4 cups unbleached all-purpose flour, plus more for dusting
1 1/2 cups granulated sugar
1 tablespoon baking powder
1 teaspoon kosher salt
2 sticks (1 cup) unsalted butter, cut into pieces and chilled
3 large eggs
1 to 2 tablespoons whole milk
1 teaspoon pure vanilla extract
Grated zest of 1/2 orange
1 cup dried Black Mission figs, stems removed
3/4 cup raisins
1/2 cup honey
1/4 cup brandy
2 teaspoons ground cinnamon
1/4 teaspoon ground cloves
1 pinch freshly grated nutmeg
Grated zest of 1/2 orange
2 teaspoon pure vanilla extract
3/4 teaspoon kosher salt
1 1/2 cups pecans, toasted and finely chopped
2 large egg whites, beaten
2 1/2 cups confectioners' sugar
1/2 teaspoon pure vanilla extract

Steps:

  • Dough: In a food processor, pulse together flour, granulated sugar, baking powder, and salt. Add butter and pulse until the largest pieces are the size of peas. Add eggs, 1 tablespoon milk, vanilla, and orange zest; pulse until a dough forms. If dough seems dry, add remaining 1 tablespoon milk.
  • Divide dough in half. Shape each half into a rectangle, wrap in plastic, and refrigerate until firm, about 2 hours.
  • Filling: In a food processor, pulse together figs, raisins, honey, brandy, cinnamon, cloves, nutmeg, orange zest, vanilla, and salt until a thick paste forms. Transfer paste to a bowl and stir in pecans. Measure a heaping 1/4 cup of filling, place on a piece of plastic wrap, and roll into a log about 10 inches long. Freeze until firm. Repeat process with remaining filling (you should have 10 logs).
  • Working with one rectangle of dough at a time, place dough on a lightly floured sheet of parchment. Roll out dough to a 15-by-10-inch rectangle, a scant 1/4 inch thick. Transfer parchment to a baking sheet; refrigerate 30 minutes. Repeat process with remaining dough.
  • Cut each rectangle of dough crosswise into five 3-inch-wide strips. Position one strip of dough on work surface with long sides parallel to edge of work surface. Place one log of filling along the upper edge of the long side of each strip. Fold remaining dough over filling to enclose. Transfer to a parchment-lined baking sheet, seam-side down. Refrigerate until chilled, about 30 minutes. Repeat process with remaining dough and filling.
  • Preheat oven to 350 degrees. Cut logs into 2-inch pieces. Using a paring knife, make 2 cuts on one side of each piece, being careful not to cut all the way through. Shape each piece into a crescent, with the cuts on the outside of the crescent. Transfer to parchment-lined baking sheets. Bake, rotating halfway through, until bottoms are brown and tops are light golden brown, 18 to 22 minutes. Let cool on sheets on wire racks.
  • Glaze: Whisk together egg whites and confectioners' sugar until smooth. Mix in vanilla. Transfer to a piping bag fitted with a very small round tip. Pipe glaze over cookies; let stand until set. Glazed cookies can be stored in an airtight container, between sheets of parchment, at room temperature up to 2 days.

1 cup cold butter
4 large egg yolks
1 cup evaporated milk

Steps:

  • In a large bowl, combine flour and salt. Cut in butter until mixture resembles coarse crumbs. In another bowl, beat egg yolks until foamy; add milk and vanilla. Stir into crumb mixture until dough is stiff enough to knead. , Turn onto a lightly floured surface; knead 8-10 times. Divide dough into 4 pieces. Roll each portion into a 1/4-in.-thick rectangle; cut into 4x1-1/2-in. strips. Cut a 2-in. lengthwise slit down the middle of each strip; pull one of the ends through the slit like a bow., In an electric skillet or deep-fat fryer, heat oil to 375°. Fry dough strips, a few at a time, until golden brown on both sides. Drain on paper towels. Dust with confectioners' sugar.

