CAESAR SALAD WITH HOMEMADE DRESSING

- Preheat the oven to 375 degrees F.
- For the Caesar dressing: Beat the egg yolks in a large mixing bowl. Add the lemon juice, Worcestershire sauce, anchovy and garlic and whisk to combine. Slowly drizzle in the olive oil until the mixture emulsifies. Season with salt and pepper. Cover and refrigerate until ready for use.
- For the croutons: Cut the baguette on an angle to create thin, oval slices about 1/4-inch thick. On a large baking sheet, arrange the slices evenly. Brush the bread with olive oil and top with the Parmesan and thyme. Season with salt and pepper. Bake until the Parmesan is melted and the croutons are golden brown around the edges, 5 to 7 minutes. Remove from the oven and allow to cool. Store in an airtight container if not using immediately.
- For the salad: Core the romaine and trim the top 1/2 inch off the leaves. Fan the leaves out on a serving plate (or chop into 1/2-inch pieces if you prefer). Sprinkle the Parmesan over the lettuce and drizzle the dressing on top. Top with 2 to 3 croutons per plate and serve.

- In a large wooden bowl, using a wooden spoon, mash chopped garlic cloves to a fine paste with salt.
- Stir in egg yolks and Dijon mustard.
- Add anchovies, and grind to a paste.
- Add lemon juice, Worcestershire, hot sauce and season with pepper.
- Slowly whisk in olive/canola oil until dressing is creamy.
- Add lettuce to bowl, and toss to coat leaves thoroughly with dressing and grated Parmesan.
- Sprinkle croutons over salad.
JOHN G'S CAESAR SALAD DRESSING
This is my own variant of the classic Caesar salad dressing, but without using raw egg so that the dressing keeps longer and doesn't spoil so easily. It's also a bit more piquant than the classic version and uses more cheese (because more cheese is always good). To make it more decorative in the bottle, try adding large sprigs of fresh basil to the dressing after shaking it. Makes a nice gift, and fresh basil tastes better, too.

- Place anchovies and fresh garlic in wooden salad bowl Crush into fine paste with two dinner forks. Add dijon mustard and worcestershire sauce to paste and stir. Add egg yolk and continue to stir. Slowly add oil while stirring. Add lemon juice, red wine, and half of cheese. Stir. Place lettuce in dressing mixture and toss, making sure all lettuce is coated. Add croutons and remaining cheese. Cover and refrigerate., Grill steak, covered, over medium heat for 5-7 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°)., In a large bowl, toss the romaine, 1/3 cup Parmesan cheese and salad dressing. Divide among salad plates. Slice the steak; arrange steak and tomatoes on salads. Top with croutons and remaining Parmesan cheese.

CAESAR SALAD DRESSING
This clone could pass for the actual Outback Steakhouse Caesar salad dressing. I was able to get a recipe from the Outback's head chef, but it was very ambiguous with some of the primary ingredients, but after searching and finding a few copycat recipes that weren't quite right, I was able to tweak it and I believe it to be identical to the real deal. I've blind taste tested it, and no one has been able to distinguish any difference. Now we can all enjoy that wonderful garlicky salad w/o having to spend a fortune and drive across town. Recipe yields about a quart, and being made with unpasteurized eggs, doesn't keep more than a few days. Egg beaters are pasteurized and may be substituted, or you can just eat more Caesar salad.
