CAPE COD CRANBERRY PIE
A different sort of pie for those who don't like to use pie crust. This recipe is from Zola's Grille, Killington, Vermont.

Steps:
- Grease a 10-inch pie plate.
- Add cranberries and spread out evenly.
- Top cranberries with 1/2 cup sugar and pecans.
- In a mixing bowl, add the eggs.
- Gradually beat in 1 cup of sugar.
- Add the flour, butter, and shortening, beating until just smooth.
- Pour the batter over the cranberries.
- Bake at 325 degrees for 1 hour or until the top is golden.
- Serve warm with ice cream.

Steps:
- In a large mixing bowl, beat cream cheese until fluffy.
- In small mixer bowl, beat whipping cream, sugar and vanilla until soft peaks form.
- Gradually add to cream cheese, beating until smooth and creamy.
- Set aside a few whole cranberries from sauce for garnish.
- Fold remaining sauce into whipped mixture. Spoon into pi e crust. Freeze 4 hours until firm.
- Garnish with reserved berries.
- Remove from freezer 15 minutes before serving.

- 1. Chill small mixing bowl and beaters of electric mixer. In chilled bowl beat cream, sugar and vanilla on medium speed of electric mixer until soft peaks form. Set aside.2. In large mixing bowl beat cream cheese until fluffy. Gradually add cream mixture to cream cheese, beating until smooth.3. Reserve a few whole cranberries for garnish. Fold remaining cranberry sauce into cream cheese mixture. Spread in crust.4. Freeze at least 4 hours or until firm. Let stand at room temperature for 15 minutes before cutting. Garnish with reserved berries.*NOTE: Soften cream cheese in microwave on high for 15 to 20 seconds.

FAVORITE CRANBERRY MOUSSE
We live about 100 miles from Cape Cod, which is known for its cranberries. When we spent a weekend there, we toured the Cranberry World Visitors Center, which is where I found this recipe. When I made it for our fellowship group at church, everyone wanted the recipe. You'll be surprised it's so easy to make with just four ingredients.

- In a large saucepan, bring the cranberry sauce and juice to a boil; cook and stir until smooth. Stir in the gelatin until dissolved. Cool slightly; transfer to a bowl. Refrigerate for 1 hour or until mixture begins to thicken. , Fold in the whipped cream. Spoon into dessert dishes. Chill for 3-4 hours or until firm.