6 cups all-purpose flour
1 tablespoon baking powder
¼ teaspoon salt
2 cups lard
1 ½ cups white sugar
2 teaspoons anise seed
2 eggs
¼ cup brandy
¼ cup white sugar
1 tablespoon ground cinnamon

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Sift the flour, baking powder and salt into a bowl, and set aside.
  • In a large bowl, cream together the lard and 1 1/2 cups sugar until smooth. Mix in the anise seed, and beat until fluffy. Stir in the eggs one at a time. Add the sifted ingredients and brandy, and stir until well blended.
  • On a floured surface, roll the dough out to 1/2 or 1/4 inch thickness, and cut into desired shapes using cookie cutters. The traditional is fleur-de-lis. Place cookies onto baking sheets. Mix together the 1/4 cup of sugar and cinnamon; sprinkle over the tops of the cookies.
  • Bake for 10 minutes in the preheated oven, or until the bottoms are lightly browned.

1 cup shortening
1 cup butter or 1 cup margarine, softened
2 cups sugar
2 cups firmly packed brown sugar
4 large eggs
2 teaspoons vanilla extract
4 cups flour
2 teaspoons baking powder
2 teaspoons baking soda
2 cups oats, uncooked
2 cups corn flakes cereal
1 cup chopped pecans
1 cup flaked coconut
12 ounces semi-sweet chocolate chips (2 cups)

Steps:

  • Beat shortening and butter at medium speed with an electric mixer until creamy; gradually add sugars, beating well.
  • Add eggs, one at a time, beating after each addition.
  • Add vanilla, mixing well.
  • Combine flour, baking powder, and baking soda; gradually add oats and remaining ingredients.
  • Stirring well after each addition.
  • Drop dough by tablespoonfuls 2 inches apart, onto ungreased baking sheets.
  • Bake at 350° for 10 minutes or until lightly browned.
  • Remove cookies to wire racks to cool.
  • Cookies may be frozen in airtight containers up to 3 months.

1 cup butter
1 cup shortening
2 cups brown sugar
2 cups granulated sugar
4 eggs
2 teaspoons vanilla
2 cups quick oats (uncooked)
4 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
1 teaspoon salt
1 cup coconut
1 cup chopped pecans
2 cups Corn Flakes
12 ounces chocolate chips

Steps:

  • Preheat the oven to 350 degrees.
  • This makes a lot of dough, so I use my Kitchen Aid stand mixer and paddle attachment. It handles all the ingredients really well. You can also use a large mixing bowl and electric mixer, but definitely stir in all the add-ins and use a large enough bowl to hold everything.
  • Cream the butter and shortening, then add both sugars, the eggs, and vanilla. Beat at medium speed until well combined. Combine flour, baking powder, and baking soda in a separate bowl, then add into the butter mixture and mix well.
  • Stir in the nuts, chocolate chips, coconut, Corn Flakes, and/or any other add-ins you like. Butterscotch chips, raisins, Craisins, sliced almonds, Rice Krispies cereal, pretzels...whatever you have on hand and love!
  • Use a 1/4 measuring cup to scoop out the cookie dough, and place on a baking sheet lined with parchment paper or a silicone baking mat. You could also use a large cookie scoop or ice cream scoop about the same size. For smaller cookies, use a cookie scoop to form your cookies, then alter the baking time by a few minutes.
  • Place cookie sheets in the oven, and bake 10-12 minutes, or slightly longer for a crispier cookie. Let sit on the cookie sheet for a few minutes before moving to cool completely on wire racks. Store in airtight containers for 3-5 days on the counter, and about a week in the refrigerator.

  • When batter is throughly mixed, measure 1/4 cup batter for each cookie on a large ungreased baking sheet.
  • Bake 10 to 12 minutes, or until edges are golden; for a crisper cookie bake 12 to 15 minutes; allow cookies to cool slightly on baking sheet before removing to a wire rack.
