1 tablespoon cornmeal
1 lb gluten free pizza dough
½ cup grated cheddar cheese
2 ounces goat cheese crumbled
2 cups arugula
2 tablespoons Greek Yogurt
2 tablespoons mayo
1 tablespoon fresh lime juice
½ teaspoon sea salt
¼ teaspoon fresh ground pepper
1 cup alfalfa sprouts
1 tomato sliced thin
1 avocado peeled (pitted and diced)

Steps:

  • Preheat oven to 420 degrees.
  • Cook bacon until crisp and crumble into bite sized pieces.
  • Place a large sheet of parchment paper on your counter and sprinkle with cornmeal.
  • Roll dough into a circle about 12 inches wide. Transfer to the pizza pan and bake for 8 minutes.
  • Sprinkle with cheeses and bacon.
  • Bake for another 8 minutes or until the cheese is melted.
  • Meanwhile, place arugula in a large bowl.
  • In a small bowl, combine yogurt, mayo, lime juice, salt, and pepper.
  • Toss with arugula. Place on warm pizza and top with sprouts, tomato, and avocado. Serve immediately

1 portion (1 lb.) Whole Wheat Pizza Dough
1/2 cup shredded reduced-fat Mexican cheese blend
3 bacon strips, cooked and crumbled
3 cups shredded romaine
1/4 cup fat-free mayonnaise
1 tablespoon lime juice
3 teaspoons minced fresh cilantro, divided
1 cup alfalfa sprouts
1 medium tomato, thinly sliced
1/2 medium ripe avocado, peeled and cut into 8 slices

Steps:

  • Coat a 12-in. pizza pan with cooking spray; sprinkle with cornmeal. On a floured surface, roll dough into a 13-in. circle. Transfer to prepared pan; build up edges slightly. Sprinkle with cheese and bacon. Bake at 450° for 10-12 minutes or until crust is lightly browned., Meanwhile, place romaine in a large bowl. In a small bowl, combine the mayonnaise, lime juice and 2 teaspoons cilantro. Pour over romaine; toss to coat. Arrange over warm pizza. Top with sprouts, tomato, avocado and remaining cilantro. Serve immediately.

1 tablespoon cornmeal
1 loaf (1 pound) frozen pizza dough, thawed
1 cup shredded mozzarella cheese
1 cup ready-to-use grilled chicken breast strips
4 bacon strips, cooked and crumbled
2 cups shredded romaine
1 cup fresh arugula
1/4 cup mayonnaise
1 tablespoon lemon juice
1 teaspoon grated lemon zest
1/2 teaspoon pepper
1 medium tomato, thinly sliced
1 medium ripe avocado, peeled and sliced
1/4 cup loosely packed basil leaves, chopped

Steps:

  • Preheat oven to 450°. Grease a 14-in. pizza pan; sprinkle with cornmeal. On a floured surface, roll dough into a 13-in. circle. Transfer to prepared pan; build up edges slightly. Sprinkle with cheese, chicken and bacon. Bake until crust is lightly browned, 10-12 minutes., Meanwhile, place romaine and arugula in a large bowl. This unconventional pizza features cool toppings and a fresh burst of lemon over a hot crust, chicken and cheese.

1 tsp (5 mL) vegetable oil
1 pkg (13.8 oz/283 g) refrigerated pizza crust
2 cups (500 mL) diced or shredded cooked chicken
2 cups (500 mL) shredded cheddar and Monterey Jack cheese blend
2 plum tomatoes
1/4 medium red onion
1 medium avocado
1 lemon
6 slices bacon, thinly sliced, cooked and drained (optional, see Cook'’s Tip)

Steps:

  • Preheat oven to 425°F. Lightly brush Large Bar Pan with oil using Chef's Silicone Basting Brush. Unroll dough onto bottom of pan, gently stretching and pressing dough to cover bottom. Top crust with chicken and sprinkle with cheese. Bake 16-18 minutes or until crust is golden brown; remove from oven to Stackable Cooling Rack.Meanwhile, slice tomatoes in half lengthwise using Utility Knife; scrape out seeds and dice. Slice onion using Ultimate Mandoline fitted with thin slicing blade. Cut avocado in half using Utility Knife, avoiding pit; twist halves apart and remove pit. 2 Tablespoons olive oil
1 cup shredded Mozzarella cheese
½ cup grape tomatoes (halved)
½ avocado (diced)
3 strips bacon (cooked and crumbled)
1 boneless, skinless chicken breast (cooked and diced)
1 Tablespoon fresh parsley (chopped)
2 Tablespoons garlic aioli ((optional))

