This is my favorite sandwich. The seasoning mixture is enough to give a mild flavor to several chicken breasts...or a spicy taste to just a few. -Amber Peterson of Oakes, North Dakota

6 boneless skinless chicken breast halves (4 ounces each)
1 tablespoon olive oil
1/2 teaspoon celery salt
1/2 teaspoon garlic salt
1/2 teaspoon lemon-pepper seasoning
1/4 teaspoon cayenne pepper
1/4 teaspoon paprika
1/4 teaspoon pepper
6 kaiser rolls, split and toasted
12 slices tomato
6 lettuce leaves

Steps:

  • Flatten chicken to 1/2-in. thickness. Brush both sides with oil. Combine the seasonings; rub over both sides of chicken. Arrange in a 13-in. x 9-in. baking dish. Cover and refrigerate for at least 2 hours or overnight. , Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill chicken, covered, over medium heat or broil 4 in. from the heat for 3-5 minutes on each side or until chicken is no longer pink. Serve on rolls with tomato and lettuce.

1 (3 lb) boneless roast cajun-style turkey
nonstick cooking spray
2 tablespoons butter or 2 tablespoons margarine
1 large green bell pepper, cut into strips (about 1 cup)
1 large red bell pepper, cut into strips (about 1 cup)
1 large onion, halved lengthwise, cut into slices (about 1 cup)
1/2 teaspoon hot pepper sauce
1/2 teaspoon celery seed
8 kaiser rolls, split
4 tablespoons mayonnaise
cheddar cheese

Steps:

  • Preheat oven to 325°F Remove roast from package; lightly pat with paper towels. Discard gravy packet or refrigerate for another use. Lift string netting and shift position on roast for easier removal after cooking.
  • Place roast, skin side up, on flat roasting rack in 2-inch deep roasting pan. Spray roast with cooking spray. Bake 1-3/4 to 2 hours, or until meat thermometer inserted in center of roast reaches 170°F
  • Let roast stand 10 minutes before removing string netting; carve into thin slices.
  • Meanwhile, melt butter in medium skillet over medium heat. Add green and red peppers and onion; cook and stir 8 minutes, or until tender. Stir in hot sauce and celery seed. Remove from heat.
  • Spread bottom halves of rolls evenly with mayonnaise. Top each of the bottoms with 1 slice cheese, 1/8 of the turkey and vegetables and top halves of rolls.

I made these sandwiches when I had extra salami from making a pizza earlier in the week. My husband and I both love them.

2 pub-style sandwich buns
1 -2 tablespoon butter or 1 -2 tablespoon margarine
1 slice mozzarella cheese
1 slice cheddar cheese
4 slices salami or 4 slices pepperoni
5 slices deli turkey or 5 slices deli chicken
1 tablespoon mayonnaise (optional)
1 tablespoon mustard (optional)

Steps:

  • Butter both halves of the buns.
  • Broil in the oven until just turning brown.
  • Remove from oven.
  • Add cheese to the top half of the bun.
  • Add turkey and salami to bottom half of bun.
  • Return to oven and broil until cheese just melted.
  • Remove from oven and add mayonnaise and mustard if desired.

1 cup shredded lettuce

Steps:

  • Mix first 5 ingredients until blended; spread onto cut sides of baguette.
  • Fill with remaining ingredients; cut into 4 pieces to serve.
