1 tablespoon onion powder
1 tablespoon ground dried thyme

1 teaspoon dried oregano

Steps:

  • Combine the paprika, garlic powder, onion powder, thyme, black pepper, cayenne pepper, basil, and oregano in a bowl until evenly mixed. Store in an airtight container in a cool, dry place.

An easy cajun dry rub recipe that works perfectly on seared tuna for blackened tuna tacos!

2 Yellowtail Tuna Filets
½ teaspoon garlic powder
½ teaspoon cayenne pepper (adjust to your desired spice level)
¼ teaspoon dried thyme
½ teaspoon paprika
¼ teaspoon celery salt
1 teaspoon black pepper
1 teaspoon salt
1 tablespoon cooking oil

Steps:

  • Use a paper towel to pat the thawed, raw tuna steak dry.
  • Mix together all of the spices in a shallow bowl until well combined.
  • Press the dry rub onto the exterior of the tuna steak.
  • Heat 1-2 tablespoons of oil in a skillet set to high heat.
  • For a medium rare tuna steak, Sear the largest side of the fish for about 60 seconds until the fish exterior turns from pink to white, then flip the tuna filet to sear the opposite side.
  • Remove the fish from the skillet, and slice the fish through the sear.
  • The fish should have a white edge but a pink center
  • Let the fish rest for a few minutes, slice, and serve on salads, tacos, and sandwiches.

1 teaspoon Oregano
1 teaspoon Garlic powder
1 teaspoon Onion powder
1 teaspoon Salt
1/2 teaspoon Ground cumin
1/2 teaspoon Freshly-ground black pepper
1/4 teaspoon cayenne pepper (optional)
2 tablespoon unsalted butter softened
4 2/3" thick tuna steaks (8 oz ea)

Steps:

  • Heat oven to 400 degrees. Combine paprika, oregano, garlic powder, onion powder, salt, cumin, pepper, and cayenne pepper on a plate. Rub butter over tuna steaks. Press tuna steaks into spice mixture; gently rub spices onto fish. Heat a large heavy ovenproof skillet (cast-iron works great) over high heat for 2 minutes or until skillet smokes. Cook tuna steaks 1 minute on each side. They will make some smoke, this is normal. Transfer skillet to oven and roast fish 5 minutes for medium-rare doneness. This recipe yields 4 servings. 1 ½ pounds fresh tuna steaks, 1 inch thick
2 tablespoons Cajun seasoning
2 tablespoons olive oil
2 tablespoons butter

Steps:

  • Generously coat tuna with Cajun seasoning.
  • Heat oil and butter in a large skillet over high heat. When oil is nearly smoking, place steaks in pan. Cook on one side for 3 to 4 minutes, or until blackened. Turn steaks, and cook for 3 to 4 minutes, or to desired doneness.

My favorite way to eat tuna, but the spice mix works well with blackened chicken or other types of firm fish.

1 teaspoon salt
1 teaspoon fresh thyme (minced)
1/2 teaspoon dried oregano
1/2 teaspoon cayenne pepper
1/2 teaspoon sweet paprika
1/2 teaspoon ground black pepper
1/2 teaspoon fennel seed (crushed)
4 tuna steaks
2 tablespoons olive oil

Steps:

  • Preheat oven to 400 deg.
  • Mix first 7 ingredients in small bowl.
  • Place steaks on baking sheet, brush on both sides with 1 T. oil. Sprinkle top of each with seasoning.
  • Heat heavy large skillet over high heat until very hot. Add remaining 1 T. oil; swirl to coat.
  • Place steaks seasoning side down in skillet. Cook until very brown on bottom (about 1 min) return steaks, browned side up to baking sheet.
  • Place in oven; bake until done (about 8 min).

This can be served as a dinner or an appetizer. It is positively amazing. This is my own creation inspired by my favorite dish at a local NJ restaurant. I hope you like it as much as I do.

2 lbs tuna
3 -4 tablespoons redfish blackening seasoning
1/4 cup olive oil
1/2 cup sour cream
1/2 cup mayonnaise
1 1/2 tablespoons spicy mustard
1 lemon, juice of
2 tablespoons horseradish (or to taste)
1/4 teaspoon paprika

Steps:

  • Make the mustard first: Mix all ingredients in a small saucepan.
  • Bring to a boil, stirring often.
  • When somewhat smooth, it's done.
  • Now start the tuna: TUNA Cut up tuna in large bite size pieces Coat with blackening seasoning Heat oil in pan till very hot, but not smoking Sear tuna on all sides for about 7-10 minutes total.
  • Do not overcook.
  • It's good for the tuna to be slightly pink on the inside.
  • Serve right away with Cajun Mustard.
  • This can also be made with peeled jumbo shrimp.
