1 (8 ounce) package cream cheese, softened
½ cup hot sauce
¼ cup ranch dressing
¼ cup minced onion
¼ teaspoon garlic powder
¼ teaspoon onion powder
3 (5 ounce) cans chicken chunks, drained
2 (8 ounce) packages refrigerated crescent rolls
2 tablespoons butter, melted
½ cup shredded Cheddar cheese, or as needed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix cream cheese, hot sauce, ranch dressing, onion, garlic powder, and onion powder together in a bowl; fold in chicken.
  • Roll crescent roll dough onto a work surface, pressing dough into a thin layer without tearing. Cut 3-inch pieces out of dough using a biscuit cutter. Spoon about 1 tablespoon cream cheese mixture into the center of each dough piece. Pull dough over filling and press into other edge of dough; crimp edges together using a fork.
  • Arrange pockets on a baking sheet. Brush each pocket with butter and sprinkle with Cheddar cheese.
  • Bake in the preheated oven until golden brown, about 15 minutes.

Steps:

  • Whisk flour, cayenne pepper, salt, and pepper together in a bowl. Beat eggs together in a separate bowl. Dip chicken pieces in the egg; transfer chicken to flour mixture and coat completely.
  • Heat oil in a saucepan over medium heat.

Buffalo Chicken Bites have the most tender, juicy meat, coated in Frank's hot sauce and fried to perfection before dipping either in blue cheese or ranch. Adults and kids agree that this is a family favorite appetizer!

2-3 chicken breasts (boneless and skinless)
1 large egg
1/2 cup Frank's hot sauce
3/4 cup all-purpose flour
1/2 cup plain bread crumbs
1 tablespoon Italian seasoning
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon black pepper
1/2 teaspoon cayenne pepper
Vegetable oil for frying

Steps:

  • Trim chicken of any fat. Cut into 1-inch, nugget sized pieces.
  • In a small bowl, add hot sauce and egg. Whisk to combine. Place all the chicken pieces into the egg/hot sauce mixture and stir to make sure all is coated. This may be refrigerated for up to 24 hours in advance to make the flavoring more intense if desired.
  • In a separate bowl mix together the flour, bread crumbs, Italian seasonings, salt, garlic powder, pepper, and cayenne.
  • Take the chicken pieces out of the hot sauce and egg mixture. Roll chicken pieces in breadcrumb mixture until well coated.
  • Heat about 2 inches of cooking oil over medium-high heat to 350 degrees Fahrenheit.
  • Working in small batches, place the coated chicken into the oil and fry them for 3-5 minutes, or until they are more golden in color, with an internal temperature of 165 degrees Fahrenheit.
  • Remove from oil and set on a paper towel lined baking sheet or plate.
  • Once cooled a bit, enjoy!

1/3 c. Hot sauce
1 1/2 c. shredded sharp Cheddar cheese
2 tbsp. Chopped chives
2 tbsp. ranch dressing, plus more for dipping
1 c. flour

1 1/2 c. panko breadcrumbs
1/4 tsp. Pepper

Steps:

  • Preheat oven to 425 degrees F.
  • In a large mixing bowl, combine chicken, hot sauce, cheese, chives and ranch. Roll into golf ball-sized balls. Chill in fridge as you set up dredging station.
  • Grab three shallow bowls, filling one with flour, one with the beaten eggs, and the third with panko and pepper (mixing the two ingredients to combine). Dip each buffalo chicken ball in flour, then the eggs, then the panko mixture. Set the balls about 1" apart on an aluminum foil-lined baking sheet. Spritz buffalo chicken balls with cooking spray.

6 boneless, skinless chicken breasts (cut into bite sized pieces)
⅓ cup apple cider vinegar
1 teaspoon paprika
1 teaspoon garlic powder
1 cup buffalo sauce
½ cup Honey
1 Tablespoon olive oil

Steps:

  • Cut the chicken breasts into thick bite size pieces.
  • In a bowl, or gallon zip lock bag, add the chicken breasts pieces, apple cider vinegar, 1/2 teaspoon paprika, 1/2 teaspoon garlic powder, 1/2 cup buffalo sauce, and 1/4 cup honey.
  • Mix until well combined and all the chicken is covered.
  • Place the marinating chicken in the fridge for about 2-4 hours.
  • Remove the chicken from the fridge and preheat oven to 350 degrees.
  • Place a cooling rack on top of a cookie sheet for best results, or just spray a cookie sheet with non-stick cooking spray.
  • In a smaller bowl, combine the olive oil, 1/4 cup honey, 1/2 cup buffalo sauce, 1/2 teaspoon garlic powder, and 1/2 teaspoon paprika.
  • Dip each chicken piece into the mixture and place on the cooling rack. Do this until each chicken piece is covered on on the rack.
  • Place the chicken in the oven and bake for 20 minutes, flipping once halfway through.
  • Remove from oven once done cooking and enjoy!
  • We like to dip them in ranch or a little more buffalo sauce

24 wonton skins
Sliced green onion tops, if desired

Steps:

  • Heat oven to 375°F. Spray 24 mini muffin cups with cooking spray.
