½ cup low-sodium canned chicken broth
2 tablespoons coarse-grain mustard
2 tablespoons heavy cream

Steps:

  • Combine broth and mustard in a measuring cup. Pour contents of the measuring cup into a heated skillet; boil until liquid is reduced by about half. Tilt skillet so that the liquid is at one side of the pan, then whisk in cream until sauce is smooth. Spoon sauce over cooked steaks and serve immediately.

Pan-Fried Prosciutto-Wrapped Scallops with White Wine Pan Sauce image

1/2 teaspoon granulated garlic
1/2 teaspoon paprika
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
Pinch cayenne
12 large sea scallops
12 thin slices prosciutto
1 tablespoon canola oil
4 tablespoons unsalted butter
1/4 cup dry white wine
1 tablespoon chopped fresh chives
1 tablespoon chopped fresh flat-leaf parsley
Kosher salt and freshly ground black pepper
1 lemon, halved

Steps:

  • Preheat the oven to 350 degrees F.
  • For the dry rub: Mix together the garlic, paprika, salt, pepper and cayenne in a small bowl.
  • For the scallops: Trim the side muscle from the scallops, if not done already. Pat the scallops dry and sprinkle them on both sides with the dry rub. Wrap the scallops with the prosciutto so that only the top is showing. To do this, spread out a slice of prosciutto; set a scallop on its edge and roll it up in the prosciutto, tucking prosciutto under one side as you go and leaving the other side exposed.
  • Heat a large skillet over medium-high heat. Add the canola oil and 1 tablespoon of the butter and sear the scallops on the prosciutto side for 1 to 2 minutes without disturbing, to ensure a good crust. Flip the scallops and cook on the scallop side for 3 to 4 minutes, or until opaque. Add the remaining 3 tablespoons butter to the pan and baste the scallops with the melted butter. Transfer the cooked scallops to a platter. Deglaze the pan with the white wine, whisking vigorously to emulsify; stir in the chives and parsley, and season with salt and pepper. Spoon some of the pan sauce over the scallops; serve any extra sauce on the side. Add a squeeze of lemon juice and serve.

1-1/4 cups water
6 beef cube steaks (1/3 pound each)
2 cups all-purpose flour
1/2 teaspoon salt
1/8 teaspoon pepper
Oil for frying

Steps:

  • In a large resealable bag, combine mustard and water; add steaks. Seal bag and turn to coat; let stand for 10 minutes. Drain steaks, discarding marinade. , In a shallow bowl, combine the flour, salt and pepper. Dip steaks in flour mixture. In an electric skillet, heat 1/4 in. oil to 375°. , Fry steaks, in batches, until crisp and lightly browned, 3-4 minutes on each side.

1 lb tender cut steak, cut into roughly 2-inch cubes to make 12 pieces
fresh ground black pepper
1/4 lb prosciutto
1 tablespoon olive oil
1 tablespoon butter
1 small shallot, diced
1/2 cup chicken stock
1 tablespoon coarse grain mustard
2 tablespoons heavy cream
2 tablespoons freshly chopped fresh parsley leaves

Steps:

  • Sprinkle beef on all sides with black pepper.
  • Wrap beef cubes with enough prosciutto to cover entirely. Be sure that prosciutto doesn't overlap more than once.
  • Place wrapped cubes seam side down on a plate.
  • In a large skillet over medium heat, add oil and butter.
  • When butter has melted add beef cubes, seam-side down to seal, then saute until crisp on all sides, about 8 to 10 minutes for medium rare.
  • Remove beef and let rest 5 minutes before serving.
  • Add shallots to pan and saute 1 minute to soften.
  • Add chicken stock and scrape up brown bits stuck to the bottom of the pan with a wooden spoon.
  • Whisk in mustard and heavy cream and cook 1 minute more to thicken sauce.
  • Remove from heat.
  • Season, to taste, with salt and pepper and garnish with parsley.
