THE BEST BUTTERMILK WAFFLES RECIPE

The BEST Buttermilk Waffles Recipe image

I've got a few tips and tricks (along with a secret ingredient) that makes these the BEST buttermilk waffles you'll ever eat!

Provided by LifeMadeSimpleTeam

Categories     Breakfast

Time 14m

Number Of Ingredients 10

1 2/3 cup all-purpose flour
2 tbsp cornstarch
1/4 cup granulated sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 1/3 cup buttermilk (room temperature*)
1/2 cup butter (melted)
2 eggs (room temperature (separated) )
1 1/2 tsp vanilla extract

Steps:

  • In a large mixing bowl, whisk together the flour, cornstarch, sugar, baking powder, baking soda and salt, set aside.
  • In a medium mixing bowl, whisk together the buttermilk, butter, egg yolks vanilla extract. Add the wet ingredients to the dry ingredients and gently whisk to combine. Do not overmix!
  • In a separate mixing bowl, beat the egg whites (using a hand mixer) until they form stiff peaks, gently fold into the batter. Allow the batter to rest for a few minutes before using.
  • Lightly spray a waffle iron with non-stick cooking spray, then preheat (My waffle maker makes 4 square waffles, I usually get 8-9 waffles out of one batch). When the waffle maker is ready, add the batter and cook according to the manufacturer's instructions, about 3-4 minutes. Serve immediately!

THE BEST BUTTERMILK WAFFLES

The Best Buttermilk Waffles image

In creating this recipe, we tried out many different methods-folding in egg whites, milk versus buttermilk, a yeasted batter. But at the end of the day, this simple dump-and-stir was our favorite by far. Someone in the test kitchen may have even said this was the best waffle they'd ever eaten! The buttermilk makes this waffle ultra-light while the generous amount of butter makes for a super crispy exterior, leaving the inside custardy and soft. Finally, we kept the sugar to a minimum, making these the perfect foil for sweet toppings like maple syrup, berries or jam.

Categories     main-dish

Time 40m

Yield about 6 waffles

Number Of Ingredients 11

1 3/4 cup all-purpose flour (see Cook's Note)
2 tablespoons granulated sugar
1 3/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon kosher salt
1 3/4 cup well-shaken buttermilk
2 large eggs
2 teaspoons vanilla extract
1 stick unsalted butter, melted and slightly cooled
Nonstick cooking spray
Maple syrup, jam, berries or yogurt, for serving

Steps:

  • Preheat a waffle iron to medium-high.
  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda and salt.
  • In a medium bowl, whisk together the buttermilk, eggs and vanilla. Whisk the buttermilk mixture into the flour mixture until a batter is formed. Whisk in the butter until incorporated, being careful not to overmix the batter.
  • Spray both sides of the preheated waffle iron with nonstick cooking spray. Pour in enough batter to lightly cover the surface of the iron, about 1/3 to 3/4 cup, depending on its size. (Take into consideration that the batter will spread once the lid is closed.) Close the iron and cook until the waffles are a deep golden brown and slightly crisp, about 5 minutes. Repeat with the remaining batter. (If the waffle iron has a well-seasoned or nonstick surface, it may not be necessary to spray it between each batch.)
  • Serve the waffles immediately with butter, syrup, jam, berries or yogurt.

Categories     dessert

Time 50m

Yield 4 servings

Number Of Ingredients 11

3/4 cup all-purpose flour
1/4 cup cornstarch
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 cup whole milk or buttermilk
1/3 cup vegetable oil
1 egg
1 1/2 teaspoons sugar
3/4 teaspoon vanilla extract
Butter and syrup, for serving

Steps:

  • In a medium bowl, combine the flour, cornstarch, baking powder, baking soda, and salt; mix well. Add the milk, vegetable oil, egg, sugar and vanilla and mix well. Let the batter sit for 30 minutes.
  • Preheat a waffle iron. Do not use non-stick spray on the waffle iron; the oil in the batter will allow the waffle to release easily. Follow the directions on your waffle iron to cook the waffles. Serve immediately with butter and syrup.

TENDER AND EASY BUTTERMILK WAFFLES

Tender and Easy Buttermilk Waffles image

An easy waffle recipe that results in a nice crisp outside, and tender middle waffle. I love the results this gives while not having to separate the eggs and take time to whip egg whites! These will also reheat in the toaster for a quick work day breakfast.

BUTTERMILK CORNMEAL WAFFLES

Buttermilk Cornmeal Waffles image

*Update - When I posted this recipe I hadn't tried them yet. Since then I have made them a couple of times. In addition to the posted ingredients I like to add 1/2 cup wheat germ, and 1 T vanilla (1 also add whole eggs instead of just egg whites.) They freeze really well. My Mom gave me this recipe but I'm not sure from where... with all the changes, it's mine now!
