CARAMEL-DIPPED MARSHMALLOWS

Steps:
- Fill a glass with ice water and set aside. Line a cookie sheet with waxed paper and sprinkle it generously with confectioners' sugar; set aside.
- Combine the brown sugar, sorghum and butter in a saucepan over medium. Heat until the butter and sugar melt, 3 to 5 minutes. Add the condensed milk and bring to a simmer; cook for about 1 minute. Lower the heat and continue to cook, stirring constantly, until the mixture registers 240 degrees F on a candy thermometer or until a soft ball forms when a spoonful of the caramel is dropped into the glass of ice water, 15 to 20 minutes. Let stand for 5 minutes.
- Skewer the marshmallows and dip them in the caramel so that the sides are covered but the tops are not. Place on the prepared cookie sheet to cool. Before the caramel sets, sprinkle the dipped sides with a little flaky sea salt.
- Serve immediately or wrap each candy in waxed paper to enjoy at a later time--if it's really humid where you are, they won't hold up for long!

- Line a baking sheet with waxed paper; set aside. Place nuts in a shallow dish. In a large microwave-safe bowl, combine caramels and water. Microwave, uncovered, on high for 30-90 seconds or until melted, stirring twice., Dip each marshmallow into melted caramel, then roll in pecans. Place on prepared baking sheet. Let marshmallows stand until set.

- Microwave the caramels, milk and butter in microwaveable bowl on HIGH 2 minutes or until caramels are completely melted and sauce is well blended, stirring after each minute. I have found that allowing this to cool slightly allows for a better adhesion.
- Insert a lollipop stick into 1 marshmallow; dip in caramel sauce, then in nuts. Place on waxed-paper covered baking sheet.
- Repeat with remaining marshmallows, sauce and nuts. Let stand 20 minute or until caramel coating is firm.

- Just roll a marshmallow in real butter.
- Then put the marshmallow on the end of a long sharpened stick.
- Then roast it (turning marshmallow slowly) over hot campfire coals until crispy golden brown (Caramelly! Mmmm...).
- May take a few marshmallows to get it just right- but you'll really enjoy trying!

- Chop the almonds and bake in a 350*F oven for 2-5 minutes. Check after 2 minutes, and stir around if necessary. The nuts are done when they are fragrant and slightly golden. Set aside to cool.
- Unwrap caramels and place in a bowl. Add heavy cream and microwave at 50% power for 2-4 minutes until the caramels are mostly melted. Stir as necessary until the cream is fully incorporated and the caramel is smooth.
- Add marshmallows to cookie sticks by first dipping the stick in the (melted) caramel just a bit, then insert into the marshmallow. You could dip the stick in melted chocolate instead, either will help the marshmallow stay on the stick.
