It may seem simple, but it's my favorite way to have tuna. Seared fish steaks are a Cajun tradition.

1 ½ pounds fresh tuna steaks, 1 inch thick
2 tablespoons Cajun seasoning
2 tablespoons olive oil
2 tablespoons butter

Steps:

  • Generously coat tuna with Cajun seasoning.
  • Heat oil and butter in a large skillet over high heat. When oil is nearly smoking, place steaks in pan. Cook on one side for 3 to 4 minutes, or until blackened. Turn steaks, and cook for 3 to 4 minutes, or to desired doneness.

2 to 3 teaspoons lemon juice

3 to 4 drops hot pepper sauce
1/4 cup minced fresh parsley

Steps:

  • In a bowl, combine the first five ingredients until well mixed. Shape into a ball; roll in parsley. Chill. Serve with crackers.

2/3 cup sour cream
2/3 cup mayonnaise
2 garlic cloves, minced

Dash hot pepper sauce
2 cups chopped cooked peeled shrimp
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
2 tablespoons chopped sweet red pepper
2 tablespoons chopped green onion
Assorted crackers

Steps:

  • In a large bowl, whisk the first six ingredients until blended. Stir in the shrimp, spinach and red pepper. Chill until serving. Sprinkle with green onion. Serve with crackers.

This is part of an antipasti spread. Serve with crostini, Melba toast, or crackers at room temperature. Store in refrigerator covered. To reuse, bring back to room temperature. Do not microwave to reheat. It will turn to goop. Best tuna fish sandwich you will ever have. Use iceberg lettuce, toasted bread, and thin slice of tomato. Yum!

2 tablespoons dill relish
2 teaspoons Grey Poupon mustard
2 tablespoons Miracle Whip (or mayonnaise)

1 (6 1/2 ounce) can tuna, drained

Steps:

  • Combine eggs and dill relish. Add the rest of the ingredients, except tuna, and mix well. Then add tuna. If mixture is dry, add more Miracle Whip/mayo.

1 (10 ounce) can cream of mushroom soup
1 (16 ounce) can tuna
1/3-1/2 cup sour cream
1/2 cup French's French fried onions
1 (15 ounce) can sweet peas

Steps:

  • Preheat oven to 350 degrees.
  • crush ramen noodles, and set aside.
  • In small bowl combine Soup, Sour cream, seasoning packets from Ramen, and Tuna.
  • Fold in Ramen Noodles and Peas.
  • Spread Mixture in an 8 inch square pan.
  • Cover and bake for about 30 minutes.
  • Spread Frenches onions overtop and bake about 5 minutes more.

2 tablespoons mayonnaise, of choice (I use miracle whip light)
1 tablespoon pickle relish
1/2 stalk celery, diced
1/4 apple, diced
1 dash Tony Chachere's Seasoning
lettuce leaf (optional)
tomatoes, slice (optional)

Steps:

  • Drain tuna, put into a bowl and add mayo. Stir together until mixed well. Add relish, celery, apple, and seasoning. Mix until evenly distributed.
  • Put the mixture on the bread - with the lettuce and tomato if you'd like - and enjoy! Healthy, quick, and easy!
