1 cup butter, softened
3 cups white sugar
7 eggs
1 tablespoon vanilla extract
3 cups all-purpose flour
¼ teaspoon baking powder
¼ teaspoon baking soda
1 cup sour cream

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 9x13 inch pan or a 10 inch Bunt pan.
  • In a large bowl, cream together the butter and sugar. Beat in the eggs, one at a time, mixing well after each. Then stir in the vanilla. Combine the flour, baking soda and baking powder, add to the creamed mixture and mix until all of the flour is absorbed. Finally, stir in the sour cream. Mix for 1 or 2 minutes just to be sure there are no lumps. Pour the batter into the prepared pan.
  • Bake in the preheated oven for 45 to 60 minutes, or until a toothpick inserted into the center of cake comes out clean. For Bunt cakes, allow the cake to cool in the pan for 10 minutes before inverting onto a wire rack.

1 egg, beaten
1 (8 ounce) package dates, pitted and finely chopped
1 teaspoon vanilla extract
2 cups crispy rice cereal
¾ cup walnuts, finely chopped

Steps:

  • Combine the margarine, sugar, egg, and dates in a saucepan. Cook over medium heat until thick, about 7 to 10 minutes. Remove from heat; stir in vanilla.
  • Combine the crispy rice cereal and the walnuts in a large bowl. Stir in the date mixture; mix well.
  • Working quickly, form the cereal and date mixture into 1 inch balls. Roll balls in coconut. Store in an airtight container in a cool place. Do not refrigerate.

½ teaspoon salt
2 cups white sugar
2 eggs
1 (20 ounce) can crushed pineapple with juice
1 cup white sugar
½ cup butter
1 cup evaporated milk
1 cup flaked coconut
1 teaspoon vanilla extract
½ cup chopped pecans

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x13 inch baking pan. Combine the flour, baking soda, salt and 2 cups sugar; set aside.
  • Beat the eggs and add them to the flour mixture. Then stir in the crushed pineapple and juice until just blended. Pour batter into the prepared pan.
  • Bake at 350 degrees F (175 degrees C) for 30 minutes, or until a toothpick inserted into cake comes out clean.
  • To Make Frosting: In a medium saucepan bring to a boil the 1 cup white sugar, butter, and evaporated milk. Boil for 2 minutes, watching carefully to be sure it doesn't burn. Stir the mixture frequently while cooking. Remove from the heat and stir in the vanilla, coconut and pecans. Beat until it cools to lukewarm then pour over the cooled cake.

2 cups granulated sugar
2 eggs
2 teaspoons baking soda
1 cup crushed pecans
1 (16 ounce) can crushed pineapple
2 (8 ounce) packages soften cream cheese
2 cups confectioners' sugar
1 cup of softened butter or 1 cup margarine

Steps:

  • SIFT TOGETHER flour, soda, and sugar, and then add pecans.
  • Next add slightly beaten eggs and the crushed Pineapples.
  • Pour batter into a 9x13 cake pan that has been greased and flour.
  • Bake 40 minutes at 350 degrees; cake will be dark.
  • While cake is still hot, using a fork punch holes in top of cake.
  • Mix icing with mixer until smooth and spread on cake while it is still hot!
  • Let cake cool and serve.

KRANSEKAKE (18-LAYER NORWEGIAN WEDDING CAKE)

Few ingredients with very helpful directions to aid you in making this. You will need graduated ring pans and a cookie press. This is a family recipe from the Petzenhausers from Lake City. Their 18 year old daughter won a blue ribbon at the 2008 Iowa State Fair for this recipe.

1 lb almond meal or 1 lb almond flour
3 1/4 cups powdered sugar
4 egg whites
powdered sugar
butter, melted

Steps:

  • Mix almond meal and powdered sugar until there are no lumps.
  • In a separate bowl, beat egg whites until stiff. (A stand mixer works best for this.).
  • Whites should stand straight in a peak when you lift out the beater.
  • Reserve 2/3 cup of the egg whites, and mix remaining egg whites into almond flour/powdered sugar mixture with a wooden spoon or with your fingers.
  • The dough will be thick and should have the texture of cookie dough.
  • Place the dough into a cookie press.
  • Using a star-shaped disk, press the dough into kransekake rings that have been greased and coated with bread crumbs or white corn meal.
  • Test one ring by baking at 325 degrees for 15 minutes.
  • If this sample has tunnels, you may need to add a little more powdered sugar.
  • If the dough doesn't rise, you may need to add a little more of the egg white.
  • Do not over bake.
  • After baking all the cake rings, cool to nearly cold before removing the cake from the rings.
  • The cake should be only be slightly brown on the tips of the dough.

  • Use a thin knife to start lifting each ring out gently.
  • If a ring breaks, save it and serve it in little pieces around the bottom of the cake.
  • You can either stack the rings into a cone shape and lightly drizzle icing in a scallop pattern or v-pattern around each ring, or you can drizzle the rings with icing first and then stack them into a cone.
  • If you would like to freeze the kransekake, fill empty ice cream buckets with the unfrosted rings layered between sheets of waxed paper.

