Steps:
- Cook your bacon over medium heat on your stove until crisp, drain and crumble
- In a different skillet, brown your beef and sausage over medium heat
- Toss your onion in with your meat mixture and cook until the onions are tender, drain
- Put your meat and onion mixture and your bacon in your crock pot
- Pour your undrained pork and beans, undrained pinto or chili beans and the rest of your ingredients to your crock pot
- Give it all a gentle stir
- Cover and cook on high for an hour. After an hour reduce heat to low and cook, covered, for an additional 2-4 hours
- Give it a taste and adjust any seasonings to match your preferences

- Season ground beef with salt and pepper to taste then cook/crumble over high heat in a large skillet with sausage and onions. Drain fat.
- Combine barbeque sauce, ketchup, brown sugar and remaining spices then mix well. Pour sauce over meat then stir well. Reduce heat to low.
- Open cans of beans then pour off any liquid that's settled at the top (there's typically quite a bit). Add beans to meat mixture then gently stir to incorporate.
- For Stovetop: Cook, uncovered, over low heat for 20 minutes or until simmering.
- For Crock Pot: Cook on low for 4 hours or high for 2 hours (or until simmering) then switch to "keep warm" setting.

- Add the bacon to a large non-stick skillet, and fry until crispy- stirring as needed.
- Add the ground beef & diced onion to the skillet. Cook until the ground beef is browning, breaking/crumbling up as it cooks.
- Drain the mixture of any excess grease, and add the prepared beef mixture to the bowl of your slow cooker.
- Pour the (undrained) pork & beans into the bowl of your slow cooker, then add the other beans that have all been drained & rinsed.

- Decide if you are going to make them in a slow cooker or bake in the oven. You can use a deep casserole dish or large pot like a dutch oven. I like a large heavy cast iron pot so I can cook in it and finish baking all in one. Slow cookers are great for parties to keep them warm for several hours.
- Chop the sliced uncooked bacon into small pieces, over medium heat, brown the bacon in a heavy cast-iron skillet or a large cast iron dutch oven on the stove top using a wooden spoon. Tip, you can cut the bacon into small pieces with clean kitchen scissors right into the pot-I find this faster!
- Remove the crispy cooked bacon to a small bowl with a slotted spoon. Don't remove the bacon drippings from the pan. Next add the chopped onion and brown for 5-6 minutes until translucent, add the minced garlic, stir for one minute.
- Next, brown the ground beef, cook for 6-8 minutes. Next, add the bacon, back in with the cooked ground beef, onion, and garlic.
- Next, add 3 cans of baked beans (don't drain), 2 cans of kidney beans (drain), 1 can of cannellini beans (drain), and 2 cans of black beans (drain).
- Add the remaining ingredients; brown sugar, cider vinegar, ketchup, and yellow mustard. Stir all the ingredients well to combine.
- Place into the slow cooker or large dutch oven or large deep casserole dish. The baked beans usually doesn't all fit in one standard 9 x 13, you need a deeper dish.
- Cook in slow cooker crockpot on low for 2 hours OR bake 350 degrees for 1 1/2 hours in a large covered dish. Serve hot.

COWBOY BEANS (CROCK-POT)
Great and easy way to make a lot of tasty beans! The best thing about this recipe is its versatility- lightly mashed its great served with bbq or added to corn and rice (bean corn and rice salad). Great for potlucks and this can be dressed up or down to your liking. This is also great in the layered dips instead of canned (eww) refried beans. I do several batches at one time to freeze for later.

- Rinse and drain picking out all the rocks/debris/skins -- Cover with water to soak overnight.
- Dump water and rinse again. Put garlic and onion in the crockpot add beans and water (or broth). Cook on low for about 9 hours- they need to be a bit on the firm side but not crunchy.
- After the beans reach the right consistency, drain and remove the garlic- you can either toss them or mash them and reserve to add to the bacon fat in the next step. Cook the bacon either on the stove or in the oven so that the fat can be reserved and bacon crumbled.
- Put bacon fat in the bottom of a heavy pot- medium heat (if you like your beans a bit spicy you can saute minced jalapeno to the bacon fat before adding beans- I love to add tomatillos and jalapenos). Add all the beans and start mashing with a potato masher. Add the beer and keep mashing. When it is as mashed as you like lower the heat and cook off the beer stirring occasionally. Season to taste.
- Top with crumbled bacon, cheese, pico or just go crazy.

- Place the dried navy beans in a large pot covered by a few inches of water and leave to soak overnight. Drain the beans then place them back in the pot with fresh water and bring to a boil. Simmer the beans for one hour, or until tender, then drain, reserving all the liquid. Preheat your oven to 325 degrees F. In a 6 qt Dutch oven fry the bacon until crispy. Add the onions and cook until soft and translucent, stirring often. Add the garlic and cook for one minute. Add ground beef and cook until the beef is no longer pink. Drain the fat from the pan. Stir in the BBQ sauce, molasses, brown sugar, Worcestershire sauce, smoked paprika, and salt. Add 2 cups of the reserved bean water and all the beans. - 1. In large skillet over medium heat cook bacon until it starts to crisp on the edges. Add ground beef and onion; cook until beef is browned and bacon is crispy. Add ham and cook another 1-2 minutes to get it a little crispy. Add garlic and cook for 30 seconds. Remove from heat, drain any excess grease and add to crock pot.
