This is the one recipe we always cook when camping, it's easy and very filling.

Number Of Ingredients 5

½ pound sliced bacon
4 cups potatoes, peeled and cubed
½ onion, chopped
6 eggs, beaten
1 cup shredded Cheddar cheese

Steps:

  • Cook bacon to desired doneness in a cast iron skillet over the slow burning coals of a campfire. Remove bacon from the skillet and set aside. Stir the potatoes and onion into the hot bacon fat. Cover, and cook until the potatoes are soft, about 10 to 12 minutes.
  • Crumble the bacon into the potatoes. Stir in the eggs, cover, and cook until set through, about 2 minutes. Sprinkle with the cheese, and allow to melt before serving.

Number Of Ingredients 8

1/4 cup butter, cubed
2 packages (20 ounces each) refrigerated shredded hash brown potatoes
1 package (7 ounces) frozen fully cooked breakfast sausage links, thawed and cut into 1/2-inch pieces
1/4 cup chopped onion
1/4 cup chopped green pepper
12 large eggs, lightly beaten
Salt and pepper to taste
1 cup shredded cheddar cheese

Steps:

  • In a deep 12-in. cast-iron or other heavy skillet, melt butter. Add the potatoes, sausage, onion and green pepper. Cook, uncovered, over medium heat until potatoes are lightly browned, 15-20 minutes, turning once., Push potato mixture to the sides of pan. Pour eggs into center of pan. Cook and stir over medium heat until eggs are completely set. Season with salt and pepper. Reduce heat; stir eggs into potato mixture. Top with cheese; cover and cook until cheese is melted, 1-2 minutes.

Breakfast is my favorite meal & this is probably my favorite breakfast dish...especially when we're camping. You can add or subtract whatever you like. This is for 2-3 persons, but you can adjust it to suit your needs. Tastes great topped with sausage gravy, too! NOT for the health conscience.

Number Of Ingredients 7

4 slices bacon, cut-up
1 medium potato, cooked
1/4 cup butter, NOT margarine
5 fresh mushrooms, sliced
3 tablespoons chopped onions
1 slice bread, crust tore-up (optional)
3 eggs, slightly beaten

Steps:

  • Be sure to stir occasionally during &/or between each step.
  • Thinly slice or shred potato & set aside.
  • Place cut-up bacon in a heavy skillet, along with half the butter & cook over medium-high heat until bacon starts to get limp.
  • Add onion & potaoes & season to taste. (I use LAWRY's Seasoned Salt & LAWRY's Seasoned Pepper)
  • Cook until the potaoes just start to brown.
  • Add sliced mushrooms & tore-up bread crust (I use the end pieces).
  • When all is at desired doneness, add remaing butter & the eggs.
  • Cook until eggs are cooked through.
  • Serve imediately -- ENJOY!