  • For assembly:
  • one 8-inch cardboard round.
  • one 6-inch cardboard round
  • three 8-inch plastic straws
  • Make cake layers:.
  • Preheat oven to 350°F and line 2 buttered 7- by 2-inch round cake pans and 2 buttered 9- by 2-inch round cake pans with rounds of wax paper. Butter paper and dust pans with flour, knocking out excess.
  • Put cocoa powder in a bowl and whisk in boiling water in a stream until smooth. Stir in chopped chocolate and let stand 5 minutes. Stir mixture until smooth and chocolate is melted and cool mixture. Whisk in sour cream and vanilla.
  • Into a bowl sift together flour, baking soda, and salt. In large bowl of a standing electric mixer beat together butter and sugars until light and fluffy and add eggs, 1 at a time, beating well after each addition and scraping down side of bowl. Reduce speed to low and add flour mixture and cocoa mixture alternately in batches, beginning and ending with flour mixture and beating until batter is combined well.
  • Pour 2 cups batter into each 7-inch pan and smooth tops. Divide remaining batter between 9-inch pans (about 33/4 cups each) and smooth tops. In middle and lower thirds of oven arrange one 9-inch layer and one 7-inch layer on each rack, putting 7-inch layers in front part of oven. Bake 7-inch layers 25 to 30 minutes and 9-inch layers 35 to 40 minutes, or until a tester comes out with crumbs adhering. Run a thin knife around edges of pans and invert cakes onto racks. Peel off paper and cool cakes completely. Cake layers may be made 2 days ahead and kept at cool room temperature, wrapped well in plastic wrap, or 2 weeks ahead and frozen, wrapped well in plastic wrap and foil. Defrost cake layers (without unwrapping) at room temperature.
  • Make ganache:.
  • In a small saucepan bring cream just to a boil. Remove pan from heat and add chocolate, butter, zest, and liqueur. Let ganache stand 3 minutes and whisk until chocolate is melted. Chill ganache just until cool, about 40 minutes.
  • In a bowl with an electric mixer beat ganache just until light and fluffy before using (do not overbeat or it will become grainy).
  • Assemble cake:.
  • Put one 9-inch layer on 8-inch cardboard round and spread evenly with 2 cups ganache. Top with remaining 9-inch layer and gently press layers together to form an even tier. Put one 7-inch layer on 6-inch cardboard round and top with remaining ganache and remaining 7-inch layer in same manner.
  • Frost top and sides of 9-inch tier with some buttercream and chill while frosting 7-inch tier. Chill both tiers until buttercream is firm.
  • Cut straws in half and insert 1 straw piece all the way into center of 9-inch tier. Trim straw flush with top of tier and insert remaining 5 straw pieces in same manner in a circle about 1 1/2 inches from center straw. Center 7-inch tier (still on cardboard) on top of 9-inch tier. Fill in any gaps between tiers with buttercream and transfer cake to a cake stand or platter. Chill cake at least 6 hours and up to 1 day.
  • Arrange fraises des bois and roses decoratively on top and around sides of cake. Let cake stand at cool room temperature (buttercream is sensitive to warm temperatures) 2 to 4 hours before serving. Serves about 30 (including top tier).
  • Make orange curd:.
  • In a small heavy saucepan whisk together yolks and sugar and whisk in orange juice, butter, and a pinch salt. Cook mixture over moderately low heat, whisking, until it just reaches boiling point, 5 to 7 minutes (do not let boil), and strain through a fine sieve into a bowl. Whisk in lemon juice and cool curd, its surface covered with plastic wrap. Chill orange curd, covered, until cold, at least 4 hours, and up to 2 days.
  • Make buttercream:.
  • In a heavy saucepan bring sugar and water to a boil, stirring until sugar is dissolved. Boil syrup, undisturbed, until it registers 248°F on a candy thermometer. While syrup is boiling, in large bowl of a standing electric mixer beat whites with a pinch salt until foamy and beat in cream of tartar. Beat whites until they just hold stiff peaks and beat in hot syrup in a stream (try to avoid beaters and side of bowl). Beat mixture at medium speed until completely cool, 15 to 20 minutes. Beat in butter, 1 piece at a time, and beat until thickened and smooth. (Buttercream will at first appear very thin and at some point look like it is breaking but, as more butter is beaten in, it will thicken and become glossy and smooth.) Beat in orange curd, salt, and zest until smooth. Buttercream may be made 4 days ahead and chilled in an airtight container or 2 weeks ahead and frozen in an airtight container. Bring buttercream completely to room temperature (this may take several hours if frozen) and beat before using. (If buttercream is too cold when beaten it will not be glossy and smooth.) Makes about 8 cups.
  • Note: A cake-decorating turntable is extremely helpful for assembling and decorating a wedding cake.
  • Decoration: fraises des bois (wild strawberries) and small roses with some leaves attached (both fruit and flowers must be nontoxic and pesticide-free).

