CAJUN FRIED CHICKEN
This Cajun fried chicken recipe is bathed in buttermilk and turns out crisp, slightly spicy, perfectly deep-fried loveliness thanks to its Southern charm and Louisiana personality. Quite literally the best we've had.

- Pat the chicken dry. Place the chicken in a large bowl, season it with the salt, pepper, cayenne, white pepper, garlic powder, and hot sauce, and toss to coat evenly. Cover and refrigerate for at least 1 hour and up to 1 day.☞TESTER TIP: The longer you let the chicken stay in the fridge, the more thoroughly the seasonings will permeate the chicken.
- Remove the chicken from the bowl, allowing any liquid to drip back into the bowl, and place it in a clean bowl. Pour the buttermilk over the top.
- Heat the lard, vegetable shortening, or bacon fat in a large cast-iron skillet until it registers 350°F (176°C) on an instant-read thermometer or a pinch of flour immediately sizzles when dropped into the fat.
- While the oil heats, remove the chicken from the buttermilk, allowing any excess liquid to drip off, and place the chicken in yet another clean bowl.
- Sprinkle the chicken with the flour and toss to coat.
- When the oil is ready, add the chicken pieces to the skillet in batches, starting with the larger pieces and shaking off any excess flour before adding them to the oil. Do not crowd the skillet. For the crispest results, you want ample room around each piece in the oil. Cook the chicken, using tongs to turn the chicken occasionally, until golden brown and cooked through, about 8 minutes on each side. Keep an eye on the temperature of the oil, making sure the oil doesn't get too hot.
- Transfer the fried chicken to a plate lined with paper towels or a brown paper bag. Return the oil to temperature before frying each subsequent batch of chicken. The smaller pieces will take about 6 minutes on each side.

- preheat oven to 400 degrees.
- combine buttermilk, cajun seasoning, and salt in a shallow dish.
- place the panko in another shallow dish.
- take your chicken pieces and dip them first in the butermilk mixture, then into the panko.
- do one piece at a time.
- line your baking sheet with parchment paper, and place the chicken pieces on it.
- lightly spray each chicken piece with the cooking spray.
- bake for 40 minutes at 400 degrees or until done, turning the chicken pieces after they have baked for 20 minutes.

CAJUN FRIED CHICKEN OVER PASTA
Just an idea I had in my head. This stuff came out amazing. Hope y'all like it too! Mmmm mmmm! What a meal! Serve with a fresh garden salad, crusty bread and a nice wine! Yummy!

- 1. Mix together flour, salt, and seasonings in a shallow bowl with wire wisk. In a separate bowl, wisk together milk and eggs until well blended.
- 2. Coat a deep frying pan with about an inch and a half of oil. Heat over medium heat. When oil is hot, roll chicken in flour mixture, then dip in egg, then roll again in flour mixture. Fry in hot oil until golden brown. Repeat until all the chicken is done; set aside on an oven safe pan/plate and keep warm in the oven until pasta and sauce are done.
- 3. Cook bow tie pasta according to package directions. While pasta is cooking start preparing sauce.
- 4. To prepare sauce, heat butter over in a deep skillet over medium heat and add red onion, garlic to the pan. Saute until softened. Pour in alfredo sauce, tomato paste, butter and wine. Simmer over medium-low heat for Until well blended. Add Cajun seasoning. When pasta is done, drain and mix with sauce.
- 5. To plate: Spoon pasta onto a plate or pasta bowl. Lay a few strips of chicken over the top. Sprinkle with sliced green onion, and shaved parmesan. Serve.

- Inject all pieces with marinade. I use King Kooker Hot & Spicy, but any spicy brand will do.
- Season all pieces with Cajun seasoning. I use Tony Chachere's.
- Coat pieces with Creole mustard.
- Mix eggs, milk and hot sauce in a shallow bowl.
- Put two cups of flour in a large gallon size baggie.
- Put the other two cups in another baggie, and season with 3 tbl Cajun seasoning.
- Heat oil for frying.
- Working with a couple pieces at a time, lightly coat pieces in unseasoned flour, dip into milk mixture, drain off excess, and thoroughly coat with seasoned flour.
- When all pieces are coated, fry until done. Place on paper towel and season again with Cajun seasoning.

- Whisk together buttermilk, hot sauce, 1 tablespoon of the salt, and 1 teaspoon of the pepper in a large bowl. Pat chicken pieces dry; cut breasts in half, and cut off and discard wing tips. Place chicken pieces in buttermilk mixture (make sure pieces are completely submerged). Cover and refrigerate at least 12 hours or up to 1 day.
- Place a large wire rack on a large baking sheet. Whisk together flour, cornstarch, Cajun seasoning, and remaining 1 teaspoon salt and 1/2 teaspoon pepper in a medium bowl. Divide flour mixture between 2 large Ziplock plastic freezer bags. Working with a few pieces at a time, remove chicken from buttermilk mixture, letting any excess drip off. Drop chicken into flour mixture; seal bags, and shake thoroughly to coat. Remove chicken pieces; shake off excess flour, and place on rack. Repeat until all chicken pieces are coated. Let chicken rest on rack 30 minutes.
- Pour oil to a depth of 1 1/2 inches into a large cast-iron Dutch oven; heat over medium to 325°F. Fry chicken, in batches, in hot oil until browned and done, 15 to 22 minutes, turning occasionally. (A meat thermometer inserted into thickest part should read 160°F for white meat and 165°F for dark meat.) Drain chicken on a wire rack over paper towels. Serve warm or at room temperature.
