SPICY CORNBREAD MUFFINS



Spicy Cornbread Muffins image

2 (8 1/2-ounce) boxes corn muffin mix
1 cup milk
2 eggs, beaten
1 (8 3/4-ounce) can corn kernels, drained
1 canned chipotle pepper in adobo sauce, minced
1/2 cup grated Monterey jack

Steps:

  • Preheat oven to 375 degrees F.
  • In a bowl, mix together all of the ingredients until just combined. Do not overmix. Divide the batter evenly in a 12-portion nonstick muffin tin. (If using a tin that isn't nonstick, spray with cooking spray).
  • Bake in the center of the oven until just golden and muffin springs back when gently pressed, about 20 minutes.
  • Cool for 10 minutes in the pan, then remove and serve warm.

1 cup all-purpose flour
1/2 cup cornmeal
2 tablespoons sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
Pinch salt
1 egg, beaten
1/2 cup fresh or frozen corn
1/2 cup buttermilk
1/4 cup vegetable oil
1/4 cup shredded cheddar cheese
4 teaspoons diced pimientos
4 teaspoons salsa

Steps:

  • In a large bowl, combine the flour, cornmeal, sugar, baking powder, baking soda and salt. In another bowl, combine the remaining ingredients. Stir into dry ingredients just until moistened. Fill paper-lined or greased muffin cups two-thirds full. Bake at 375° for 20-22 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing to a wire rack.

One 15-ounce can white corn, drained
One 4-ounce can chopped green chiles, drained
One 2 1/2-ounce can sliced black olives, drained
4 green onions, minced
2 medium tomatoes, finely chopped
2 jalapeno peppers, seeded and chopped
3 tablespoons white vinegar
1/3 cup olive oil
1/4 teaspoon salt
1 tablespoon finely chopped fresh cilantro
Tortilla chips, for dipping

Steps:

  • Mix the corn, chiles, olives, onions, tomatoes, jalapenos, vinegar, oil and salt in a medium bowl and chill in the refrigerator for at least 1 hour. Just before serving, add the cilantro. Serve with your favorite tortilla chips.

1 cup all-purpose flour
1 cup cornmeal
3 tablespoons sugar
3 teaspoons baking powder
1/4 teaspoon salt
3/4 cup chunky salsa
1/2 cup half-and-half cream
6 tablespoons butter, melted
1 large egg, lightly beaten

Steps:

  • In a large bowl, combine the flour, cornmeal, sugar, baking powder and salt. In another bowl, combine the salsa, cream, butter and egg. Stir into dry ingredients just until moistened., Fill greased muffin cups three-fourths full. Bake at 400° for 15-18 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.

My mom used to make these to go with her chili on cold days. They are spicy, cheesy corn bread muffins that are excellent. I hope you enjoy them too. You can also use montery jack cheese instead of cheddar cheese. Your favorite salsa works best in these and i have found that home made salsa is the best at making these unbelievable.

2 cups cornmeal mix
1 1/2 cups milk
1 egg
1/4 cup vegetable oil
1 1/2 cups sharp shredded cheddar cheese
2/3 cup mild salsa, drained
1 teaspoon hot sauce (optional)
cooking spray
1/2 cup shredded cheddar cheese

Steps:

  • Preheat oven to 450 degrees F.
  • Grease muffin pan with cooking spray.
  • Mix egg, milk, cornmeal and oil together in a bowl.
  • Fold in 1 1/2 cup cheese and salsa.
  • Add hot sauce for a spicier muffin.
  • Bake at 450 for 20-25 minutes.
  • During the last 5 minutes sprinkle the tops of the muffins with shredded cheddar cheese.
  • Remove from oven and let cool for 5 minutes before serving.

1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground chili powder (optional, ancho or chipotle)
1/4 cup finely chopped green onion, include green tops
1/4 cup red onion (grated)
3/4 cup monterey jack cheese
1/4 cup cilantro, fresh chopped

Steps:

  • Preheat oven to 400 degrees. Spray muffin pan with cooking spray. (12 cup).
  • In mixing bowl, combine buttermilk, brown sugar, sour cream, egg, and oil until blended.
  • In another mixing bowl, combine cornmeal, flour, baking powder, baking soda, salt, and chili powder.
  • Add dry ingredients to buttermilk mixture and fold until just blended. (don't stir to much!)
  • Fold in onions, cheese, and cilantro.
  • Divide batter among muffin cups (3/4 full).
  • Bake 15 minutes. (firm to the touch)
  • Let cool in pan for a brief time, (5 minutes) and serve warm.
