CAFE LATTE
This is for all fellow coffee drinkers. I love lattes but buying them can be pricey. So here's a recipe so you can make your own.

Steps:
- Heat milk in a saucepan set over medium-low heat. Whisk briskly with a wire whisk to create foam. Brew espresso and pour into 4 cups. Pour in milk, holding back the foam with a spoon. Spoon foam over the top.

CAFE LATTE MIX
This recipe has to be powdered in a blender. The vanilla makes things clumpy because it is a liquid, and the heaviness of the sugar makes it sink to the bottom while the coffee creamer rises to the top. Blending the mixture, takes care of all of these problems.

Steps:
- Measure all of the ingredients (even the vanilla) into a blender container.
- Put the lid on.
- Process the mixture for about a minute, or until it is all powdery smooth, and the texture is even.
- Store in a container with a good lid.
- Makes 1- 2/3 cups of mix.
- To Prepare:.
- Combine 3/4 cup of boiling water and 2 to 3 tablespoons of the mix.
- Stir to dissolve and serve.

EASY LATTE

- Place milk in a 1-cup microwave-safe measuring cup. Microwave, uncovered, on high for 1 minute or until milk is hot and small bubbles form around edge of cup., Place a metal whisk in cup; whisk vigorously by holding whisk handle loosely between palms and quickly rubbing hands back and forth. Remove foam to a small measuring cup as it forms. Continue whisking until foam measures 1/8 to 1/4 cup; set aside., Pour Easy Espresso into a cup; pour in remaining hot milk. Spoon foam over top and serve immediately.

- In a blender, combine the milk powder, creamer, coffee granules, sugar and pudding mix; cover and process until mixture is a fine powder. Store in an airtight container for up to 6 months. Yield: 1-3/4 cups., To prepare hot latte: Dissolve 1/4 cup mix in hot water; stir well. , To prepare iced latte: Dissolve 1/4 cup mix in hot water; stir in cold water. Transfer to a blender; add ice. Cover and process until blended.
