NO BAKE SKOR BARS
It doesn't get any easier! I got this recipe from a co-worker before Christmas and I was amazed that anything this easy could taste so good. The bar is very rich so cut into tiny squares.

Steps:
- Grease a 9" square pan.
- Dump Ritz crackers into food processor and grind finely or crush finely with a rolling pin.
- Mix with Skor bits and can of sweetened condensed milk.
- Press firmly into prepared pan.
- Store in refrigerator and cut into small squares.

FLORIDA CITRUS BARS

- For the crust: Line a 9-by-13-inch baking dish with parchment, leaving a 2-inch overhang for easy removal.
- In the bowl of a food processor, add the vanilla wafers, butter, granulated sugar, zest and a pinch of salt. Pulse until the mixture is a very fine crumb and is starting to clump together. Press the mixture into the prepared baking dish. Chill the dish in the freezer while you make the filling.
- For the filling: Add the cream cheese, condensed milk, confectioners' sugar, grapefruit zest, lemon zest and orange zest to a large bowl. Whip together with an electric hand mixer until completely combined and there are no clumps of cream cheese. Fold in the whipped cream. Remove the crust from the freezer and pour in the filling, using a spatula to smooth it into an even layer. Return to the freezer and freeze for at least 4 hours or overnight.
- For the topping: When the filling is set, remove the whole bar from the baking dish and place on a cutting board; removing the parchment. Decorate the top with the orange, grapefruit and lemon rounds, then carefully slice into bars. Serve immediately.
NO-BAKE CHEESECAKE WITH CONDENSED MILK
A simple, no-bake cheesecake that sets up in about 3 hours. Tastes delicious frozen or from the fridge with pie topping.

- Beat cream cheese with an electric mixer until smooth and creamy. Add condensed milk and mix until blended. Beat in lemon juice and blend until smooth. Transfer mixture into the graham cracker pie crust.

NO BAKE REESE'S FUDGE BARS RECIPE
This No Bake Reese's Fudge Bars recipe is the perfect combination of my two favorite things- Reese's peanut butter cups and fudge!

- Line a 9 x 9 inch pan with foil and spray with cooking spray. Place the peanut butter cups in an even layer on the bottom of the pan. (You should use 16 on the bottom)
- Place chocolate chips and sweetened condensed milk in a medium saucepan over low heat. Stir until chips and milk are melted together.
- Once everything is melted together, spread evenly over peanut butter cups in prepared pan. Immediately sprinkle with the crumbled Reese's, pressing them lightly into the fudge.
- Cool until firm. I like to cool the fudge on the counter until it is room temperature, then cover with plastic and place in the refrigerator to harden completely. Cut into squares and serve.

NO BAKE LEMON SQUARES
I learned this recipe at school in my home economics class many, many years ago. It was such a hit, it was my job to make these on every special occasion. They are very tart with the lemon juice. You can use either fresh squeezed lemon or lemon juice from the bottle. I find that fresh lemons are a hit and miss with the strength of the tartness so I generally use the bottled juice. If you use fresh, you can also grate some lemon peel into the filling.

- FILLING.
- In a small bowl, mix Condensed Milk with the 1/4 cup Lemon Juice. It will appear runny at first but when it sits, it thickens. Set aside.
- In a square container (I use a Tupperware square container that I can seal with the lid) line with graham crackers. You will have to cut some crackers to fit. Take a bread and butter knife and gently saw through the cracker until it cuts through.
- Top with the lemon mixture.
- Top the lemon mixture with another layer of graham crackers. Again, you will have to cut some to fit around the edges.
- ICING.
- Cream the butter with a bit of the icing sugar until there are no lumps left. Add more icing sugar a bit at a time until it's too hard to stir. Add a tsp of lemon juice and mix until smooth again and no lumps remain. Keep alternating icing sugar and lemon juice until its of spreading consistency.
- Spread over top layer of graham crackers.
- Cover and let sit over night.
- Cut into squares and enjoy.
