Steps:

  • Place melon in a casserole dish.
  • Combine all the other ingredients,mix well.
  • pour over melon.
  • Bake 350 for 45 minutes to 1 hour.

6 to 8 large ripe peaches, peeled and sliced
2-1/2 tablespoons cornstarch
3/4 to 1 cup sugar
CRUST:
1 cup all-purpose flour
2 large egg yolks. room temperature
1/4 cup butter, melted
1 teaspoon baking powder
1 cup sugar
2 large egg whites, room temperature, stiffly beaten

Steps:

  • Combine peaches, cornstarch and sugar; place in a greased 13x9-in. baking dish. For crust, combine flour, egg yolks, butter, baking powder and sugar in a bowl. Gently fold in egg whites. Spread over peaches. Bake at 375° until the fruit is bubbling around edges and top is golden, about 45 minutes.

⅓ cup lemon juice
½ cup white sugar
1 tablespoon all-purpose flour
2 tablespoons butter, melted
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
½ teaspoon vanilla extract
1 (18.25 ounce) package white cake mix
½ cup butter, melted

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a medium bowl, mix together the cantaloupe, lemon juice, sugar, flour, 2 tablespoons melted butter, cinnamon, nutmeg and vanilla. Transfer to a 9 inch square baking dish, and spread the dry cake mix evenly over the top. Drizzle the remaining melted butter over the cake mix.
  • Bake for 45 minutes in the preheated oven, or until the top is golden brown.

4 cups chopped peeled seeded cantaloupe (abt 1 large)
4 cups chopped peeled pitted peaches (abt 4 med)
6 cups sugar
1/4 cup lemon juice
1 teaspoon grated lemon rind

Steps:

  • Combine cantaloupe and peaches in a Dutch oven; cook over medium heat, stirring constantly, 15 minutes or until there is enough liquid to prevent fruit from sticking. Add sugar and lemon juice, stirring well. Bring to a boil stirring constantly. Reduce heat, and simmer 30 minutes or until thickened. Add lemon rind, and cook 3 additional minutes, stirring constantly. Remove from heat; skim off foam. Pour hot jam into hot, sterilized jars, filling to 1/4-inch from top. Remove air bubbles; wipe jar rims. Cover at once with metal lids, and screw on bands. Process in a boiling-water bath 5 minutes. This recipe yields 6 half-pints.

1 teaspoon baking powder

  • Drain peaches, reserving 1/2 cup syrup for the sauce. In a large bowl, combine peaches, brown sugar, tapioca, cinnamon if desired, lemon juice and vanilla. 1 ripe cantaloupe, seeded, peeled, cubed (about 3-4 cups)
1 can(s) large, peaches - drained, 30 oz.
1/2 c sugar
1/4 tsp ground ginger
1/2 tsp nutmeg
1 tsp cinnamon
1 tsp vanilla
1/2 stick butter
1 pinch salt
1 stick butter (to be melted in pan during preparation)
TOPPING
1 c flour, self-rising
1 c sugar
1 c milk
1 tsp vanilla
1/4 tsp cinnamon

Steps:

  • 1. Combine all cobbler ingredients in a large saucepan. Cook until fruit is softened and sauce is slightly thickened. Remove from heat. Make sure you taste after combining and heating the ingredients. You may need to add more sugar or seasonings but it will all depend on your taste.
  • 2. Place 1 stick of butter in 13 x 9 pan and heat in 350 deg oven until melted. As this is melting, mix topping. Mix together all topping ingredients until smooth. If topping is too thick, add more milk until thinned.
  • 3. Pour fruit into the pan over melted butter. Pour topping over fruit. Sprinkle with sugar if desired.
  • 4. Bake at 350 deg until golden brown and bubbly (approx. 35 minutes).
  • 5. Remove from oven and serve while warm. Can top with whipped cream or ice cream.
