  • Saute 2 tablespoons minced ginger in a saucepan with butter. Add 1 cup rinsed basmati rice, 1 cup coconut milk, 1 cup water and a pinch of salt. Bring to a boil, then reduce heat; cover and simmer until the liquid is absorbed, 15 minutes. Let stand 10 minutes off the heat; fluff with a fork. Garnish with cilantro and cashews.

3 cups uncooked jasmine rice, rinsed and drained
2 cups coconut milk
1 ½ cups water
1 tablespoon grated onion, or to taste
1 pinch white sugar
1 pinch salt

Steps:

  • Heat coconut milk, water, onion, sugar, and salt in a saucepan. Pour in rinsed and drained rice. Bring to a boil. Reduce heat, cover, and let simmer, stirring occasionally, until fragrant, tender, and liquid has been absorbed, 20 to 25 minutes.

2 teaspoons unsalted butter
2 teaspoons minced fresh ginger
1 clove garlic, minced
1 (3 inch) cinnamon stick
1 cup uncooked jasmine rice
¾ cup water
¾ cup light coconut milk
1 teaspoon white sugar
½ teaspoon kosher salt
¼ teaspoon grated lime zest
⅛ teaspoon ground white pepper
¼ cup shredded unsweetened coconut, toasted

Steps:

  • Melt butter in saucepan over medium heat. Add ginger, garlic, and cinnamon stick, and sauté until fragrant, about 1 minute. Stir in rice, and sauté until rice grains are opaque, about 2 minutes. Add water, coconut milk, sugar, salt, lime zest, and white pepper and bring to a simmer. Stir once, cover, reduce heat to low, and simmer for 15 minutes.
  • Fluff rice with a fork, cover, and let rest for 5 minutes. Garnish with toasted coconut, if using.

This sounds simple but is elegant and fun. If you like curry, you will like this. The recipe came from a missionary's daughter who grew up in Burma. When she grew up and came home to the United States she fashioned the ingredients to fit what was available to her. In Burma the people would eat mostly rice and if they had anything to go with the rice they were fortunate. She said that this is like a banquet meal for them. You will have most everything on hand for this meal. It is delicious. The flavors blend wonderfully well. Have some people in for dinner they will have fun preparing their plate.

2 -3 onions, diced coarse
2 tablespoons butter
2 -3 teaspoons curry powder
1 lb hamburger
1 (15 ounce) can mixed vegetables (I use Veg All)
1 (15 ounce) can diced tomatoes
salt
1 cup raw rice, cooked
1/3 head lettuce
1 large tomatoes, diced
1/2 medium cucumber, diced
2 cups potato chips
1/2 cup salted peanuts
1/2 cup flaked coconut
lemon juice
1/2 banana, for each serving

Steps:

  • Dice the onions and fry gently in butter for a couple of minutes.
  • Add the curry power and simmer till onions are almost done.
  • Add 1 pound hamburg and cook till done.
  • Add the can of mixed veggies and the tomatoes and simmer for 1/2 hour over low heat (if you need to, add a little water).
  • Salt to taste.
  • NOTE: If more curry is needed, mix it with a little water before adding to mixture.
  • Cook the rice.
  • Make a small salad using the lettuce, tomato, and cucumber-- (the amounts are general--use what you need for the amount of people you have eating).
  • Put everything in separate bowls and line them up on a buffet.
  • When ready to eat, build on your plate as follows--cooked rice, curry mixture, salad, crushed potato chips, peanuts, shredded coconut, lay 1/2 banana sliced lengthwise on the plate on either side of the mound, and squeeze lemon juice over all.
  • Enjoy!
