TERIYAKI CABBAGE STEAKS

1/2 cup soy sauce
1/2 cup mirin (or 1/4 cup honey mixed with 1/4 cup water)
1 tablespoon minced or grated fresh ginger
1 teaspoon minced garlic
2 tablespoons chopped scallions
1 small green or white cabbage, cored and cut crosswise into 11/2-inch slices
2 tablespoons neutral oil, like grapeseed or corn
Salt
black pepper
Lemon wedges for serving

Steps:

  • Heat a charcoal or gas grill to moderately high heat, keeping part of the grill cool for indirect grilling, and put the rack about 4 inches from the flame. Combine the soy sauce and mirin in a small saucepan over medium-low heat and cook until the mixture begins to bubble, 2 to 3 minutes. Remove the pan from the heat and add the ginger, garlic, and the scallions.
  • Brush the cabbage slices with the oil and sprinkle with salt and pepper. Put the cabbage on the cool part of the grill and close the grill cover. Cook, checking and turning occasionally, until you can pierce the leaves easily with a sharp knife, 40 to 45 minutes. When the cabbage is tender, brush it liberally with the teriyaki mixture and move it to the hotter part of the grill. Cook, turning once or twice and brushing with more of the sauce, until it's browned, 3 to 5 minutes.
  • Drizzle the cabbage with any remaining teriyaki sauce, and serve hot or warm with lemon wedges.

9 ripe plums (3 roughly chopped)
1 cup teriyaki sauce or marinade, such as SoyVay
1 tablespoon sesame oil
2 teaspoons Dijon mustard
2 teaspoons sriracha
1 1/2 to 2 pounds skirt steak
Kosher salt and fresh ground pepper
Sliced scallions, for garnish

Steps:

  • Preheat a grill or grill pan to medium heat. Puree the 3 chopped plums in a food processor or blender until smooth. Stir together the pureed plums with the teriyaki, sesame oil, Dijon and sriracha in a large bowl. Add the steak to the bowl, tossing to coat in the marinade, and marinate in the fridge for at least 1 hour.
  • Cut the remaining 6 plums in half and remove the pits. Thread 6 halves on a long skewer, skewered from top to bottom. Repeat with another skewer.
  • Remove the steak from the marinade and pat dry.
  • Add the marinade to a medium saucepan over medium-high heat and bring to a boil. Reduce the heat and simmer until the sauce has reduced slightly, about 5 minutes. Salt and pepper each side of the steak and grill over medium heat on each side for 2
  • to 3 minutes. Once grilled on both sides, remove from the heat and let rest for 10 minutes.
  • While the steak rests, put the plum skewers cut-side down on the grill and cook for 2 minutes. Flip and grill the other side for 2 minutes. Brush the plums with the marinade, flip and cook for an additional 1 to 2 minutes.
  • Remove the plums from the skewers onto a platter. Slice the skirt steak against the grain and brush some marinade on it. Serve with scallions on top.

My husband Ryan made me a steak on Mother's Day when I was pregnant, and now it's a tradition! This version is one of our go-tos - I love the sweetness of the teriyaki with the spiciness of the sriracha.

2 teaspoons Dijon mustard

This is my mother's recipe that I thought was delicious, and I am not a cabbage fan! It is very healthy, with lots of vegetables and good fats from olive oil. There is also lots of room for variation.

1 medium head of cabbage
2 large carrots
1 medium zucchini
3 garlic cloves
1 -2 tablespoon extra virgin olive oil (I prefer Bertolli's)
2 tablespoons low-sodium teriyaki sauce
black pepper (to taste)

Steps:

  • Shred cabbage.
  • Peel and slice carrots diagonally into thin, oval slices.
  • Slice zucchini
  • Mince garlic.
  • Heat olive oil in large skillet over medium heat. Sautee the carrots first, then add cabbage, and then zucchini. Add teriyaki sauce and stir fly until the vegetables are sligtly soft but still have some crunch to them (5-10 min). Stir in garlic and let it sit for several minutes so the garlic essence can sink inches Sprinkle with black pepper to taste.

I remember my mother making this dish using ground beef or turkey, but we used veggie burgers. It turned out pretty good if I say so myself. I choose to serve this dish over brown rice to make the meal more filling. You can also use white rice or couscous. The choice is yours. Happy cooking.

1 head cabbage
4 medium carrots, diced
1 ½ cups sliced fresh mushrooms
5 Mexican green onions, diced
1 bulb garlic, diced
2 tablespoons extra-virgin olive oil, divided, or to taste
6 grilled vegetarian burger patties
1 tablespoon reduced-sodium soy sauce
2 teaspoons sesame oil

Steps:

  • Cut cabbage into thick slices. Cut each slice in half. Combine cabbage, carrots, mushrooms, green onions, and garlic in a large container.
  • Heat 2 teaspoons oil in a large skillet over medium heat. Cook burger patties, turning occasionally, until heated through, 8 to 10 minutes. Remove from heat and dice.
  • Heat remaining oil in a large skillet or wok until it shimmers. Add cabbage mixture; cook and stir over medium-high heat until cabbage begins to take on a transparent look, 7 to 8 minutes. Stir in burger pieces. Cook until flavors combine, 7 to 8 minutes more. Stir in soy sauce and sesame oil for an Asian kick.
