olive oil
2 large onions, coarsely chopped
3 large garlic cloves, coarsely chopped
3 large frying chickens. cut up
salt & pepper
Two 28 oz cans Italian Whole Plum Tomatoes
1 teasp sugar
1/2 teasp red pepper flakes
1/2 teasp salt
1/4 teasp black pepper
1/2 teasp oregano
1/2 teasp basil
1/2 teasp thyme
1 bay leaf
3 green bell peppers cut into strips

Steps:

  • 1) Preheat oven to 350 degrees. 2) Cover bottom of large roasting pan with olive oil. Add onions and garlic and brown lightly. Salt, pepper chicken parts and lightly brown. 3) place tomatoes with juice in blender or food processor (I just break the tomatoes up by hand) and blend briefly to break up. Add sugar, red pepper flakes, salt, pepper, oregano, basil, thyme, & bay leaf. Mix well and add green peppers. 4) Remove chicken pieces to large shallow baking dishes. Layer dark meat in one and white meat in another. Pour sauce over all and cover with foil. Bake one hour (or less). 5) Remove foil, increase oven heat to 450 degrees and bake until chicken is delicately brown. Baste with sauce a few times and serve with your favorite small pasta.

Italian Hunter's Chicken, also known as Chicken Cacciatore, includes tender, juicy chicken in a tomato-based sauce with onion, bell pepper, garlic and fresh herbs. A rustic, flavorful, farmhouse favorite!

3-4 lbs. bone-in, skin-on chicken breasts or thighs
Kosher salt and freshly-ground black pepper
½ cup all-purpose flour, for dredging
2 tablespoons olive oil
2 tablespoons butter
1 red bell pepper, seeded and chopped
1 green bell pepper, seeded and chopped
1 large onion, chopped
3 cloves garlic, minced or pressed
¾ cup dry white wine
1 (28 ounce) can whole peeled tomatoes with juices (preferably San Marzano)
¾ cup reduced-sodium chicken broth
½ teaspoon sugar
2 teaspoons chopped fresh oregano ((or 1 teaspoon dried oregano))
1 teaspoon minced fresh rosemary ((or ¼ teaspoon dried rosemary))
¼ cup chopped fresh basil ((or sub with fresh parsley))

Steps:

  • Pat the chicken dry; season with salt and pepper to taste. Dredge each piece of chicken in the flour to coat lightly, shaking off any excess.
  • In a large, deep skillet or Dutch oven, heat the oil and butter over medium-high heat. Add the chicken pieces to the skillet and cook just until brown, about 5-6 minutes per side. Brown the chicken in two separate batches, if necessary, so that you don't overcrowd the pan. Transfer the chicken to a plate and set aside.
  • Reduce the heat to medium. Add the bell peppers, onion and garlic; cook until the onion is soft, about 5 minutes. Season with salt and pepper. Add the wine and simmer until reduced by half, about 3 minutes. Add the tomatoes with their juice, using a wooden spoon to break the tomatoes into smaller pieces.
  • Stir in the broth, sugar, oregano and rosemary. Return the chicken pieces to the pot and turn to coat in the sauce. Bring the sauce to a simmer. Continue simmering over medium-low heat until the chicken is just cooked through, about 30 minutes for breast pieces (or about 20 minutes if using thighs).
  • Use tongs to transfer the chicken pieces to a serving platter. Increase the heat and bring the sauce to a boil. Boil the sauce until it thickens slightly, about 5-7 minutes. Spoon the sauce over the chicken, garnish with fresh basil, and serve!

2 tablespoons olive oil, or to taste
7 ounces fresh mushrooms, quartered
1 medium red onion, sliced
1 clove garlic, minced
3 fluid ounces sherry wine
1 ounce capers
1 teaspoon dried oregano
1 teaspoon dried basil
3 cups marinara sauce
2 pounds shredded cooked chicken breast
8 (6 inch) hoagie rolls, split lengthwise
8 slices provolone cheese
¼ cup sliced black olives, or to taste

Steps:

  • Heat olive oil in a large skillet over medium heat. Add mushrooms, onion, and garlic; sauté until onions are translucent, about 5 minutes.
  • Add sherry, capers, oregano, and basil; cook until 1/2 of the sherry has cooked out. Add marinara sauce. Stir in chicken and cook until sauce has reduced by a third, 5 to 7 minutes.
  • While the sauce is reducing, set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Place split hoagie rolls on a baking sheet and top each with a slice of provolone cheese.
  • Broil until cheese is melted and rolls are toasted, 1 to 2 minutes.
  • Fill each toasted bun with chicken mixture and top with sliced olives.

