These Salted Caramel Turtle Fudge Bars are crunchy, creamy, and chewy! And the best part is they're so easy to make.

1/2 cup unsalted butter, at room temperature
1/2 teaspoon vanilla extract
1/4 cup confectioners' sugar
1/4 teaspoon salt
1 cup all-purpose flour
16 ounces semi-sweet chocolate, finely chopped
(1) 14 ounce can sweetened condensed milk
2 and 1/2 tablespoons unsalted butter, cut into small bits
1 teaspoon pure vanilla extract
1/2 cup salted caramel sauce
1/2 cup toasted pecans, roughly chopped
1 teaspoon flaky sea salt

Steps:

  • Preheat oven to 350 degrees (F). Line an 8x8-inch baking pan with parchment paper, allowing two of the sides to overlap. Spray the parchment - and any exposed pan - with non-stick baking spray; set aside.
  • In the bowl of a stand mixer fitted with the paddle attachment, or in a large bowl using a handheld electric mixer, beat the butter, vanilla extract, confectioners' sugar, and salt until light and fluffy; about 2 to 3 minutes. Gradually beat in the flour, mixing just until combined. The mixture will be a little crumbly.
  • Dump the mixture into the prepared pan and spread (or press firmly, if need be) it into an even layer. Bake for 14 to 15 minutes, or until lightly browned. Set aside to cool while you prepare the fudge topping.
  • In a microwave-safe bowl, combine the chopped chocolate, sweetened condensed milk and butter. Microwave, uncovered, on low, in 30 second increments, stirring in between each increment, until the chocolate is completely melted; stir mixture smooth. Stir in vanilla extract. Spread mixture over the shortbread, smoothing with a spatula into an even layer. Pour salted caramel on top of the chocolate mixture, then sprinkle with the toasted pecans. Refrigerate until firm; about 2 hours. Cut into small squares and serve.

12 oz semi sweet chocolate chips, about 2 cups, divided
2 tbsp shortening, divided
11 oz bag caramels
2 tbsp butter
2 tbsp water
1 cup chopped pecans
sea salt

Steps:

  • 1. Line an 8×8 pan with parchment paper or aluminum foil.
  • 2. Place half of the chocolate chips and shortening in a microwave safe bowl. Microwave in short intervals of about 30 seconds at a time, until melted and smooth.
  • 3. Pour chocolate mixture into pan and spread into an even layer. Refrigerate until firm.
  • 4. Melt caramels, butter and water in a pan over low to medium heat until melted and smooth.
  • 5. Stir in chopped pecans.
  • 6. Remove pan from refrigerator and spread caramel mixture evenly over the chocolate layer.
  • 7. Place pan back into refrigerator until tacky, about 15 minutes.
  • 8. Place remaining half of the chocolate chips and shortening in the microwave safe bowl. Microwave in short intervals of about 30 seconds at a time, until melted and smooth.
  • 9. Pour chocolate mixture over caramel and spread into an even layer. Place in refrigerator until firm.
  • 10. Cut into squares.

3/4 cups butter (softened) ((169 grams))
1/2 cup brown sugar packed ((110 grams))
2/3 cup butter ((150 grams))
1 cup coarsely chopped walnuts, pecans, or hazelnuts ((150 grams))
1 cup milk chocolate chips ((180 grams))

Steps:

  • Pre-heat oven to 350°.
  • In a medium bowl whisk together the flour and sugar, with a pastry blender or fork mix in butter until it resembles coarse crumbs. Press onto the bottom of an ungreased 9 inch (23 cm) square cake pan ( I used a spring form pan or line the pan with parchment paper for easy removal). Bake for approximately 15 minutes.

1 stick of butter, melted
1 package (16 ounce) vanilla wafers
1 1/2 cups semisweet chocolate chips, plus more for sprinkling on top
1 package (12 ounce) caramels
2 tablespoons heavy whipping cream
2 teaspoons coarse sea salt
1 cup pecans, chopped

Steps:

  • Instructions Preheat the oven to 350 degrees. Line a square baking pan with parchment paper and set aside (my pan is about 8x8). Crush the vanilla wafers and press firmly into the bottom of the baking dish. Pour the melted butter over the top of the vanilla wafers. Melt the chocolate chips with 2 teaspoons of vegetable oil and pour over the vanilla wafer layer. In a medium saucepan over low heat, melt the caramels with the whipping cream until smooth and creamy, add the sea salt and mix well. Pour the salted caramel over the chocolate layer. Sprinkle the chopped pecans. Add a few pinches more of coarse sea salt and a handful of chocolate chips over the top of the pecans. Bake for 15 minutes at 350 degrees. Cool in the refrigerator for at least 2 hours before cutting into squares.