Steps:

  • Preheat oven to 350 degrees.
  • Brush flatbreads with olive oil, then top with cheese, tomatoes, avocado, bacon, and chicken.
  • Bake for 6-8 minutes, until cheese is melted and starts to brown.
  • Remove from oven and top with fresh parsley and garlic aioli. Serve warm.

Really nothing more than a traditional club sandwich with avocado, but it really makes a difference in texture as I have always found club sandwiches to be a little dry.

3 slices white bread
3 tablespoons mayonnaise
2 romaine lettuce leaves
4 slices roma tomatoes
1/2 avocado, sliced
4 slices crisp bacon
4 ounces chicken breasts, sliced
fresh ground black pepper
kosher salt

Steps:

  • Toast the bread in a toaster, or under a broiler on both sides.
  • Arrange 3 bread slices in a row. Spread 1 tablespoon mayonnaise over 1 side of each bread slice. Place a lettuce stack on top of the first bread slice, top with 2 tomato slices, and season with salt and pepper, to taste. Place 2 slices bacon over the tomatoes (broken to fit neatly if necessary) and top with the chicken (without letting any hang over the sides).
  • Add avocado slices & season with a pinch of salt and pepper, to taste. Repeat with the second bread slice. Carefully place the second layered bread slice on top of the first layered bread, chicken side-up. Cover with the third bread slice.
  • Pin the sandwich's layers together by piercing them with 4 frill picks or cocktail swords through the top bread slice, in 4 places in a diamond-like pattern, all the way to the bottom bread slice.
  • Using a serrated knife cut sandwich, diagonally, into 4 triangular pieces (each piece should be secured in the center with a pick or sword).

One product of my online interview with Wolfgang Puck was being given his pizza dough recipe to publish. I don't think this recipe is any kind of secret, and I'm sure it's been published many times, but I had never personally tried it, so I decided to do this recipe check out this iconic dough for myself.

Number Of Ingredients 7

1 (.25 ounce) package active dry yeast
1 teaspoon honey
1 cup Water, municipal
1 teaspoon kosher salt
5 tablespoons extra-virgin olive oil, divided
2 ¾ cups all-purpose flour, or more as needed
¼ cup cornmeal, or as needed

Steps:

  • Combine yeast, honey, and 1/4 cup warm water in a large bowl with a whisk. Let stand to dissolve, about 10 minutes.
  • Add salt, 1 tablespoon olive oil, remaining 3/4 cup warm water, and 1 cup flour to the mixture and stir until a batter forms. Add another 1 cup flour; stir to combine. Add 1/2 cup more flour and combine.
  • Turn dough out onto a surface dusted with 1/4 cup flour. Knead until a smooth, fairly firm, slightly sticky dough is achieved, adding more flour as needed.
  • Transfer dough to a lightly oiled bowl and cover with a damp towel. Let sit in a warm place until doubled in size, 30 to 40 minutes.
  • Turn dough out onto a lightly floured cutting board and pat down with your hand. Divide dough into 4 equal pieces. Stretch and fold each piece down and under, tucking as you go, to form pizza dough rounds.
  • Cover with a towel and let sit in a warm place until doubled in size, 20 to 30 minutes.
  • Preheat the oven to 450 degrees F (230 degrees C). Dust a baking sheet with cornmeal.
  • Transfer dough rounds to a lightly floured board and press each piece out to desired thickness, starting in the center, until 8 to 10 inches wide. Form a crust shape around the outer edges with your fingertips.
  • Transfer one round of pizza dough to the prepared baking sheet and brush with 1 tablespoon olive oil. Top with any sauce and toppings you like.
  • Bake in the lower rack of the preheated oven for 5 minutes. Move to the center of the oven and continue to bake until golden, about 10 minutes more. Repeat to bake remaining pizzas.