1/4 cup all-purpose flour
4 bone-in chicken breast halves (8 ounces each)
2 tablespoons olive oil
1/4 pound sliced fresh mushrooms
1 medium onion, thinly sliced
1 garlic clove, minced
1 can (14-1/2 ounces) diced tomatoes, undrained
3/4 cup frozen pearl onions, thawed
1/2 cup chicken broth
3 tablespoons tomato paste
1/2 teaspoon dried basil
1/4 teaspoon salt
1/4 teaspoon dried oregano
1/4 teaspoon dried thyme
1/8 teaspoon pepper
1 bay leaf
1/2 cup whole pitted ripe olives
Hot cooked pasta

Steps:

  • Place flour in a large resealable plastic bag; add chicken and shake to coat. In a large skillet, brown chicken in oil on both sides. Remove chicken to a greased 13-in. x 9-in. baking dish. , In the same skillet, saute the mushrooms, onion and garlic until tender. Add the tomatoes, pearl onions, broth, tomato paste and seasonings. Bring to a boil; pour over chicken. , Cover and bake at 350° for 45-50 minutes or until chicken juices run clear. Add olives; bake 15 minutes longer. Discard bay leaf. Serve with pasta.

Chicken alla cacciatore (meaning "in the hunter's style") is one of the first recipes I made in college. It's an easy, one-pot weeknight meal and a great way to use up leftover tomatoes.

12 ounces chicken breasts, skinless and boneless
Kosher salt
Freshly ground black pepper
2 tablespoons olive oil, plus more as needed
1/2 large onion, diced
2 cloves garlic, minced
1 splash white wine
1 sprig thyme
1 bay leaf
3 cups chopped tomatoes, about 3 medium tomatoes
1/4 cup Kalamata olives, pitted
1 sprig oregano

Steps:

  • The chicken: Heat a dry skillet on high for 1 minute, then add the oil. Season chicken with salt and pepper on both sides and add to the pan. Brown chicken, about 2-3 minutes per side, reducing heat to medium after 1 minute. Remove and pour out any dark oil.
  • The sauce: To the same skillet, add more oil and sweat the onions, 3-5 minutes (add more olive oil as needed). Add garlic, thyme, and bay leaf, followed by white wine. Reduce white wine until almost dry, then add tomatoes, season with salt and pepper, and toss. Add the chicken back to the pan, along with the olives. Cook 10 minutes, occasionally moving the sauce around until it thickens. Season to taste with salt and pepper.
  • Assembly: Spoon the sauce onto a serving platter. Remove the bay leaf and thyme. Add fresh oregano followed by chicken.

3 (8 ounce) bone-in chicken legs with skin
⅔ cup all-purpose flour
¼ cup olive oil
1 medium green bell pepper, cut into 2-inch pieces
½ small onion, sliced
4 cloves garlic, sliced, or more to taste
½ teaspoon dried oregano
¼ teaspoon red pepper flakes
¼ teaspoon salt
¼ teaspoon ground black pepper
1 (32 ounce) jar roasted red pepper and garlic tomato sauce
1 ½ cups water, or as needed

Steps:

  • Dip chicken pieces in flour and shake off excess.
  • Heat oil in a 10-inch skillet over medium-high heat. Add chicken and brown well, 4 to 5 minutes per side. Remove chicken from the pan and set aside. Drain most of the oil from the skillet, leaving about 1/8 inch.
  • Add bell pepper, onion, garlic, oregano, pepper flakes, salt, and pepper to the skillet. Sauté, stirring constantly, for 2 minutes. Pour in spaghetti sauce and add enough water to thin mixture just a little; sauce will thicken as it cooks. Stir well and add chicken to the sauce. Spoon sauce over chicken to coat and bring to a simmer.
  • Cover, lower heat, and cook, turning chicken and scraping the bottom of the pan often, until chicken is no longer pink at the bone and the juices run clear, about 40 minutes.
