These caramels are easy and WONDERFUL for anytime of the year! Everyone loves them! I can't make enough of them. You can omit the chocolate and just have wonderful caramels.

1 cup butter
2 ¼ cups brown sugar
1 cup light corn syrup
1 (14 ounce) can sweetened condensed milk
1 teaspoon vanilla extract
1 pound milk chocolate
1 tablespoon butter

Steps:

  • Grease an 8 x 8 inch square pan.
  • In a heavy 4 quart saucepan melt butter over medium heat; add brown sugar, corn syrup and milk. Stirring constantly, heat to 242 to 248 degrees F (116 to 120 degrees C), or until a small amount of syrup dropped into cold water forms a firm but pliable ball. Remove from heat and stir in vanilla extract. Pour into prepared pan.
  • When caramel has cooled and set, cut into 1 inch squares. Chill in refrigerator until firm.
  • Melt chocolate with 1 tablespoon butter in the top of a double boiler or in a bowl in the microwave. Stir until smooth.
  • Dip caramel squares in chocolate and place on wax paper to cool.

These little gems were winners in a Good Morning America cookie contest. They're crunchy, chewy, delicious and look like they came from the best bakery in town. They're much easier to make than they look.

1/2 cup unsalted butter
2/3 cup sugar
1 large egg yolk
2 tablespoons milk
1 teaspoon vanilla
1 cup flour
1/3 cup unsweetened dutch process cocoa
1/4 teaspoon salt
1 large egg white, lightly beaten
1/2 cup finely chopped hazelnuts
10 plain caramels, unwrapped (1x1 1/2-inch each)
2 tablespoons heavy cream
3 ounces semisweet chocolate or 3 ounces bittersweet chocolate, finely chopped

Steps:

  • Cookies: Cream butter, sugar, egg yolk, milk and vanilla.
  • Sift in flour, cocoa and salt and beat on low speed until dough forms.
  • Wrap in plastic wrap and chill at least 30 minutes or until firm.
  • Roll dough into 1 T balls, coat with egg white, and roll in nuts.
  • Place 1 1/2" apart on greased cookie sheets.
  • Flatten centers of cookies with thumb, leaving a depression.
  • Bake at 350°, 10-12 minutes or until slightly puffed but centers are still soft.
  • Leave cookies on cookie sheet and immediately depress centers of cookies again (I use a wooden spoon handle end).
  • Move to wire racks and cool.
  • Filling: Microwave caramels and cream until melted and smooth.
  • Use a spoon and fill the centers of partially cooled cookies and then cool completely.
  • Chocolate Drizzle: Microwave chocolate until melted and place in resealable plastic bag.
  • Make a small cut in one corner and drizzle a narrow bead of chocolate over the cookies.
  • Chocolate will set in 30 minutes.

DRIZZLE:
3 ounces bittersweet chocolate, chopped
1 tablespoon butter
2 ounces white baking chocolate

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla. Combine the flour, cocoa and salt; gradually add to creamed mixture and mix well. Spread into a greased 13x9-in. baking pan. Chill 15 minutes., Meanwhile, for second layer, in a large bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla. Combine flour and salt; gradually add to creamed mixture and mix well. Gently spread over chocolate layer., Bake at 350° for 16-20 minutes until edges are golden brown. Remove from the oven; top with mints. Bake 1-2 minutes or until mints begin to melt; carefully spread mints evenly over the top. Cool completely., In a microwave, melt bittersweet chocolate and butter; stir until smooth. Drizzle or spread over bars. Grate white chocolate or make chocolate curls to decorate top. Chill until set. Cut into triangles.

30 caramels, halved and flattened
2 cups semisweet chocolate chips
1 tablespoon shortening
1/2 cup finely chopped pecans

Steps:

  • In a large bowl, cream butter and brown sugar until light and fluffy. Beat in vanilla. Combine flour and baking powder; gradually add to creamed mixture and mix well. , Roll into 1-in. balls. Place 2 in. apart on greased baking sheets; flatten slightly. Bake at 325° for 12-15 minutes or until golden brown. Remove to wire racks to cool., Place a half-caramel on each cookie. Melt the chocolate chips and shortening; drizzle over cookies. Sprinkle with pecans. Let stand until firm.

1 (18 ounce) package refrigerated sugar cookie dough
1/2 cup flour
3/4 cup finely chopped pecans
24 pieces milky way chocolate-covered caramel candies
6 pieces dove brand dark chocolate (optional)

Steps:

  • Preheat the oven to 350°F
  • Knead the cookie dough with the flour until smooth.
  • Divide the dough into 24 pieces.
  • Roll each piece into a 1 x 1½-inch oval.
  • Roll in the chopped pecans to coat, if desired.
  • Place the cookies on an ungreased baking sheet and bake until golden, about 12-15 minutes.
  • Remove from the oven, and immediately press one MILKY WAY®Chocolate Covered Caramel into the center of each cookie.
  • Microwave DOVE® Brand Dark Chocolate in a plastic bag for 10-seconds, or until melted.
  • Snip the corner tip of the bag and drizzle the chocolate over the cookies, if desired.
