California chicken flatbread with juicy chicken, bacon, avocado, red peppers, cilantro, and creamy chipotle ranch sauce!

1 large flatbread or naan (or 2 small, (I used Stonefire brand- my favorite!))
2 tablespoons olive oil
½ cup shredded mozzarella cheese ((or any other favorite cheese such as monterey jack or pepperjack for a spicier version))
1 boneless skinless chicken breast (pounded to ½ inch thickness )
salt and pepper (to taste)
2-3 slices cooked bacon (chopped)
½ avocado (sliced or diced )
½ red pepper (diced )
1 tablespoon packed cilantro leaves (roughly chopped)
½ teaspoon crushed red pepper flakes ((optional))
¼ cup ranch dressing
1 teaspoon chipotle seasoning ((see note))

Steps:

  • Preheat oven to 350 degrees. Season chicken with salt and pepper to taste. Cook in a pan or skillet on the stove over medium-high heat for about 3-4 minutes each side or until cooked through. Dice chicken and set aside.
  • Brush flatbread with olive oil. Sprinkle with shredded cheese. Top with chicken, red peppers, and bacon. Place on a lightly greased sheet of foil and bake on the oven rack for 10-15 minutes until cheese is completely melted.
  • While flatbread is baking, whisk together ranch dressing and chipotle seasoning. When flatbread is finished baked, top with avocado, cilantro, and crushed red pepper flakes. Drizzle with chipotle ranch dressing and serve immediately.

2 -3 slices bacon, chopped
1/2 pounds boneless, skinless chicken breast, chopped into 1" cubes
1 large flatbread
1/2 cup shredded pepper Jack cheese
1/2 avocado, thinly sliced
1/4 cup thinly sliced scallions
1/4 cup ranch dressing
1 tablespoon sriracha

Steps:

  • Preheat oven to 350 degrees F. Meanwhile, cook bacon in a large skillet over medium heat until crispy. Drain cooked bacon on paper towels but leave the fat in the pan. Add chicken to the pan and sauté in bacon fat until cooked through, about 6 to 8 minutes. Remove from skillet. Place flatbread on a large baking sheet. Sprinkle shredded cheese over flatbread, then top with chicken and bacon. Bake until the cheese is melted, about 10 minutes. Meanwhile, mix together ranch and Sriracha in a small bowl. Top freshly baked flatbread with avocado and scallions. Drizzle with spicy ranch and serve.

4 slices bacon, chopped
3 plum tomatoes, sliced
Extra-virgin olive oil, for brushing
1 pound store-bought pizza dough, at room temperature
6 ounces goat cheese, crumbled
Kosher salt and freshly ground pepper
1 1/2 cups radish sprouts
3 cups baby arugula
Juice of 1/2 lemon

Steps:

  • Preheat the oven to 475 degrees F. Cook the bacon in a large skillet over medium heat until crisp, about 10 minutes. Remove with a slotted spoon and drain on paper towels. Add the tomatoes to the drippings in the pan and cook, turning once, until slightly softened, about 2 minutes.
  • Brush a large rimmed baking sheet with olive oil. Stretch the pizza dough to fit the pan (if the dough shrinks back, let it rest a few minutes before continuing). Prick the dough all over with a fork. Top with the tomatoes, reserving the bacon drippings. Bake until the crust is golden brown, 12 to 15 minutes.
  • Remove the flatbread from the oven; top with the goat cheese. Season with salt and pepper. Toss the sprouts and arugula with 1/2 tablespoon of the reserved bacon drippings (rewarm, if necessary), the lemon juice, and salt and pepper. Top the flatbread with the greens and bacon.

1 cup rotisserie chicken
3 strips bacon (cooked + chopped)
1/2 cup cherry tomatoes (halved)
1/2 Avocado (cubed)
ranch (to drizzle)

Steps:

  • Preheat oven to 375. Line a baking sheet with foil or parchment paper.
  • Place the flatbread on the baking sheet, and brush the top of the flatbread with olive oil, then sprinkle with salt and pepper.
  • Add the cheese, chicken, bacon, and cherry tomatoes, then cook it in the oven for 15 minutes.
  • Top with avocado and drizzle with ranch.
  • Cut into slices and enjoy!

Steps:

  • Heat panini grill.

1 Tablespoon fresh parsley (chopped)
2 Tablespoons garlic aioli ((optional))

Steps:

  • Preheat oven to 350 degrees.
