CINNAMON PECAN ROLLS
I adopted this from the recipezaar account. I HAVE made this recipe, though! They are absolutely delicious! Give this one a try!

Steps:
- In a small saucepan, scald the milk.
- Pour hot milk over the granulated sugar, salt and 1/2 cup of butter.
- Cool to lukewarm.
- In the bowl of an electric mixer, dissolve yeast in warm water.
- Let sit for 5 minutes until yeast is bubbly.
- Add milk mixture to yeast and stir to mix.
- With a whisk, beat in eggs.
- Fit your mixer with a dough hook, add flour 1 cup at a time, mixing until smooth.
- Add enough flour to make a soft dough.
- Knead, adding small amounts of flour as necessary until the dough is smooth and elastic but not sticky.
- Place dough in a greased bowl, cover and let rise until doubled, about 45 minutes.
- Punch down.
- Preheat your oven to 350 degrees and line 2 baking sheets with parchment.
- Roll dough into a rectangle about 15x22 inches.
- In a small bowl mix together the melted butter and brown sugar, Using a spatula, spread this over the dough up to 1/2 inch from the edges.
- Sprinkle cinnamon evenly over the sugar and butter.
- Top with a layer of nuts.
- Roll dough up lenghthwise to make a log and pinch edge to seal.
- Slice dough evenly into 12 pieces.
- Place each piece cut side down on baking sheets 1 inch apart and let rise, covered with parchment or plastic for 15 minutes.
- Bake rolls until lightly browned on top- about 30 minutes.
- Remove from oven To prepare icing, beat 4 tablespoons of butter with the powdered sugar and lemon juice until fluffy.
- Using a spatula, smear the icing on top of the warm rolls.
PECAN BUTTER BALLS
These are melt in your mouth goodies.

- Sift together into a medium sized bowl the flour, sugar and vanilla. Work in the margarine with a spoon or hands until well blended. Add chopped pecans and mix well.
- Shape dough into 1 inch balls and put on ungreased pans. Bake in a preheated 325 degree F (165 degrees C) oven for about 25 minutes or until pale brown. When slightly cool roll or shake in confectioners' sugar. Store in an air tight container.

MELT-IN-YOUR-MOUTH PECAN ROLLS

- In a small bowl, combine brown sugar, butter and corn syrup. Spread in two greased 8-in. square baking pans; set aside. Unroll each tube of crescent roll dough into a rectangle; seal seams and perforations. Combine pecans, sugar and cinnamon; sprinkle over dough. Roll up, jelly-roll style, starting with a long side; seal edge. Cut each roll into 16 slices. Place cut side down in prepared pans. Bake at 375° for 13-17 minutes or until golden brown. Cool in pans for 1 minute before inverting onto serving plates.

BUTTER PECAN ROUNDS
An easy drop cookie, and one of my husband's favorites. Use real butter in the recipe.

- Preheat oven to 375 degrees F (190 degrees C). Line baking sheets with parchment paper.
- In a skillet over medium heat toast the pecans with 2 tablespoons of the butter, cooking for about 5 minutes. Sprinkle 1 1/2 tablespoons of the white sugar over the top.
- Cream 1/2 cup of the butter with the white and brown sugar. Beat in the egg and vanilla. Mix in the flour, baking soda and salt. Stir in the pecan mixture.
- Drop tablespoonfuls of dough onto the prepared baking sheets. Bake at 375 degrees F (190 degrees C) for 10 to 12 minutes until golden brown. Let cool and devour.

- Let eggs stand at room temperature for 30 minutes. Line a greased 15x10x1-in. baking pan with waxed paper; grease and flour paper and set aside., In a large bowl, beat egg yolks and confectioners' sugar until thick and lemon-colored, about 5 minutes. In another bowl, beat whites until soft peaks form; fold into yolk mixture. Fold in pecans until well blended (batter will be thin). , Spread batter into prepared pan. Bake at 375° for 10-15 minutes or until cake springs back when lightly touched. Cool in pan for 5 minutes. Turn onto a linen towel dusted with confectioners' sugar. Gently peel off waxed paper. Roll cake up in towel, starting with short end. Cool completely on wire rack. , Meanwhile, beat the cream, sugar, cocoa and vanilla in a bowl until soft peaks form. Carefully unroll cake. Spread filling over cake to within 1/2 in. of edges. Roll up again. Cover and refrigerate for 1 hour before serving. If desired, garnish with chocolate shavings and confectioners' sugar. CARAMEL-PECAN STICKY ROLLS

