1 cup all-purpose flour
1 cup quick-cooking oats
3 tablespoons packed light-brown sugar
1 1/2 teaspoons baking powder
1 teaspoon baking soda
3/4 teaspoon coarse salt
4 large eggs, separated, room temperature
2 cups buttermilk, room temperature
1 stick unsalted butter, melted and cooled
1 teaspoon pure vanilla extract
Vegetable-oil cooking spray
Spicy Maple Butter, for serving
Pure maple syrup, for serving

Steps:

  • Preheat oven to 200 degrees. Heat waffle iron. Whisk together flour, oats, brown sugar, baking powder, baking soda, and salt in a large bowl. In another bowl, whisk together yolks, buttermilk, butter, and vanilla; stir into flour mixture.
  • Beat egg whites in a separate bowl until peaks are stiff but not dry. Fold into batter.
  • Coat waffle iron with cooking spray. Pour in batter, spreading almost to edges. Close lid; cook until waffles are golden, 3 to 5 minutes (or as indicated on waffle iron). Transfer to a baking sheet; keep warm in oven while cooking remaining batches. Serve warm, with Spicy Maple Butter and syrup.

Steps:

  • Preheat a waffle iron according to manufacturer's instructions. Mix flour, oats, sugar, baking powder, and salt in a large bowl.
  • Beat egg yolks in another bowl, reserving egg whites in a third bowl. Add buttermilk, milk, and melted butter to egg yolks; beat until well mixed. Pour buttermilk mixture into flour mixture; beat until batter is blended.
  • Beat egg whites and vanilla extract in a glass or metal bowl until soft peaks form. Fold half the egg whites into the buttermilk batter until egg whites are incorporated; repeat with remaining half.
  • Ladle batter into preheated waffle iron. Cook until waffles are golden and crisp, about 5 minutes. Transfer waffle to a paper towel-lined plate to prevent sogginess and repeat with remaining batter.

1-1/2 cups quick-cooking oats
1/2 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon sugar

2 tablespoons butter, melted
Peanut butter and/or applesauce, optional

Steps:

4 ounces all-purpose flour

1 teaspoon kosher salt

3 large eggs, beaten
2 ounces unsalted butter, melted and slightly cooled
16 ounces buttermilk at room temperature

Steps:

  • Heat a 10-inch saute pan over medium heat. Add the oats and cook, stirring occasionally, until toasted, about 3 minutes. Cool the oats in the pan for 2 to 3 minutes. Grind the toasted oats in a food processor until the consistency of whole-wheat flour, about 3 minutes.
  • Heat a waffle iron according to manufacturer's directions.
  • Whisk together the toasted oat flour, all-purpose flour, sugar, baking powder, salt, and baking soda in a medium bowl. Whisk the eggs and melted butter together in another bowl, then add the buttermilk. Add the wet ingredients to the dry and stir until combined. Rest the batter for 5 minutes. Ladle the recommended amount of waffle batter into the hot iron. Close the iron top and cook until the waffle is golden on both sides and is easily removed from the iron. Repeat with remaining batter. Serve immediately or keep warm in a preheated 200 degree F oven until ready to serve.

In creating this recipe, we tried out many different methods-folding in egg whites, milk versus buttermilk, a yeasted batter. But at the end of the day, this simple dump-and-stir was our favorite by far. Someone in the test kitchen may have even said this was the best waffle they'd ever eaten! The buttermilk makes this waffle ultra-light while the generous amount of butter makes for a super crispy exterior, leaving the inside custardy and soft. Finally, we kept the sugar to a minimum, making these the perfect foil for sweet toppings like maple syrup, berries or jam.

2 tablespoons granulated sugar
1 3/4 teaspoon baking powder

  • Preheat a waffle iron to medium-high.
  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda and salt.

I found this wonderful recipe for Overnight Oatmeal Waffles on the web site onelovelylife.com, and it became a breakfast favorite since the first time we tried them! This recipe makes 4, 7" round Belgian style waffles. When I make a fresh batch of these hearty waffles my husband and I each eat 1 waffle. The remaining waffles go into the refrigerator, then the next morning I reheat them in the oven on a wire rack at 350 degrees for 11 minutes. So easy . . . so yummy!!
