CAJUN BOUDIN PIZZA
A Cajun take on American classic pizza; it's quick and easy, guaranteed to please the entire family. You can use any pre-made pizza crust instead of naan bread.

- Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Place sausage in a baking dish and cook, rotating every 5 minutes, until no longer pink in the center, about 20 minutes. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C). Cool to room temperature and slice. Reduce oven temperature to 350 degrees F (175 degrees C).
- Place naan bread on a baking sheet; spread marinara sauce over naan and top with mozzarella cheese. Layer sliced sausage on top of cheese and spread onion and bell pepper slices over the sausage. Sprinkle Cajun seasoning over the top.
- Bake in the oven until cheese is melted and toppings are hot, about 10 minutes. Let rest for 5 minutes before slicing.

CAJUN SAUSAGE PIZZA
Cajun Sausage Pizza - a creamy homemade cajun sauce tops your favorite pizza dough, then gets piled with sliced andouille sausage, bell peppers, and gooey cheese. Grab a slice and pair it with a glass of wine for an easy summer dinner!

- Preheat oven to 425 degrees. Line a cookie sheet with parchment paper and set aside.
- Melt butter in a small sauce pan over medium heat. Stir in garlic and cook until fragrant, about 30 seconds. Stir in heavy cream and Creole seasoning. Reduce heat to low and cook until sauce thickens, about 5-10 minutes. Remove from heat and stir in parmesan cheese until melted.
- Roll pizza dough out onto prepared baking sheet. Spread sauce over the top, reserving a very small amount for drizzling over the top of pizza at the end (maybe a couple tablespoons). Top the pizza with sliced sausage, bell peppers, and cheese.
- Bake in preheated oven for 12-16 minutes until cheese is melted and edges are golden brown. Slice and drizzle remaining sauce over the top. Enjoy!

CAJUN PIZZA
This delicious Cajun pizza is sprinkled with Cajun seasoning and topped with red onion, green pepper, corn, and smoked gouda cheese.

- Follow the Best Pizza Dough recipe to prepare the dough. (This takes about 15 minutes to make and 45 minutes to rest.)
- Place a pizza stone in the oven and preheat to 500°F. OR preheat your pizza oven (here's the pizza oven we use).
- Make the Homemade Pizza Sauce.
- Cut the jalapeño pepper in half, remove the seeds, and finely dice it. Thinly slice the red onion. Chop the pepper. If the cheese is not yet shredded, grate it.
- When the oven is ready, dust a pizza peel with cornmeal or semolina flour. (If you don't have a pizza peel, you can use a rimless baking sheet or the back of a rimmed baking sheet. But a pizza peel is well worth the investment!) Stretch the dough into a circle; see this video for instructions. Then gently place the dough onto the pizza peel.
- Thinly spread the pizza sauce over the dough, then sprinkle liberally with Cajun seasoning. Sprinkle with as much smoked gouda and mozzarella cheese as you like. Top with red onion, jalapeno, corn, and green pepper (if using). Sprinkle with a bit of kosher salt.
- Transfer the pizza to the pizza stone using the pizza peel, and bake until the cheese and crust are nicely browned, about 5 to 7 minutes (or 1 minute in a pizza oven).
CAJUN PRAWN PIZZA

- Heat oven to 220C/200C fan/gas 7. Tip the flour into a mixer with a dough hook, or a bowl. Add the yeast, salt, oil and 150ml warm water then mix well to a soft dough. Knead in the food mixer for about 5 mins, but if making this by hand, tip onto a work surface and knead for about 10 mins. The dough is sticky, but try not to add too much extra flour. Leave in the bowl and cover with a tea towel while you make the topping. There is no need to prove the dough for a specific time, just let it sit while you get on with the next step.
- For the topping: heat the oil in a non-stick pan or wok. Add the celery and pepper and fry for 8 mins, stirring frequently, until softened. Tip in the tomatoes and paprika then cook for 2 mins more. Set aside to cool a little then stir in the prawns.
- With an oiled knife, cut the dough in half and shape each piece into a 25cm round with lightly oiled hands on oiled baking sheets. Don't knead the dough first otherwise it will be too elastic and will shrink back. Spread each with half of the tomato and prawn mix then scatter with the coriander and sprinkle with the Cajun spice. Bake for 10 mins until golden. Serve with a green salad.

- Dry chicken with kitchen paper, then cut diagonal slashes over the smooth side. Mix spices with seasoning, then tip onto a plate.
- Brush the chicken on both sides with the oil, then coat all over with the spice mix. Heat a barbecue, griddle pan or grill, then cook the chicken for 5-6 mins on each side until cooked through. Serve each portion with a dollop of guacamole.
