This is a very moist and delicious burrito casserole. Kids love it and you can add all your favorite burrito toppings like sour cream, extra cheese, lettuce, tomatoes, black olives...The sky's the limit to satisfy your Tex-Mex taste buds! Enjoy!

- Preheat the oven to 350 degrees F (175 degrees C). Coat a casserole dish with cooking spray.
- Heat olive oil in a large skillet over medium heat. Add onion and cook until translucent, 3 to 5 minutes. Add beef and increase heat to medium-high. Cook and stir until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
- Combine refried beans and burrito seasoning in a bowl and mix well. Add mixture to the beef in the skillet and stir well.
- Mix cream of mushroom soup and sour cream together in a bowl.
- Place a layer of chips into the prepared casserole dish to just cover the bottom. Follow by 1/2 the meat mixture, 1/2 the soup mixture, 1 cup shredded Mexican cheese blend, and 1/2 the salsa. Repeat layers and top with remaining cheese.
- Bake in the preheated oven, uncovered, until hot and bubbly, 20 to 30 minutes.

- Preheat oven to 350 degrees. Grease a 9 x 13 pan. In large bowl add shredded chicken, 1 1/2 cup cheese, chili powder, black beans and fire roasted tomatoes (save 1/4 cup of tomatoes). Mix well and if mixture looks dry, add juice from the tomatoes to moisten, but not too much. Option: you can add 1/2 cup cooked rice In a sauce pan melt butter, stir in flour and cook 1 minute. Slowly add broth and whisk till smooth. Heat over medium heat till thick and bubbly. Remove from heat and stir in sour cream and chilies. Melt 1 cup of cheese in sauce. Place chicken mixture onto tortilla and roll up like a burrito. (maybe about 1/2 to 3/4 cup of mixture to each burrito). Place seam side down into prepared pan. Pour sauce over burritos and along sides of each to cover. Top with about 1 cup cheese and remaining tomatoes. Bake 30 minutes uncovered.Let sit 5 minutes upon removing from oven to settle. Option: If you don't want chicken use beef, seafood or whatever meat you wish.
BEEFY LAYERED BURRITO CASSEROLE
This casserole is very hearty and flavorful. I serve it with a dallop of sour cream on top. Great to make ahead and bake later.

- Preheat oven to 350.
- In a large skillet, brown ground beef with onion; drain. Return beef & onions to hot skillet off of heat and stir in rice, undiluted soup and taco seasoning. Mix together well.
- Lightly spray a lasagna pan/ 13" x 9" pan with nonstick cooking spray.
- Line bottom of pan with 4 of the tortillas.
- Evenly cover tortillas with half of the meat/rice mixture, then 1/2 of the salsa, then sprinkle with half of the corn, half of the black beans and 1 cup of cheese.
- Cover again with 4 more of the tortillas and repeat these layers again.
- Finally, top with the last 4 remaining tortillas. Pour entire can of enchilada sauce over top. Sprinkle with remaining 2 cups cheese and cilantro.
- Bake at 350 for about 25 minutes.
- Serve with a dallop of sour cream, if desired.

- Preheat oven to 350°. In a large skillet, cook and crumble beef over medium heat until no longer pink; drain. Add beans, onion and taco seasoning. , Unroll crescent roll dough. Press onto bottom and up the sides of a greased 13x9-in. baking dish; seal seams and perforations. , Spread beef mixture over crust; sprinkle with cheeses. - In a skillet, saute onions and garlic in butter until tender. Stir in chicken, chili powder, 1/4 cup broth and 3/4 cup of picante sauce. Heat through; set aside. , In a medium saucepan, bring rice and remaining broth to a boil. Reduce heat; cover and simmer 20 minutes. - In a saucepan bring water to a boil. Add rice and stir. Reduce heat, cover, and simmer for 20 minutes.
- Preheat oven to 375 degrees F (190 degrees C).
- Place soy crumbles, tomatoes, reserved tomato juice, chili powder, cumin, and taco seasoning in a medium frying pan over medium high heat. Cook and stir, breaking up tomatoes, for 10 minutes.

BURRITO RICE CASSEROLE
I came up with this one night while cooking rice, beans and burritos seperately for a Mexican dinner. I put them all together and baked it up, and my family loved it. My Boy Scout Troop loves it too. I use a Dutch oven to prepare it in the field. This feeds alot. My photo showes the dish cooked up in a Dutch Oven before I have melted the cheese.

- Rice: Prepare rice according to package directions, add tomato sauce and chopped smoked sausage. If needed, add spices to pep it up a bit. When cooked, spread in baking pan
- Burritos: Brown onion in a small amount of oil, then add meat and cook until no longer pink and drain. Add refried beans, tomato sauce and spices to your taste preferences (I like it kind of spicey). You can use a package of taco seasoning if desired. Should be thick, not soupy.
- Divide meat/bean mixture into 10 equal portions and place 1 portion on each of the 10 burrito skins. Spread meat mixture across burrito and add some of the cheese if desired. Roll up and place seam side down on top of rice.
- When all of the burritos are in the pan, pour the red sauce over all of the burritos and use a spoon to spread the sauce all over to coat the burrito skins so they are all covered. This keeps the burrito skins from getting hard.
- Cover pan with foil and bake at 350 degrees for 30-45 minutes or until heated through. Remove from oven, remove foil and sprinkle with remaining cheese and return to oven to melt cheese... Serve with sour cream and taco sauce if desired.
