fresh basil
½ red onion, minced
freshly ground black pepper
3 cloves garlic

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Combine tomato, basil, and red onion in a small mixing bowl; stir well. Season with freshly ground black pepper. Set aside.
  • Arrange bread on a baking sheet. Place in oven, and bake until well toasted, approximately 5 minutes.
  • Remove bread from oven, and transfer to a large serving platter. Let bread cool 3 to 5 minutes. Rub garlic into the top of each slice of toast; the toast should glisten with the garlic. Spoon the tomato mixture generously onto each slice, and serve.

I went through a major bruschetta phase and tried many many recipes until I found the perfect one. This was originally Guy Fieri's but is slightly adapted to my taste after making it about a billion times. Cookingt time is marinating time.

1 baguette, cut in half length-wise and toasted
2 teaspoons minced garlic (I use the kind in a jar)
3 tablespoons extra-virgin olive oil
1/4 cup grated parmesan cheese
2 1/2 cups minced roma tomatoes (cut so fine its almost a paste)
1/3 cup thinly sliced fresh basil leaf
2 tablespoons balsamic vinegar
1/2 teaspoon salt
1 teaspoon fresh ground pepper

Steps:

  • In a medium mixing bowl, add the tomatoes, garlic, basil, vinegar, olive oil, cheese, salt and pepper.
  • Mix thoroughly and let sit for at least 15 minutes at room temperature to let the flavors marinate.
  • Slice the bread into individual pieces and spoon the mixture on top.

2 gran pimiento (pimentón) rojo grandes, picados
2 clavos de ajo, bien picados
1/2 taza de agua
2 tazas de arroz blanco instantáneo, sin cocer
1 taza de queso mozzarella parcialmente descremado, de baja humedad y desmenuzado KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese
1 gran tomate (jitomate) fresco grande, picado
2 de albahaca fresca, picada

Steps:

  • Calienta el aderezo en una sartén grande a fuego medio. Agrega el pollo, los pimientos y el ajo; tápala. Cocina esto de 12 a 16 min. o hasta que el pollo esté completamente cocido (temperatura interna de 165ºF), volteando el pollo y revolviendo los pimientos al cabo de 6 min. Saca el pollo de la sartén, reservando los pimientos en la sartén. Cubre el pollo para mantenerlo caliente.
  • Agrega los tomates enlatados, el agua y el arroz a la sartén; revuelve todo. Deja que suelte el hervor. Mantén un hervor suave a fuego bajo, sin tapar la sartén, durante 10 min. Mientras tanto, mezcla el queso, el tomate fresco y la albahaca.

5 leaves chopped fresh basil
2 cloves minced garlic
1 pinch dried oregano
1 dash crushed red pepper
1 pinch salt
1 pinch ground black pepper
1 tablespoon olive oil
1 (1 pound) loaf French or Italian-style bread

Steps:

  • Preheat the broiler.
  • In a mixing bowl, combine the tomatoes, basil, garlic, oregano, red pepper, salt, pepper and olive oil. Use more olive oil, if necessary, to coat the entire mixture. Allow the mixture to sit for 10 minutes.

2 cloves garlic, halved
1 teaspoon olive oil
2 tablespoons minced onions
1 large tomatoes, diced
1 pinch dried oregano
1 pinch pepper
2 tablespoons freshly grated parmesan cheese

Steps:

  • Under broiler, toast bread on both sides until brown.
  • Rub one side of hot toast with cut side of garlic.
  • While bread is toasting, heat oil in non stick fry pan over medium heat.
  • Add onion and cook, stirring until tender.
  • Add tomato, oregano and pepper.
  • Stir to mix.
  • Spoon tomato mixture over garlic side of toast and sprinkle with Parmesan cheese, then broil for 1 minute.
  • Serve immediately.