- In large bowl, mix 2 cups of the flour, 1/3 cup granulated sugar, the salt and yeast. Add warm milk, 1/4 cup butter and egg. Beat with electric mixer on low speed 1 minute, scraping bowl frequently. Beat on medium speed 1 minute, scraping bowl frequently. Stir in enough remaining flour, 1/2 cup at a time, to make dough easy to handle.
- Place dough on lightly floured surface. Knead about 5 minutes or until dough is smooth and springy. Grease large bowl with shortening. Place dough in bowl, turning dough to grease all sides. Cover bowl loosely with plastic wrap; let rise in warm place about 1 hour 30 minutes or until dough has doubled in size. Dough is ready if indentation remains when touched.
- In 2-quart saucepan, heat brown sugar and 1/2 cup butter to boiling, stirring constantly; remove from heat. Stir in corn syrup. Pour into 13x9-inch pan. Sprinkle with pecan halves.
- In small bowl, mix all filling ingredients except 2 tablespoons butter; set aside.
- Gently push fist into dough to deflate. Flatten dough with hands or rolling pin into 15x10-inch rectangle on lightly floured surface. Spread with 2 tablespoons butter; sprinkle with filling. Roll rectangle up tightly, beginning at 15-inch side. Pinch edge of dough into roll to seal. With fingers, shape until even. With dental floss or a serrated knife, cut roll into 15 (1 -inch) slices.
- Place slices slightly apart in pan. Cover loosely with plastic wrap; let rise in warm place about 30 minutes or until dough has doubled in size.
- Heat oven to 350°F. Bake 30 to 35 minutes or until golden brown. Let stand 2 to 3 minutes. Place heatproof tray or serving plate upside down onto pan; immediately turn tray and pan over. Let pan remain 1 minute so caramel can drizzle over rolls; remove pan. Serve warm.

BUTTER PECAN ROLL-UP COOKIES
These make a really crisp, yummy cookie. I just learned about these this year from a friend who used to make them in Minnesota. You'll love to add them to your special cookies to make at Christmas time.

- Cream softened butter and brown sugar together well.
- Add next five ingredients and blend well.
- Drop onto greased cookie sheet 2-3 inches apart.
- (I recommend doing only six at a time even though it slows down the process.) Bake at 350F for 7 minutes.
- Remove from oven and allow to cool a few seconds.
- With spatula remove one at a time, flip over then roll.
- (It's handy to have a cup of cold water close by as these are still pretty hot. If you let them sit too long they will harden and you won't be able to roll them.).

OVERNIGHT PECAN ROLLS

- In small bowl, mix all filling ingredients except 2 tablespoons butter until crumbly. Punch down dough. On floured surface, pat or roll into 15x10-inch rectangle. Spread with 2 tablespoons butter; sprinkle with filling. Roll up tightly, beginning at 15-inch side. Pinch edge of dough into roll to seal; stretch and shape to make even. Cut into fifteen 1-inch slices. Place slightly apart in pan.
- Cover unbaked rolls tightly; immediately refrigerate at least 12 hours (to allow for rising) but no longer than 48 hours.
- Heat oven to 350°F. Uncover and bake 30 to 35 minutes or until golden brown. Immediately place heatproof serving plate upside down onto pan; turn plate and pan over. Let pan remain about 1 minute so caramel can drizzle over rolls.

- ROOLS: combine nuts with dry pudding mix. In a non-stick muffin pan, spoon 1 ttbsp. of nut mixture into each cup. Place one frozen dough ball in each cup. In small pot, melt butter. Add demerara sugar, stirring constantly until sugar is melted. Spoon about 1 tbsp. of syrup over each roll. Let rolls rise until double in size. Follow instructions on pkg. for rising and baking. The quick methods works great. Turn baked rools out of pan immediately onto a sheet of foil. Loose pecans can be piled on top. cool slightly. ICING:Cream butter and cream cheese with a flat spatula. Slowly add confectioners sugar. Mix until smooth. Add vanilla and lemon juice. Gradually add milk until desired consistency. Pour or drizzle ozer rolls. Let cool.
