- In a large bowl, beat cream until soft peaks form. Add sugar and vanilla; beat until stiff. Spread heaping teaspoonfuls on the cookies. Make six stacks of cookies; turn stacks on edge and place on a serving platter, forming a 14-in.-long cake. , Frost top and sides with remaining whipped cream. Garnish with chocolate curls if desired. Refrigerate for 4-6 hours before serving.

- In a medium bowl, stir together the pecans, raisins, walnuts, cherries, condensed milk and vanilla wafers. Dough will be very thick, you will need to use your hands.
- Form dough into a ring shape on top of a dinner plate. Wrap in many layers of plastic wrap and/or aluminum foil. Allow to age in the refrigerator for at least a week. The flavors will have a chance to blend and all of the milk will be absorbed into the cake.

- Set aside four whole cherries, two pineapple slices and 16 pecan or walnut halves. Chop remaining fruit and nuts. Crush vanilla wafers; combine the chopped fruit, nuts and raisins and set aside. , In a bowl, beat eggs well. Stir in sugar, salt and milk. Combine wafer/nut mixture with egg mixture. Pack into a waxed paper-lined 10-in. tube pan. Decorate top with reserved whole fruit and nuts. Bake at 325° for 45 minutes. Let stand 10 minutes. Run a sharp knife around edge; turn cake out of pan, then back over again so decorations are on top. Cake can be made ahead and frozen; taste improves with age.

This is a really looker as well as a great tasting cake. If you just want the chocolate double the wafer cookies and eliminate the strawberries. You could also use another fruit...or even vanilla wafer cookies. You can make individual cakes or smaller versions with 3 or 5 cookies in the circle.

- In a large bowl, beat cream, sugar and vanilla with an electric mixer on high speed until soft peaks form.
- On a flat serving plate, arrange 7 cookies side by side in a circle, keeping 1 cookie in the center.
- Spread with 1/2 cup whipped cream, making a 7-inch circle. Leave the tips of the cookies showing.
- Spread layer of strawberries.
- Repeat with remaining ingredients, making 5 layers of cookies and 5 layers of strawberries and ending with a layer of cream.
- Crumble any leftover cookies.
- Top with whole strawberries and cookie crumbles.
- Cover with plastic wrap and refrigerate overnight.
- To serve, dust top lightly with cocoa powder or chocolate shavings.
- Time does not include overnight refrigeration. The refrigeration is important so the cookies go soft and cut easily.

This recipe was given to my mother by an old family friend when I was a young girl. I don't like traditional fruit cake very much, but this one is a great variation with the vanilla wafers. It could be classified somewhere between a cake and a candy.

- First, you must save the vanilla wafer box for this recipe. Pulverize the vanilla wafers to a powder consistency in a food processor. Drain the cherries well on a paper towel and then chop. Except for the condensed milk, mix all the other ingredients into the powdered vanilla wafers throughly..
- You will need plastic gloves for the next method since it is a sticky method. Pour in the condensed milk and mix until completely mixed and wet. Place mixture back into the vanilla wafer box and beat down evenly into a square.
- Allow the fruit cake to set about 4 days to a week. Tear off the vanilla wafer box and cut into small squares. It is rich, so be conservative. Serve. Leftovers should be refrigerated.
