Cabbage steaks with apple, goat's cheese & pecans image

Slabs of roasted cabbage make a delicious base for this vegetarian dish, perfect as a light main course or side

Number Of Ingredients 9

1 firm, round cabbage
2 tbsp olive oil
1 tangy, red-skinned apple (we used Jazz)
1 tsp cider vinegar
about 300g goat's cheese (one with a rind from the cheese counter) cut into four thick slices (we used Soignon)
25g pecans , roughly broken
a few thyme sprigs , leaves only
good pinch of cayenne pepper or hot smoked paprika
1 tbsp maple syrup

Steps:

  • Heat oven to 200C/180C fan/gas 6. Cut 4 x 2cm slices from the middle of the cabbage, cutting through the central core and leaving it in. Brush all over with nearly all the oil, season well, and place on a baking tray. Roast for 20 mins, turning carefully using a fish slice or wide spatula halfway through cooking.
  • While you wait, thinly slice the apple, leaving the skin on, then toss in a bowl with the vinegar and what's left of the oil.
  • Layer the apples on top of the cabbage steaks, roast for 5 mins more, then top each steak with a wheel of cheese. Divide the nuts, thyme leaves and cayenne between each mound. Roast for a final 5 mins until the cheese is starting to melt and the pecans are toasted. Drizzle with the maple syrup and eat straight away.

Sunny's Easy Grilled Cabbage

1/2 cup hot pepper jelly
1/2 cup orange juice
2 tablespoons apple cider vinegar
Kosher salt and freshly ground black pepper
2 heads cabbage, each sliced laterally to make two 1 1/2- to 2-inch-thick slices
1/4 cup olive oil
Kosher salt and freshly ground black pepper
3 Gala, Honeycrisp or Fuji apples, cored and small diced
2 Roma tomatoes, seeded and chopped
3 scallions, white and green parts chopped
Juice of 1 lemon
8 to 10 fresh basil leaves

Steps:

  • Make the sauce. Stir together the hot pepper jelly, orange juice, vinegar, a pinch of salt and a few grinds of pepper in a bowl or liquid measure. Stir and set aside.
  • Grill the cabbage. Preheat the grill to 350 degrees F.
  • Brush both sides of the cabbage with olive oil and sprinkle with salt and pepper. Place the slices over the direct heat of the grill and cook until the bottom is slightly charred, about 5 minutes. Flip the cabbage and brush with the pepper jelly sauce. Cook for another 4 to 5 minutes and remove to serving plates.
  • Top with the salad. Combine the apples, tomatoes, scallions, lemon juice and a drizzle of the sauce in a medium bowl (make it as saucy as you like). Toss to coat and place an equal amount of the salad on the center of each grilled cabbage slice. Top with a few basil leaves. Eat it!

2 medium apples, chopped
1/2 cup raisins
1/2 cup green grapes, halved
2 tablespoons olive oil
4-1/2 teaspoons balsamic vinegar
1 tablespoon honey
1-1/2 teaspoons lemon juice
1 garlic clove, minced
3 tablespoons chopped walnuts, toasted
2 tablespoons crumbled goat cheese

Steps:

  • In a large bowl, combine the greens, apples, raisins and grapes. In a small bowl, whisk the oil, vinegar, honey, lemon juice and garlic. Pour over salad and toss to coat. Sprinkle with walnuts and goat cheese.

One of my favorite side dishes, as it's very easy to make! I personally love garlic so I go crazy with it, but put as much as is good for you. This is a very simple recipe and you can put as much or as little of the seasonings you want.

1 head cabbage
2 tablespoons light olive oil
2 tablespoons minced garlic
½ teaspoon salt, or to taste
½ teaspoon ground black pepper, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cut the bottom off of the cabbage and set it so that the flat end is on the cutting board; cut into 1-inch thick slices. Arrange slices in a single layer in a large casserole dish.
  • Drizzle olive oil over the cabbage slices and top with garlic. Season cabbage with salt and pepper. Cover the dish with aluminum foil.
  • Bake in preheated oven until the cabbage core is easily pierced with a fork, about 45 minutes.