1 ½ cups all-purpose flour
1 ½ cups brown sugar, divided
½ cup butter, softened
1 cup pecan halves
⅔ cup butter
1 cup milk chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine flour, 1 cup brown sugar, and softened butter in large mixer bowl. Beat at medium speed for 2 to 3 minutes or until mixture resembles fine crumbs. Pat mixture evenly onto bottom of ungreased 13x9-inch baking pan. Sprinkle pecans evenly over crumb mixture.
  • Combine 2/3 cup butter and remaining 1/2 cup brown sugar in small saucepan. Cook and stir over medium heat until entire surface is bubbly; cook, stirring constantly, 1/2 to 1 minute more. Pour into pan, spreading evenly over crust.
  • Bake in preheated oven until entire surface is bubbly, 18 to 20 minutes. Remove from oven; immediately sprinkle with chocolate pieces. Let stand 2 to 3 minutes to allow chocolate to melt; use a knife or small spatula to swirl chocolate slightly. Cool completely in pan on a wire rack. Use sharp knife to cut into 48 bars.

1 (14 ounce) package individually wrapped caramels
1 (12 fluid ounce) can evaporated milk
1 (18.25 ounce) package chocolate cake mix
6 tablespoons butter, melted
1 cup semisweet chocolate chips
¼ pound whole pecans

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan. Set aside.
  • Unwrap caramels and place in saucepan with 2 Tablespoons evaporated milk. Melt over medium to low heat, stirring constantly.
  • In a large bowl, combine the remaining evaporated milk, dry cake mix, and melted butter. Stir until well blended. Spread half of this mixture in the prepared pan. Bake for 10 minutes.
  • Remove brownies from oven. Sprinkle chocolate chips and drizzle melted caramels over the top. Drop remaining cake mixture by teaspoonfuls over all. Return to oven for 20 minutes. Garnish with whole pecans if you'd like.

1 cup pecan halves
TOPPING
2/3 cup butter, cubed
1/2 cup packed brown sugar
1 cup semisweet chocolate chips

Steps:

  • In a large bowl, beat butter and sugar until smooth. Gradually add flour; beat until crumbly. Press firmly into an ungreased 13-in. x 9-in. baking pan. Arrange pecans over crust. , In a small heavy saucepan, combine butter and brown sugar. Bring to a boil; boil for 1 minute or until smooth, stirring constantly. Pour over pecans. , Bake at 350° for 18-22 minutes or until bubbly. Sprinkle chocolate chips on top; Cool in pan on a wire rack for 3 minutes. Spread chocolate but allow some chips to remain whole. Cool completely; cut into small squares.

The caramel stays nice and chewy, even straight out of the refrigerator, so consider yourself warned: This is going to call to you at all hours.

1/2 cup butter
1 cup brown sugar
1/4 cup honey
7 ounces sweetened condensed milk (half of a 14 ounce can, just over 1/2 cup)
1/8 teaspoon kosher salt
1/2 teaspoon vanilla
2 cups pecan halves
2 cups chocolate chips
1 teaspoon coconut oil

Steps:

  • Line a large baking sheet with parchment paper and spread the pecan halves across the paper in a single layer. Set the tray of pecans near the stove. Combine the butter, sugar, honey, milk and salt in a heavy bottomed saucepan or deep skillet over medium heat. When the mixture has melted together and is smooth, increase the heat to medium high and continue stirring constantly with a heat-proof spatula or wooden spoon. The mixture should come to a rolling boil. Let it cook until the temperature reaches 230-235 degrees. Remove from heat and stir in the vanilla.
  • Pour the caramel mixture over the pecans in an even layer. Use a spatula to spread it across if needed. Chill in the refrigerator for 30 minutes or so, until the caramel is cool. Melt the chocolate and the oil in a small mixing bowl in the microwave, 50% power for 2-2 1/2 minutes, stopping to stir after the first minute and then every 30 seconds as needed. When most of the chocolate has melted and you are able to stir it, remove from the microwave and stir until smooth. It will continue melting as it rests.
  • Pour the chocolate over the top of the caramel and pecans and spread across the caramel with a spatula. Chill in the refrigerator an additional 30 minutes, until the chocolate is firm. Remove from the refrigerator and use the parchment paper to lift the bark onto a cutting board. Use a sharp knife to slice into pieces. Place in an airtight container and store in the refrigerator. Enjoy!
