CARIBBEAN BEEF PATTIES
Spice up beef mince with turmeric, thyme and hot pepper sauce before folding in shortcrust pastry for a tasty dinner or lunch

Steps:
- Heat the oil in a pan, add the onion and cook for 5 mins. Add the garlic and beef, turn up the heat and cook until the meat is browned. Add the potato, half the turmeric, the purée and thyme, plus 200ml water. Cover and simmer for 15 mins, then remove the lid and cook for 5 mins more. Add the hot pepper sauce and leave to cool.
- Heat oven to 220C/200C fan/gas 7. Roll out the pastry to the thickness of a £1 coin. Cut out 6 x 15cm circles, using a small plate as a guide. Divide the mince between the circles, piling it up on one side. Mix the egg with the remaining turmeric, brush around the edge of each circle, then fold over and use a fork to seal the edges. Arrange on a baking tray lined with baking parchment, brush with a little more egg and bake for 20-25 mins. Serve with a green salad.

SCOTTISH MINCE PIE
My mother-in-law made this pie in Scotland. It is not a sweet mince pie, but it's easy to make, and a hearty dinner. I serve boiled parsley potatoes and a nice salad with this pie. My children always ask for this pie when they come home to visit.

Steps:
- Place the ground beef in a large pot and pour in enough water to cover beef. Boil until beef is cooked through. Drain.
- Add water to cover cooked beef, add onions and enough bouillon granules to taste. Cook until the onions are soft. Season with salt and pepper to your taste and make sure the filling has enough bouillon to have a nice beef flavor.
- Combine the 1/4 cup water with the cornstarch and stir until smooth. Add to the beef mixture and cook until mixture has thickened. Allow to cool to room temperature.
- Preheat oven to 375 degrees F (190 degrees C).
- Roll out pastry to fit a 9-inch pie plate.
- Pour beef mixture into the pastry crust and cover the top with pastry. Crimp edges and prick top.
- Bake in preheated oven until pie crust is lightly browned, about 40 minutes.

MINCE PIES
These sweet (yes sweet!) pastry delights will be sure to have you asking for seconds (or more) and they go fantastically with a nice cup of tea (or something a bit stronger). For those of you who are not familiar with mince pies you might be confused as to why I said mince pies are sweet. Well despite the name, and the fact that mince pies are made with mincemeat, mince pies do not contain any meat and are made primarily of dried fruit and spices. But don't let me convince you, check out the recipe to see for yourselves.

Steps:
- Preheat the oven to 375 degrees F (190 degrees C).
- Combine apples, brown sugar, raisins, golden raisins, currants, orange peel, lemon zest, lemon juice, cinnamon, nutmeg, cloves, allspice, mace, and ginger in a medium saucepan. Mix together and bring to a boil over medium heat. Immediately turn the heat down to the lowest setting on your stovetop. Simmer, stirring frequently to ensure the mixture does not stick to the bottom of the pan, 1 1/2 to 2 hours. Remove from the heat and leave to cool while you prepare your pastry.
- Unroll pie crusts onto a flat surface. Cut into 24 circles using a cookie cutter or the bottom of a mug.
- Place a circle into the bottom of each cup of a 12-cup cupcake tin. Fill each of the pastry circles with fruit filling. Brush the edges of the pastry with some of the beaten egg and cover with the remaining circles. Brush all of the mince pies with more beaten egg.
- Bake in the preheated oven until golden brown, 35 to 45 minutes.

CARIBBEAN MINCE PIES
Mince pies with a tropical twist!

- Preheat oven to 200 C (fan ovens 180) or gas mark 6
- For the pastry:
- Sift the flour into a mixing bowl, add the butter and rub with your fingertips until it has the consistency of fine breadcrumbs.
- Mix in the icing sugar.
- Make a well in the centre and add the egg yolks and about a tablespoon of cold water to make a soft dough. Knead gently until smooth and no longer sticky.
- ALTERNATIVE: Put all the ingredients in a food processor and blend until it looks like dough!
- Chill the pastry dough while you are making the mincemeat
- For the mincemeat:
- Put all the ingredients apart from the rum into a saucepan.
- Cook on a low heat, mixing frequently, until everything is soft and thoroughly combined
- Remove the pan from the heat allow the mixture to cool, stirring occasionally
- Once cold, mix thoroughly (optional: stir in the rum at this point)
- Construction: you will need a round pastry cutter and a bun tin:
- 1.Roll out your pastry to about 3mm (eighth of an inch) thickness
- 2.Cut one large circle for the base, and a smaller one for the lid
- 3.Place the base in a bun tin and loosely fill with the mincemeat mixture
- 4.Put the lid on top and pinch around the edge to join it to the base
- 5.Optional: brush the lid with milk or a beaten egg to glaze
- 6.Repeat until all your pastry and mincemeat is used up!
- Bake for around 20 minutes until golden, remove from the oven and cool for 5 minutes before placing onto a wire rack. Cool and dust with icing sugar before serving!
