THE PERFECT CAPPUCCINO
Steps:
- Gather the ingredients.
- Place the water into the boiler of your espresso machine.
- Place the 2 tablespoons (2 shots) of ground coffee into the portafilter.
- Tamp (press) the coffee down using a tamper. Do this 2 to 3 times to make sure the grounds are packed tightly.
- Place the portafilter into your espresso machine's group head and lock it in place by turning it to the right.
- Place a demitasse cup or the glass carafe that came with your espresso machine under the group head and pull the shot for 23 to 30 seconds, or until 2 ounces of espresso is yielded. Typically, there is a lever, switch, or button to start this process.
- Once the shot is pulled, foam the milk.
- Place the milk into either a glass measuring cup or a small metal pitcher.
- Insert the steam wand into the container with the milk, just under the surface of the milk.
- Engage the steam wand on your espresso machine. (You may need to read your espresso machine's manual for this, as each espresso maker is a little different.)
- Make sure to keep the tip of the wand toward the side of the container. This will create a vortex with the milk.
- Move the container higher, lower, closer, then further so that the steam wand can incorporate the air into the milk, making the foam. The bubbles should get smaller and smaller as you do this.
- Once the milk has foamed to double its size, turn the steam wand off.
- Top the espresso with foamed milk right after foaming. When initially poured, cappuccino is only espresso and foam, but the liquid milk quickly settles out of the foam to create the (roughly) equal parts foam, steamed milk, and espresso for which cappuccino is known.

- Position racks in the upper and lower thirds of the oven and preheat to 250 degrees F. Line 2 baking sheets with parchment paper. Fit a large pastry bag or large resealable plastic bag with a star tip.
- Beat the egg whites and cream of tartar in a large bowl with a mixer on medium speed until foamy. Increase the speed to medium high and beat until thick and opaque, about 1 more minute. Gradually add the sugar and beat until stiff shiny peaks form. Beat in 3/4 teaspoon vanilla. Transfer half of the meringue to a separate bowl; beat the espresso powder and the remaining 1/4 teaspoon vanilla into the remaining meringue.
- Holding the pastry bag in your hand, use a rubber spatula to spread the plain meringue on one side of the bag, filling the bag only half full. Turn the bag around and spread the coffee meringue on the other half of the bag. Twist the end of the bag so the 2 colors squish together. Pipe 1 1/2-inch meringues on the baking sheets, about 2 inches apart. Decorate with sprinkles.
- Bake, switching the pans halfway through, until the meringues are firm, about 2 hours. Turn off the oven and leave the meringues inside until dry and crisp, about 1 more hour.

- Melt chocolate in a microwave-safe glass or ceramic bowl in 15-second intervals, stirring after each interval, 2 to 3 minutes.
- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
- Whisk eggs and sugar together in a bowl. Stir in melted chocolate and butter.

- Make the knots: Put the melted butter in a bowl. Whisk the granulated sugar and espresso powder in another bowl.
- Butter a 12-cup muffin pan. Divide the dough into 12 pieces; roll each piece into an 8-to-9-inch rope. Dip 1 piece of dough in the butter, letting the excess drip off, then roll in the espresso sugar. Tie the dough into a knot. Place in a muffin cup with one end of the knot facing up. Repeat with the remaining dough. Let rise, uncovered, in a warm place until doubled in size, about 1 hour, 15 minutes.
- Preheat the oven to 350 degrees F. Bake the knots until puffed and golden brown, about 30 minutes. Transfer to a rack and let cool 10 minutes in the pan.
- Meanwhile, make the glazes: Whisk 1 cup confectioners' sugar and the espresso powder in a medium bowl; add 1/4 cup heavy cream and whisk until smooth, adding more cream if necessary. In a small bowl, whisk the remaining 1/4 cup confectioners' sugar with the remaining 2 tablespoons cream until smooth. Transfer the white glaze to a resealable plastic bag.
- Remove the knots from the pan and dip the tops in the espresso glaze; let set 5 minutes. Snip a small corner of the bag with the white glaze and pipe over the knots.
- Warm 1/2 cup water and the milk in a saucepan over low heat until a thermometer registers 100 degrees F to 110 degrees F. Remove from the heat and sprinkle the yeast on top, then sprinkle with a pinch of the sugar; set aside, undisturbed, until foamy, about 5 minutes.
- Whisk the melted butter, egg yolk and vanilla into the yeast mixture until combined. In a large bowl, whisk the flour, the remaining sugar, the salt and nutmeg. Make a well in the center, then add the yeast mixture and stir with a wooden spoon to make a thick and slightly sticky dough. Turn out onto a floured surface and knead until soft and elastic, about 6 minutes. Shape into a ball.
- Brush a large bowl with butter. Add the dough, turning to coat lightly with the butter. Cover with plastic wrap and let rise at room temperature until the dough is doubled in size, about 1 hour, 15 minutes.
- Turn the dough out of the bowl and knead briefly to release excess air; re-form into a ball and return to the bowl. Lightly butter a large piece of plastic wrap and lay it directly on the surface of the dough. Cover the bowl tightly with plastic wrap and refrigerate at least 4 hours or overnight.

- In a large bowl, dissolve yeast in warm water. Add the milk, potatoes, shortening, sugar, eggs, maple flavoring, salt and 2 cups flour. Beat until smooth. MAPLE-NUT COFFEE TWIST
This recipe is from Pillsbury Family Kitchens Cookbook. This is really delicous and makes a nice presentation. The dough is really easy to work with. I did need to add a couple more Tbsps of flour to the dough. This calls for a 12-inch pizza pan, but I'm sure a large cookie sheet would work just fine. :)

- In a small saucepan, heat milk and margarine until very warm (120*-130*F).
- In large bowl, blend warm liquid, 1 cup flour, sugar, salt, yeast, extract and egg at low speed until moistened.
- Beat 2 minutes at medium speed.
- By hand, stir in remaining flour to form a soft dough.
- Knead on floured surface until smooth and elastic, about 2 minutes.
- Place dough in greased bowl; turn greased-side-up.
- Cover; let rise in warm place until light and doubled in size, 45 to 60 minutes.
- In small bowl, combine filling ingredients, set aside.
- Grease (not oil) 12-inch pizza pan.
- Punch down dough; divide and shape into 3 balls.
- On floured surface, roll or press 1 ball of dough to cover bottom of prepared pizza pan.
- Place in prepared pizza pan.
- Brush dough with about 1/3 of melted margarine; sprinkle with 1/3 Filling.
- Repeat layer of dough, melted margarine and Filling.
- To shape place a glass about 2 inches in diameter in center of dough, (a shot glass works perfectly)
- With pizza cutter, cut from outside edge to the glass, forming 16 pie-shaped wedges.
- Twist each wedge 5 times. Remove glass.
- Cover; let rise until light and doubled in size, 30 to 45 minutes.
- Heat oven to 375*F.
- Bake 18 to 22 minutes or until golden brown.
- Cool 5 minutes; remove from pan.
- In small bowl, blend Glaze ingredients until smooth. Drizzle over warm coffee cake.

- In a large bowl, combine the milk and coffee granules. Add the pudding mix and beat with a whisk for 1 to 2 minutes, or until well blended.
- Place 2 tablespoons pudding in a medium bowl and divide the remaining pudding among 4 coffee cups or 4 to 6 individual glass dessert dishes.
