MINI-BURGER POTATO BITES

- Bake waffle fries according to package directions. In a large skillet, cook onions in butter and oil over medium heat for 10 minutes. Add the sugar, salt and pepper; cook 3-5 minutes longer or until onions are golden brown, stirring frequently., Meanwhile, in a large bowl, combine beef and steak seasoning. Shape into 16 patties. Cook in a large skillet until a thermometer reads 160° and juices run clear, turning once., For sauce, in a double boiler or metal bowl over simmering water, constantly whisk the egg yolks, lemon juice and water until mixture reaches 160° or is thick enough to coat the back of a metal spoon. Reduce heat to low. Slowly drizzle in warm melted butter, whisking constantly., Top each waffle fry with a burger and cheese. Broil 4-5 in. from the heat for 1-2 minutes or until cheese is melted. Top with onions and sauce.

BACON CHEESEBURGER BITES

- Heat a skillet with a lid over medium heat. Add the bacon and cook, turning occasionally, until crisp, about 12 minutes.
- Meanwhile, mix together the ground beef, salt and pepper, Worcestershire sauce and garlic in a small bowl until well combined. Divide the mixture into 6 equal mini patties. Set aside.
- Remove the bacon from the skillet and set aside. Add the burger bites and cook until well browned all over and cooked through, 4 to 5 minutes per side. Add 2 of the quartered pieces of cheese to the top of each bite and cover the skillet with the lid. Allow the cheese to melt, 1 minute. Remove the bites to a plate.
- Tear each bacon piece into bite-size pieces. Start building up the bites by placing a piece of bacon on top of each patty, then a couple of folded leaves of spinach, a couple of pickles, a dollop of your favorite burger condiment, and a half a tomato, securing it all with a toothpick or small skewer. Repeat with the remaining ingredients until all the bites are built, and serve.

I found this recipe in Better Homes & Gardens, and the picture of these little snacks was so cute! Little bitty burgers with melted cheese and cherry tomato slices perched on thick-cut potato chips. All my people will love these.

- Preheat oven to 400 degrees F. Line a baking sheet with foil. Evenly space potatoes on baking sheet. Bake potatoes for 18 to 20 minutes or until crisp and lightly browned. Remove from oven. Adjust oven racks and preheat broiler.
- Meanwhile, in a medium bowl combine meat and seasoning. Form into sixteen 1-ounce mini burgers (about 2 tablespoons). In a 12-inch skillet cook burgers, uncovered, over medium-high heat for 5 minutes or until temperature registers 160 degrees F on an instant-read thermometer, turning burgers once halfway through cooking. Drain fat.
- Top each potato with a burger, cheese quarter, and tomato slice. Broil 4 to 5 inches from heat for 1 to 2 minutes or until cheese is melted and tomato begins to brown. Serve with mustard, ketchup, sour cream, and/or pickles.

- Preheat oven to 350 degrees F (175 degrees C). Line a medium baking sheet with aluminum foil.
- In a medium skillet over medium high heat, stir together ground beef, dry onion soup mix and dry minced onion. Cook until beef is evenly brown. Remove from heat, drain and stir in mayonnaise and Cheddar cheese.
- Slice tops off the dinner rolls. Arrange the rolls on the baking sheet. Spoon some of the ground beef mixture onto each roll. Garnish with pickle slices. Place tops back on rolls.
- Tightly wrap the baking sheet with aluminum foil. Bake in the preheated oven 20 minutes.
