Technically speaking, this is a sandwich loaf pan. One where you'll pair the fluffy texture of the actual loaf cake with a filling of softly whipped cream and creamy caramel banana slices. One that you'll have to share with your friends over a coffee, or what have you.

4 eggs
½ cup sugar
salt
¾ cup flour
1 teaspoon butter
2 medium bananas, sliced
½ tablespoon brown sugar
1 cup whipped cream
1 tablespoon cocoa powder
1 tablespoon powdered sugar

Steps:

  • Fill a pot halfway with water, heat it over low heat and add a wok on top. Add the eggs and sugar to the wok. Stir until melted and even using a whisker.
  • Keep whisking while gradually adding the flour.
  • Line a loaf pan with parchment paper and transfer the mixture to it. Bake for 45 minutes at 360⁰F/180⁰C.
  • Coat an oven-proof skillet with butter, add the banana slices and sprinkle them with brown sugar. Bake for 20 minutes at 380⁰F/190⁰C.
  • Horizontally cut the loaf cake in two. Spread the lower half with 1/2 cup of whipped cream and place the baked banana slices on it. Spread the upper half with the remaining whipped cream and place it on top.
  • Add the cocoa powder and powdered sugar in a strainer. Strain over the loaf cake.

3 -4 large bananas
3/4 cup sugar
2 tablespoons unsalted butter, in 1 piece
1 large egg
1 large egg white
1 teaspoon pure vanilla extract
1 cup flour
1 teaspoon baking powder
1 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup vegetable oil

Steps:

  • Position a rack in the center of the oven and preheat to 325°F Grease a 5-by-9-inch loaf pan. Trim both ends off each of 3 bananas to fit crosswise in the pan; reserve the ends. Halve the long banana pieces lengthwise; peel and transfer to a plate.
  • In a large, heavy skillet, bring 1/4 cup sugar and 2 tablespoon water to a boil, without stirring. Cook until the water has evaporated and the mixture starts turning amber. Remove from the heat and swirl in the butter with a fork. Add the long banana pieces cut side down and cook over low heat for 1 minute; transfer to the prepared loaf pan, arranging them crosswise, cut side down. Drizzle the remaining caramel on top.
  • In a medium bowl, mash the banana end pieces to equal 1 cup (add more banana if necessary). Mash in the remaining 1/2 cup sugar. Beat in the whole egg, egg white and vanilla.
  • In a large bowl, whisk the flour with the baking powder, cinnamon and salt. Add the banana mixture and oil, whisk until blended. Scrape the batter over the bananas in the pan and bake until a toothpick inserted in the center comes out dry, 50 to 55 minutes. Let cool on a rack for 10 minutes; invert the cake onto a platter and let cool completely.

2 cups self-raising flour
1/2 teaspoon bicarbonate of soda
1 cup brown sugar, firmly packed
3/4 cup buttermilk
2 eggs
1 teaspoon vanilla extract
2 bananas, large & ripe & mashed (you need 1 cup)
1/2 cup firmly packed brown sugar
50 g butter, chopped
2 tablespoons milk
1/2 cup powdered sugar icing

Steps:

  • Preheat the oven to 170C/150C fan-forced.
  • Lightly grease a 6cm-deep, 10cm x 20cm (base) loaf pan. Line the base and sides with baking paper, allowing a 2cm overhang at long ends.
  • Sift flour and bicarbonate of soda into a bowl, add sugar and stir to combine. Place milk, eggs and vanilla in a jug and whisk to combine.
  • Fold milk mixture and banana into flour mixture and pour into a prepared pan.
  • Bake for 1 hour to 1 hour 15 minutes or until a skewer inserted in the centre of the cake comes out clean.
  • Stand cake in pan for 10 minutes.
  • Turn out on to a wire rack to cool.
  • To make the icing: Place the brown sugar, butter and milk in a saucepan over low heat. Cook, stirring, for 2 minutes (don't boil) or until sugar dissolves. Increase the heat to medium. and bring to boil.
  • Reduce heat to low. and cook for 2 to 3 minutes or until slightly thickened.
  • Remove from heat. Stir in icing sugar until smooth.
  • Cool for 10 minutes the spread loaf with icing.

½ teaspoon baking powder
½ teaspoon baking soda
1 teaspoon salt
1 cup butter
½ cup vegetable shortening
2 cups brown sugar
1 cup white sugar
4 ripe bananas, mashed
5 eggs
2 teaspoons vanilla extract
½ cup milk
1 cup chopped pecans
½ cup butter
¼ cup brown sugar
¼ cup white sugar
1 teaspoon vanilla extract
¼ cup heavy cream

Steps:

  • Preheat an oven to 325 degrees F (165 degrees C). Combine flour, baking powder, baking soda, and salt in a bowl. Set aside. Grease and flour a fluted tube pan.
  • Beat 1 cup of butter, shortening, 2 cups of brown sugar, and 1 cup of white sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color. Add the bananas, followed by the eggs one at a time, allowing each egg to blend into the butter mixture before adding the next. Beat in 2 teaspoons of vanilla extract with the last egg. Pour in the flour mixture alternately with the milk, mixing until just incorporated. Fold in the pecans; mixing just enough to evenly combine. Pour the batter into prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour and 20 minutes.
  • Meanwhile, prepare the glaze. Heat 1/2 cup of butter, 1/4 cup of brown sugar, 1/4 cup of white sugar, 1 teaspoon of vanilla extract, and heavy cream in a saucepan over medium heat. Stir continuously until the sugars have dissolved, then gently simmer for 1 minute. Pour over baked cake while still in the pan. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.

This is a recipe I tore out of a magazine. i made it this week, and it was so delicious! It disappeared very quickly, and I have been asked to make another. My kids loved it and took slices in their lunch boxes. Even my eldest, who is kinda fussy and never eats cake..just LOVED it!

2 cups self raising flour
1 teaspoon bicarbonate of soda
1/2 teaspoon ground nutmeg
1 cup pitted dates, finely chopped
2/3 cup brown sugar, firmly packed
3/4 cup orange juice
1 large egg
60 g butter, melted
1 cup ripe mashed banana

Steps:

  • Grease a 14cmx21cm loaf pan, line base and long sides.
  • Combine flour, bicarb, and nutmeg in a large bowl. Stir in dates and brown sugar. Make a well in the centre, add juice, butter, egg, and bananas. Mix with a wooden spoon until smooth. Pour mixture into prepared pan.
  • Cook at 180C for about 1 hour.
  • Stand cake in pan for 5 minutes before turning out on a rack.
  • Serve warm or cold, with a little butter.