3/4 lb candied cherry, halved
1/2 lb blanched slivered almond
1/4 lb slivered brazil nut
2 teaspoons grated fresh lemon rind
7 cups sifted all-purpose flour
1 1/2 teaspoons salt
1 1/2 teaspoons cinnamon
1 teaspoon clove
1 1/2 teaspoons nutmeg
1 teaspoon allspice
2 2/3 cups soft butter
2 3/4 cups sugar
12 eggs
1/2 cup brandy
1/3 cup bottled grape juice

Steps:

  • Prepare fruit and nuts before you make the cake.
  • Put in a large bowl and pour brandy over.
  • Mix well.
  • Let stand at room temperature for at least 8 hours.
  • Put 1/4 c sugar in a heavy skillet.
  • Heat over moderate heat stirring constantly until melted and brown.
  • Remove from heat and stir in boiling water gradually (be careful of steam).
  • Return to low heat and stir just until any lumps of sugar are melted.
  • (do not boil) Remove from stove and immediately pour into a cup or bowl so cooking ceases.
  • Cool.
  • Generously grease a set of pans (1 ea- 8" sq, 6" sq, 4" sq) and line with heavy greased brown paper.
  • Sift together flour, salt, and spices, and sift one cup of mixture over fruit/nut mixture.
  • Toss together so fruit is coated.
  • Cream together butter and sugar thoroughly.
  • Add eggs one at a time, beating well after each addition (most of the mixing can be done with an electric mixer- but batter must be transferred to a very large bowl).
  • Blend in dry ingredients alternately with the mixture of grape juice and cooled caramel mixture.
  • Add fruit/nut mixture and blend thoroughly (Hands are the easiest) Preheat oven to 300F.
  • Place a pan of hot water in the bottom of the oven.
  • Put batter in prepared pans using following amounts: 8"- 10 cups, 6"- 5 cups, 4"- 2 cups (or 2/3 full).
  • Cooking times- 8" in 4 hours, 6"- 3 1/2 hours, 4"- 2 1/2 hours.
  • Test for doneness with a tooth pick.
  • Remove cakes from pans, cool thoroughly.
  • Strip off paper, wrap in cheesecloth.
  • Wet with brandy (or dark rum).
  • Wrap in heavy duty aluminum foil.
  • Store for at least 2 weeks in a cool place (Longer is better).

1/4 cup green pepper, finely chopped (optional)
1 -2 teaspoon Worcestershire sauce
3 cups whole milk
1 dash red pepper sauce (e.g. Tabasco)
1/4 lb butter
Special K cereal or corn flakes, crushed

Steps:

  • In a 9" x 13" buttered glass baking dish, put 8 pieces of bread, and add pieces to cover dish entirely.
  • Cover bread with slices of back bacon or ham- it's best if your meat is about the size of the bread slice, for ease of cutting after it's cooked.
  • Lay slices of cheddar cheese on top of bacon and then cover with slices of bread to make it like a sandwich.
  • In a bowl, beat eggs, salt and pepper.
  • To the egg mixture add dry mustard, onion, green pepper, Worcestershire sauce, milk and Tabasco, and then pour over the sandwiches.
  • Cover and let stand in fridge overnight.
  • In the morning, melt ¼ lb.
  • butter, and pour over the top.
  • Cover with crushed Special K or corn flakes and bake, UNCOVERED for 1 hour at 350 degrees.
  • Let sit for at least 10 minutes before serving.
  • It's very nice served with fresh, chopped fruit.

2 cups granulated sugar
2 teaspoons baking soda
2 eggs, lightly beaten
1 (20 ounce) can crushed pineapple in juice, undrained
1 cup shredded coconut
1 cup walnuts, coarsely chopped, plus more
walnuts, for garnish
4 ounces cream cheese, softened
2 cups confectioners' sugar
1 teaspoon vanilla extract
1/2 cup unsalted butter, softened

Steps:

  • Heat oven to 325 degrees.
  • Coat a 13x9x2-inch baking dish with nonstick spray.
  • In large bowl, mix flour, granulated sugar, baking soda, eggs, pineapple with juice, coconut and 1 cup of walnuts.
  • Stir with a wooden spoon until just combined and all ingredients are moist.
  • Spoon mixture into prepared pan.
  • Bake at 325 degrees for 35-40 minutes or until a toothpick inserted in the center of the cake comes out clean.
  • Remove from oven and cool on a wire rack.
  • In a bowl, beat butter and cream cheese until smooth.
  • Gradually beat in confectioners' sugar and vanilla until smooth.
  • Frost cooled cake with the cream cheese mixture.
  • Garnish edges with chopped walnuts, if desired.
