CLASSIC TAPIOCA PUDDING
A classic tapioca pudding recipe that requires a lot of attention, but it's worth it. Tapioca pudding is a great comfort food and can be served warm or cold.

- Stir together the milk, tapioca, sugar, and salt in a medium saucepan. Bring the mixture to a boil over medium heat, stirring constantly. Reduce heat to low; cook and stir 5 minutes longer.
- Whisk 1 cup of the hot milk mixture into the beaten eggs, 2 tablespoons at a time until incorporated. Stir the egg mixture back into the tapioca until well mixed. Bring the pudding to a gentle simmer over medium-low heat; cook and stir 2 minutes longer until the pudding becomes thick enough to evenly coat the back of a metal spoon. Remove from the heat and stir in the vanilla. The pudding may be served hot or poured into serving dishes and refrigerated several hours until cold.

- In a saucepan, combine the tapioca and milk. Set aside for 5 minutes. Add the brown sugar, salt and egg yolks, mix well. Cook on low heat; stirring often, for 15 to 20 minutes, until the mixture begins to bubble and thicken. The tiny pearls of tapioca will become more visible as the cook. Remove from the heat and stir in the butter until it melts. Add the vanilla. The pudding will continue to thicken as it cools. Pour equal amounts into 4 serving cups. Chill for about an hour until cold.
HOMEMADE TAPIOCA PUDDING WITH CARAMEL
This is an easy, creamy old-fashioned tapioca pudding recipe flavored with caramel.

Steps:
- Place the tapioca pearls into a colander and rinse them in cold water. Place the pearls into a large mixing bowl.
- For the best results, soak tapioca pearls overnight in a bowl of water. Be sure to cover the bowl with plastic wrap.
- Drain the pearls.
- Use a double broiler, or two different-sized saucepans like I did in the photo above.
- Add milk, caramel, vanilla, and salt to double broiler and heat them on low heat until the mixture is warm.
- Add tapioca pearls and turn the heat up to medium-low until tiny bubbles appear.
- Do not let the mixture to a full boil. Turn the heat back to low once you see the tiny bubbles.
- In a small bowl, add egg yolks and sugar.
- Mix well. Now you need to temper the egg yolks. Separate the eggs, putting the yolks into a small bowl
- Use a large spoon to scoop up a bit of the hot tapioca mixture.
- Add the tapioca mixture very slowly to the egg and sugar mixture while whisking quickly to blend it.
- Add a little more tapioca mixture and repeat twice more. Now you can mix the egg yolk mixture into the pudding.
- Pour egg mixture into tapioca mixture and whisk quickly to blend it all in.
- Cook on low, uncovered for 15 minutes. Be sure to use a wire whisk to stir the mixture frequently.
- Serve warm or cold.

Chocoholic? After eating this rich chocolate pudding you'll question the integrity of box puddings! Use dark, semisweet, or milk chocolate, whatever suits your taste buds! You may want to use a bigger saucepan, I think its easier to mix in. A whisk would beat a spoon by far (no pun intended). If this dish isn't rich enough for you, you could try using chocolate milk, but any milk is fine: skim, 1%, 2%, whole, even soy milk. Same thing with the chocolate; use whatever suits your taste buds: dark, semisweet, or milk chocolate.

CARAMELIZED RICE PUDDINGS
A kitchen torch is an inexpensive, handy tool for quickly caramelizing sugar into crackled tops for these dense puddings made with Arborio rice. If you don't have a kitchen torch, you can brown tops under the broiler, but the sugar may not melt completely.

- Preheat oven to 350 degrees. Put milk, rice, and vanilla bean and seeds into a medium saucepan. Bring to a simmer. Cook, stirring occasionally, until rice has absorbed most of the liquid, 15 to 20 minutes. Remove from heat. Discard vanilla bean.
- Whisk cream, granulated sugar, salt, yolks, and cinnamon in a bowl. Pour into rice mixture, stirring constantly. Return to heat; bring to a simmer. Divide among four 6-ounce ramekins set in a roasting pan; add boiling water halfway up sides.
- Bake until almost set, 15 minutes. Let cool 10 minutes.
- Sprinkle tops with raw sugar, dividing evenly. Using a kitchen torch, caramelize sugar. Sprinkle with cinnamon.
COCONUT-LEMONGRASS TAPIOCA WITH CARAMELIZED CITRUS
Bouncy tapioca pearls, made from cassava, a West African staple, are paired with a soothing coconut-lemongrass broth and caramel-coated citrus slices. The fruit can easily be substituted with whatever is in season, such as raw persimmons, poached pears or caramelized apples. The crushed pistachios are optional but add a welcome pop of crunch and color. Serve as a comforting dessert or a casual midday snack.

- In a small pot, bring 3 cups of water to a boil and add 1/4 teaspoon of salt. Add the tapioca pearls and simmer gently over medium-low heat, stirring frequently until the tapioca is softened and almost all the way translucent, 12 minutes.
- Reduce the heat to low, cover the pot and allow the tapioca to steam and cook through completely, 4 minutes. Transfer to a bowl, cover it and refrigerate until ready to serve. You can prepare the tapioca up to 3 days in advance and store it in the refrigerator.
- Wash out the pot and pour in the coconut milk. Add the lemongrass, the ginger and 1 tablespoon maple syrup. Bring up to a simmer over medium heat. Remove from heat and zest the lime into the milk. Allow the infused milk to steep while you prepare the fruit and the caramel.
- Remove the tops and bottoms of the citrus by cutting the ends with a sharp knife so each fruit sits flat on your work surface. Cut the citrus peels off into strips, running your knife down the length of the fruit and carefully removing the white pith as you slice. Cut each fruit crosswise into 1/2-inch-thick rounds and remove any visible seeds.
- Make a caramel: Heat a large (12-inch) skillet over medium. Add the sugar and cook, stirring frequently, until the sugar melts and forms a light golden syrup, 5 to 7 minutes. Cook the syrup until deep golden brown, about 2 minutes more, lowering the heat slightly if necessary to avoid scorching. Stir in the remaining 3 tablespoons maple syrup, squeeze in the juice of the lime and add remaining 1/4 teaspoon of salt. Remove from heat and carefully add the fruit, a couple of pieces at a time, swirling the pan to coat the pieces in syrup. The hot syrup may bubble and splatter, so be careful here. If the caramel forms hard clumps around the citrus slices, return the skillet to heat over medium-low and continue to cook, swirling the caramel around the citrus pieces, until any hard clumps dissolve, 2 minutes.
- Using a fine mesh sieve, strain the coconut milk into a medium bowl, pressing down on the aromatics in the sieve before discarding.
- To serve, scoop a few spoonfuls of the tapioca into shallow bowls. Ladle the infused coconut milk over the top, add several slices of citrus and spoon in some of the caramel glaze. Drizzle with some maple syrup and garnish with the crushed pistachio, if using.

Stir over medium-high heat until mixture thickens and just comes to boil, about 10 minutes. Transfer pudding to large bowl. Lay plastic wrap directly on surface of pudding and cool to lukewarm. Mix in vanilla. (Can be prepared 1 day ahead. Cover and refrigerate. Stir to loosen before continuing.)
- Preheat broiler. Divide mango among eight 3/4-cup ramekins or custard cups. Spoon pudding atop mango, dividing equally. Smooth tops with spatula. Sprinkle 2 teaspoons brown sugar evenly over each pudding. Let stand until sugar begins to melt, about 10 minutes. Broil until sugar bubbles all over, watching closely and turning frequently, about 4 minutes. Serve warm.
