Brazilian cheese bread is very easy to make, and features a chewy, cheesy, bready center, encased in a beautiful, thin, pastry crust. It also happens to be gluten free, thanks to tapioca flour, which is also responsible for the very unique texture. Happily, the ingredients are fairly inexpensive, which means you can play around with a few batches and see for yourself.

2 ¼ cups tapioca flour, or more as needed
⅔ cup milk
½ cup mild olive oil
1 teaspoon kosher salt
2 ounces freshly grated mozzarella cheese
2 ounces finely grated Parmigiano-Reggiano cheese
2 large eggs, beaten
1 pinch cayenne pepper

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Place tapioca flour in a mixing bowl. Combine milk, olive oil, and salt in a pan. Bring to a simmer over medium-high heat. Immediately remove from heat and pour into the bowl with the tapioca. Mix until a shaggy dough starts to form. Let rest for 5 minutes.
  • Add mozzarella and Parmesan cheeses, eggs, and cayenne. Stir with a fork until thoroughly combined. Use an ice cream scoop to portion dough onto a silicone-lined baking sheet. Poke down any jagged bits using a wet finger if desired.
  • Bake in the preheated oven until puffed and golden, about 20 minutes. Let cool for 5 minutes and serve warm.

u3 cups tapioca flour
1 cup grated Asiago cheese
1 cup milk
1 cup vegetable oil, plus for oiling the pan
1 tablespoon salt
1 teaspoon minced garlic
3 eggs

Steps:

  • Preheat the oven to 400 degrees F. Grease a 48-cup mini muffin pan with vegetable oil.
  • In a food processor, combine the tapioca flour, Asiago, milk, vegetable oil, salt, garlic and eggs. Process for 2 minutes, scraping down the sides of the bowl as needed.
  • Fill each mini muffin cup with 1 tablespoon of the mixture. Bake for 12 to 14 minutes, then remove from the oven and let stand for 2 minutes.
  • Remove the pao de queijo from the muffin pan and enjoy.

½ cup olive oil or butter
⅓ cup water
⅓ cup milk or soy milk
1 teaspoon salt
2 cups tapioca flour
2 teaspoons minced garlic
⅔ cup freshly grated Parmesan cheese
2 beaten eggs

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Pour olive oil, water, milk, and salt into a large saucepan, and place over high heat. When the mixture comes to a boil, remove from heat immediately, and stir in tapioca flour and garlic until smooth. Set aside to rest for 10 to 15 minutes.
  • Stir the cheese and egg into the tapioca mixture until well combined, the mixture will be chunky like cottage cheese. Drop rounded, 1/4 cup-sized balls of the mixture onto an ungreased baking sheet.
  • Bake in preheated oven until the tops are lightly browned, 15 to 20 minutes.

oil or butter, for the baking sheet
250ml whole milk
125g unsalted butter
1 tsp salt
300g tapioca flour
2 eggs
100g parmesan, grated

Steps:

  • Heat the oven to 220C/200C fan/gas 7. Oil or butter a baking sheet and set aside.
  • Heat the milk, butter and salt in a medium saucepan and bring to a boil. Remove from the heat and add the tapioca flour. Stir vigorously, then leave to cool a little.
  • Pour the dough into a standing mix to beat the dough until its cool, or use a wooden spoon and beat by hand. Beat the eggs in one at a time, waiting until each is completely incorporated before adding the next. When the dough is glossy and mixed, add the parmesan. Beat again until mixed.
  • Spoon the dough onto the baking sheet in 1 tbsp balls, 5cm apart. Bake for 30 mins until crisp and golden. Remove from the oven and eat while still warm.

One of my favorite snacks from Brazil. It is an easy and quick recipe which does not require a lot of skill. But believe me the outcome is something spectacular.

500 g Manioc starch sour (polvilho azedo)
350 g Manioc starch sweet (polvilho doce)
400 g Milk
60 g Oil (Sunflower)
100 g Butter
20 g Fine Salt
4 Eggs
300 g Cheese

Steps:

  • Put together in a saucepan the milk, the butter, the oil, the salt and bring to a boil;
  • Weight the two different types of manioc starch (sweet and sour) and mix them together;
  • When the milk came to a boil take it from the fire and mix in the manioc starch. Mix well until you can't see any loose starch but the mixture is still a little crumbly;
  • Brake the eggs in a bowl and mix them with a fork;
  • Make sure that the manioc mixture is not too hot (you do not want to make scrambled eggs) and mix in the eggs until it becomes a smooth dough. I prefer using my hands to mix everything well. Instead of mixing in your saucepan you can also mix the dough on your countertop;
  • When the dough is well mixed, wrap it with plastic film and let it cool at ambient temperature;
  • While the dough is cooling down, grate the cheese (preferable parmesan);
  • When the dough is cooled down, mix in the grated parmesan cheese until it is well integrated;
  • Preheat the oven at 180ºC;
  • Now you can start rolling your cheese breads. So they get all the same size and cook evenly I suggest you to use your kitchen scale, but that is not a must. The perfect size in my opinion, after experimenting a lot is 10g. When you think that the tough is sticking to your hands, you can rub a bit of oil on your hands while handling the dough. Put the rolled cheese bread on parchment paper with some space in between, because they will still grow a little bit in the oven;
  • To cook them just place on a tray with parchment paper in the oven and bake them for approximately 15min at 180ªC. Watch them from time to time, depending on your oven they can need a little less or more time. When they start changing their color, they are perfect and you can pull them out - Enjoy them while they are fresh, crispy on the outside and soft and cheesy on the inside;

1 cup milk
2/3 cup canola oil
1 1/2 teaspoons salt
4 cups tapioca flour
5 eggs
1 1/2 cups parmesan cheese, grated

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Put the tapioca flour in a large bowl. Set aside.
  • Pour canola oil, water, milk, and salt into a small saucepan, and place over high heat. When the mixture comes to a boil, remove from heat immediately, and stir in tapioca flour, mixing with a wooden spoon. Set aside to rest for 20 to 25 minutes.
  • Stir the cheese and eggs into the tapioca mixture until well combined. The mixture will be chunky. With wet hands, form 1 TBSP-sized balls of the mixture onto an ungreased baking sheet.
  • Bake in preheated oven until the tops are lightly browned, 20 to 25 minutes.
  • Enjoy !
  • Note: The dough can be kept in the refrigerator for up to 3 days in an airtight container. The balls can be frozen and taken to the oven right from the freezer.
