BAREFOOT CONTESSA'S BAKED SHRIMP SCAMPI

- Preheat the oven to 425 degrees F.
- Peel, devein, and butterfly the shrimp, leaving the tails on.
- Place the shrimp in a mixing bowl and toss gently with the olive oil, wine, 2 teaspoons salt, and 1 teaspoon pepper. Allow to sit at room temperature while you make the butter and garlic mixture.
- In a small bowl, mash the softened butter with the garlic, shallots, parsley, rosemary, red pepper flakes, lemon zest, lemon juice, egg yolk, panko, 1/2 teaspoon salt, and 1/4 teaspoon of pepper until combined.
- Starting from the outer edge of a 14-inch oval gratin dish, arrange the shrimp in a single layer cut side down with the tails curling up and towards the center of the dish.
- Pour the remaining marinade over the shrimp.
- Spread the butter mixture evenly over the shrimp.
- Bake for 10 to 12 minutes until hot and bubbly.
- If you like the top browned, place under a broiler for 1 minute.
- Serve with lemon wedges.

SHRIMP SCAMPI - BROILED
It's rare to find a recipe where the shrimp is broiled, rather than sauteed these days. But once you try this broiled you will never go back to the skillet. Use the largest shrimp you can get for best results.

- Preheat broiler. Butterfly shrimp by cutting partially through the back and "flattening". Rinse and dry with paper towels. In a shallow baking dish toss shrimp with the olive oil to coat, season with salt and pepper to taste, then sprinkle the remaining ingredients over the shrimp.
- Make sure shrimp is in a single layer in the baking dish. Broil 5 to 6 minutes, until cooked through and opaque. There should be no need to turn shrimp and the edges will probably be a little browned. Spoon any accumulated pan juices over the shrimp and serve.

- Put the breadcrumbs in a skillet over medium heat with 2 tablespoons of the garlic and 2 tablespoons of the oil. Cook, stirring, until the crumbs are toasted and caramelized, 5 to 8 minutes. Set aside.
- In a saute pan large enough to comfortably fit the shrimp in 1 layer, heat 1 tablespoon of the butter and the remaining 2 tablespoons oil over medium-high heat. Season the shrimp with salt and pepper. Add the shrimp to the pan and cook, without moving the shrimp, until caramelized on one side, about 3 minutes. Flip the shrimp over and cook for another 2 minutes; remove from the pan.
- Return the pan to medium-high heat, add the white wine and remaining 2 tablespoons garlic and cook for 1 minute. Return the shrimp to the pan. Add the Worcestershire, lemon zest and juice and remaining 4 tablespoons butter. Cook, simmering, until the liquid thickens.
- Add the pasta to the pan if using and additional salt if necessary. Transfer to serving bowls and top with the toasted breadcrumbs and parsley. Serve with garlic bread if desired.
SHRIMP SCAMPI
Buttery prawns, garlic and lemon juice! What could be more divine? And it's so easy to put together. Don't forget some crusty bread to sop up the garlic butter sauce.

Steps:
- Pat shrimp dry with paper towels (I like to butterfly them). Set aside.
- Melt butter in wide frying pan.
- Stir in green onion, olive oil, garlic, lemon juice and salt. Cook until bubbly.
- Add shrimp to pan and cook, stirring frequently until shrimp are cooked (about 4 minutes - depending upon the size of the shrimp).
- Stir in parsley, lemon peel, and hot sauce.
- Good served with rice pilaf, green salad and French bread. If you are a real big "bread dipper", you can always double the "sauce" portion of this recipe.
