BREAD MACHINE MIX FOR WHITE BREAD (OAMC)
This is from the Gold Medal company. It's a convenience for those who need a steady supply of white bread. Yield is six 1 1/2 lb. loaves or 4 2 lb. loaves.

Steps:
- Stir together all ingredients in a large bowl.
- Store in a tightly covered container in a cool place.
- To make a 1 1/2 lb loaf: Use 3 cups mix, 1 1/4 cup water, 2 tbl. softened butter and 1 1/4 teaspoons bread machine yeast.
- To make a 2 lb. loaf: Use 4 1/3 cups mix, 1 1/3 cup water, 2 tbl. softened butter and 1 1/2 teaspoons bread machine yeast.
- Whichever one you are making, place the ingredients in your machine in the order recommended by the manufacturer.
- Select a Basic or White Bread cycle, with a medium or light crust.
- When done, remove from machine and cool on rack.

Steps:
- Combine ingredients thoroughly and store in air tight container in cool place.
- Use within 6 to 8 months.
- To make 1 1/2 lb. loaf of Basic White Bread:.
- Put into your bread machine in order:.
- 1 cup warm water.
- 1 egg** beaten, room temperature.
- 2 T. butter or cooking oil.
- 3 1/2 cups bread mix, room temperature.
- 2 1/4 t. active dry yeast.
- Bake on white cycle.
- *Any combination of flours can be used, replacing up to half of the flour, (10 cups) with a whole grain flour. For EACH CUP of whole grain flour used, add 1 tablespoon of vital wheat gluten to the mix.
- **Substitute powdered egg for a fresh egg if you are going to be baking the bread on a timer.
- Mix may be used to make pizza dough, calzones, cinnamon rolls or dinner rolls. Remove dough at the end of first kneading cycle and finish by hand.
- Time is for mix only.

- Mix all ingredients in extra-large bowl until well blended.
- Store tightly covered in bulk, or measure into quantities for 1 1/2- pound or 2-pound loaf recipes (below). Package in fancy jars or bags along with the bread recipe for gift giving.
- To Make 1 1/2-Pound Loaf: Measure 1 cup plus 2 tablespoons water, 2 tablespoons butter or margarine, softened, 3 1/2 cups Homemade Wheat Bread Machine Mix and 1 1/2 teaspoons bread machine or quick active dry yeast into bread machine pan in the order recommended by the manufacturer. Select Basic/White or Whole Wheat cycle and Medium or Light crust color. Remove baked bread from pan, and cool on wire rack.
- To Make 2-Pound Loaf: Measure 1 1/2 cups water, 3 tablespoons butter or margarine, softened, 4 1/2 cups Homemade Wheat Bread Machine Mix and 1 1/4 teaspoons bread machine or quick active dry yeast into bread machine pan in the order recommended by the manufacturer. Select Basic/White or Whole Wheat cycle and Medium or Light crust color. Remove baked bread from pan, and cool on wire rack. Makes eight 2-pound loaves (16 slices each).

12 GRAIN BREAD (BREAD MACHINE)
Using 12 grain flour from Bulk Barn and a recipe that is a variation of the one they provide. (Bulk Barn is a Canadian food retailer specializing in bulk foods.) The list of grains, in the order on the label, is hard whole wheat flour, whole spelt flour, kamul flour, granola oats, ground brown flax seeds, quinoa seed, amaranth seed, barley flour, whole rye flour, dark buckwheat flour, hulled sunflower seeds and millet seeds. If you have a 1½ lb loaf bread machine, reduce the yield below from 2.0 lbs to 1.5 lbs to get the right quantities for your machine. I use a Black & Decker bread machine with a 1½ lb loaf pan. If you want a "lighter" bread, reduce the 12-grain flour by ½ cup and increase the white flour by ½ cup. If you want a "sweeter" tasting bread, replace the brown sugar with honey. (Note: I had to use whole wheat flour in the ingredients to get approximate nutrition values. Note to those who live in the U.S.A.: replace the white flour with bread flour.)
